I did however take the suggestions of the other reviewers to lower the vinegar to 1/4cup and up the broth to 3/4cup. My husband loved it. The next day I had cold rice and added chopped tomatoe and chopped pickled jalapeno It Was Great. Thank you genius. And I don't think any more salt needs to be added. There is already salt in the rice and with the saltiness of the bacon there was more than enough. I'll lay off the salt in the liquid part next time. I find 1 to 2 oz is enough. Also, the rice only needs 50 minutes in my oven. Be sure you don't get parboiled rice--the cooking time and water needed will be a bit different. I am one of those people who always burns the bottom of the rice, so this was a breakthrough for me. The salad itself was delicious - tangy, chewy, great hot or cold. Once the rice was cooked, it took no time to put together. I loved the vinegar, but I appreciate the criticism that there it may be too much for some people. I actually used apple cider vinegar and vegetable broth (am a vegetarian), and I substituted parsley for dill (just a preference). It was delicious. I ate it for dinner alone -- not the whole thing, but could have it was that good. I think people have had problems with the vinegar is because they didn't let the sauce cook together before adding the rice and bacon. Thanks Alton great flavor 12/27/2006 at 01:47pm User: Josh from Hickory, NC User Rating: a lot of people here complain about the vinegar in the recipe, but i enjoy it. i didn't have any white wine vinegar, so i substituted apple cider vinegar. my idea is that the taste is very subjective, because when my mother tasted the salad, she complained about the vinegar (she ate a bowl of it anyway!). for ease, i diced the bacon before frying it very slowly in the pan, and i also allowed the vinegar to reduce in the pan for a minute before adding the remaining ingredients. instead of dill, i stirred minced scallion in at the very end. i enjoy this salad warm, because it reminds me of a spinach salad with warm bacon dressing. The first review, well for those who are toying around with making this recipe, let me tell you it is wonderful! The only thing I would say is if you don't like vinegar, ease up on the 1/2 cup Alton recommends. If you put in the entire 1/2 cup, it comes out a little strong. But as always... I mixed it with a 5-bean casserole recipe to cut the vinegar. I use this recipe at least once a week with a few variations depending on the main course. Would maybe recommend going a little easy on the vinegar especially if accessory dishes are acid.
