A name like "Turkey noodle casserole" got me thinking of a high school dining hall, however this is proof not to judge a book by its cover. The turkey, bacon, mushrooms, and Gruyere cheese combine with such ellegance. I have used apple cider instead of the white wine, and it works very well--a nice, cheaper route if you don't already have white wine on hand, to save money for the Gruyere that you may have to take a loan out for, but it's well worth it.

Its pretty good.

It is a good casserole, but I suggest using crumbled pieces of bread for the topping to help soak up some of the sauce, since it is pretty runny. I also decided to put it in the over for 10 mins extra to thicken up the sauce.

Terrible!!!

User: Nancy from Marietta, GA    User Rating:
This was so disappointing for so many reasons. First, it took a lot longer than 30 minutes to put it together. Second, the "sauce" was not a sauce at all, way too much liquid. Third, I only put in half the poultry seasoning and still that was the dominant taste here. A total waste of ingredients and time. I'm throwing it out. YUCKO!!!

Turkey makes it good

Missing a step
09/10/2007 at 08:00pm
User: Anonymous    User Rating:
The sauce never thickened when I followed Rachel's steps. It seems like a step is missing where the meat and veggies should be removed from the pan and the liquid allowed to boil until it thickens. Also, a substitute for the Gruyere cheese would be nice since it is such a costly cheese.

Nice and easy one dish meal.

User: Andrew from Verona, WI    User Rating:
I'm a newbie college cook, and I found this recipe easy to follow. It tasted like I actually KNEW what I was doing. :D I suggest prepping all the ingredients before starting to cook, because there is not much time in between ingredient additions. Sauce was a little watery, but I'm sure it will thicken up in the fridge. Skip the wine and get a cheaper white cheese if you're broke, but invest in the nutmeg because it adds a great touch to the meal.

watery sauce?
09/02/2007 at 09:47pm
User: aloe from Phoenix, AZ    User Rating:
Through experimentation, using two different pans - 3 qt saucier and a 4 qt saute pan - the larger pan reduced the boiling, watery liquid effect that most of you talk about. Use a LARGE frying or saute pan when making this recipe. If you don't have one, get one. And, don't skip the salt. It makes a big difference in the finished product due to ground turkey's lack of flavor.

I was very happy to find that this come out so yummy. I used canned mushrooms and moz. cheese(since I had them on hand). I also only used a little bit of cheese, to lightly cover the top, and whent light on the bread crumbs. It did take longer then 30 minutes and I broiled it for about 5 minutes. Hubby said it was once of the best RR meals I had made.

I'm lactose intolerant so I made a few changes and what I had on hand. I used ground beef instead of turkey breast. I used low sodium chicken stock. I used 1/2 cup of soy milk and two teaspoon of corn starch instead of heavy cream. I used 1/2 cup of tofu cream cream with chives and herbs instead of the gruyere cheese. I did have to bake it in the oven for 30 minutes. It turned out great. Wish it had a little more flavor. I think I need to add more of the spices since I took out the cheese.

User: YOLANDA from CAMDEN, NY    User Rating:
THE DISH WAS QUITE EASY TO MAKE AND WAS DONE IN 30MIN. BUT THE "SAUCE" WAS VERY THIN. I WOULD MAKE THIS AGAIN BUT THICKEN THE SAUCE. ALSO, I USED SWISS CHEESE INSTEAD BECAUSE THE GRUYERE WAS EXPENSIVE AND HARD TO FIND. THE DISH WAS QUITE TASTY THOUGH. JUST NEEDS A THICKER SAUCE. RACHAEL IS A HIT OR MISS FOR ME. PAULA IS A DEFINITE HIT WITH ALL HER RECIPES I TRY.

I was excited about trying a bite of this casserole, because it smelled so good while it was cooking. Bacon, onions, etc. But when it was finished, the sauce was too runny and it was a little bland. I used sharp chedder and bread crumbs on top because it saved me about $5. I also felt like it was alot of work for the final outcome. This recipe was OK, but I won't fix it again.

I try new casseroles all the time, and although this wasn't my favorite and I probably will not try it again...it wasn't too bad. I think the problem with this dish was that it was a little bland...it didn't stand out, which is what casserole need to do in order to become comfort food and regular family fare. The thyme seemed to overwhelm the dish....i recommend leaving it out all together.

Watery!
02/08/2007 at 02:26pm
User: Natalie from Richardson, TX    User Rating:
Overall taste is fine but the addition of wine, stock, mushrooms, etc. towards the end leaves this a soggy mess with the delicate meat of the ground turkey boiled to death. By the time I realized that I had too many fluids and drained three quarters of it down the sink the whole thing went lukewarm and despite being put under a broiler for 2 minutes...had to go into the microwave before serving, Would be much better to use some diary product and egg to bind casserole together before browning in the oven.

Yummy but a little time consuming.

User: Kristin from Marietta, GA    User Rating:
I am not sure what it is about this dish that made it seem more time consuming (more so than the 45 min or so it takes to make her other 30 min meals). The first time I made it, the broth wasn't as creamy as I thought it would be. I didn't toss it though because I knew the flavors tasted wonderful. The cheese is a little pricy as well. So I added a little flour to the mixture before adding the other liquids and that seemed to thicken it up a bit. I have also subbed the a few difference cheeses such as mozerella and parmesan. All are good, but gruyer is the best. Leftovers of this always taste better because everything tends to meld and thicken overnight.

I was unsure when I began to make this recipe but it turned out great. My husband and I both loved it. The only complaint I have was that the "sauce" was very thin. Next time I will add a little cornstarch to it to help make it more into a sauce. I will also add a little cheese to the sauce not just on the top. Thought it might be good with green chilies!? This one will definitely be one of our weeknight dinner rotations!

great with some changes
02/14/2006 at 04:45pm
User: Stephanie from Tinton Falls, NJ    User Rating:
my husband and i thought this was delicious. i made a couple changes, though: i cooked my meat and veggies separately, as the mushrooms take much longer than 5 minutes to lose all their liquid, which i wanted so the final dish wouldn't be watery. once i combined everything, i added 2 Tbl. of flour before i added any liquid. i only used half the cream she called for. finally, i added a box of frozen peas right before it went under the broiler. for those who don't like the wine taste (it's definitely noticable) just use extras chicken stock.

Small modifications made
02/11/2006 at 08:47am
User: Kristy from Wallingford, PA    User Rating:
I really loved this recipe, but did make some small changes. First of all, I put garlic in almost everything - so I did add a clove of fresh garlic while the sauce was simmering, so the garlic flavor would infuse the liquid. Also, I had some sour cream that needed to be used up, so I substituted 1/2 cup of the chicken broth with sour cream. That thickened the sauce a bit, and the resulting flavor made it sort of like turkey stroghanoff. But like some others here, I still found the sauce to be a bit thin. I think the answer might be to cook the noodles less, so they soak up more of the sauce. I cooked mine half as long as the package instructed - but should have just done 3 or 4 minutes, like RR mentioned on the show.

Way too runny, tastes bad, took too long = skip this one!!
02/11/2006 at 02:57am
User: Anonymous    User Rating:
Wow - I saw this and thought it would be a quick and easy dinner for a cold Friday night. Where do I begin? As usual, it took longer than 30 minutes with all the prep involved. I always follow Rachael's directions exactly the first time I make a dish. Unfortunately, as is usually the case, this recipe needs a lot of tweaking. I've noticed that with almost all of her recipes. Even the people who give it a good review list several changes they made to it! Doesn't anyone taste test these recipes? Or, is it all just for show? This was very, very runny as most reviews stated. Just too much liquid. I think the wine should be skipped here. But, the biggest problem is probably the shortcut cooking method here. Sometimes her methods just do not work! Throwing this dish under the broiler for a few minutes doesn't cut it! If you take the time to actually bake this like a true casserole in at least a 350-375 degree oven, I think it would all kind of come together better and probably not be so runny. Also, the choice of cheese is really odd and my family did not care for it at all even though they do have more sophisticated taste buds. If you want to make a turkey casserole, just use a standard recipe that can be thrown together more quickly, and then big deal if you have to wait for it to really bake up good in the oven? Sometimes Rachael's ideas just stink!

This was a lot of work for a meal nobody enjoyed. Too many ingredients. I have a recipe with 5 ingredients that beats this one any day.

I finally tried this just last night for dinner. It certainly took longer than 30 minutes to make, but it was well worth the wait! Absolutely delicious! I was worried it would be a little runny, but I added some extra noodles and it seemed to soak it up. It ended up having way more than 4 servings. Three of us ate it and we all had seconds and thirds and there was still plenty for me to bring to work today. Speaking of, I have to go microwave something....

A quick simple dinner, made even better with a few modifications

I changed this recipe a bit to better suit my needs. I used whole wheat egg noodles, which need a touch longer to cook. In addtion, I followed the suggestions of others regarding the sauce. Will make this again.

Once again, RR saves my day (or at least part of it). Made a few alterations - used frozen, presliced asian mushroom blend, which added a depth of flavor, I think. Also added frozen peas, and used Cheddar. (my significant other won't eat "smelly cheese", but this substitiution was still delish). Overall, great flavor, super creamy and easy - it took no more than 35 minutes start to finish. Very kid friendly. One more to add to my rotation!

As with most of her recipes, this one took a lot longer than 30 minutes. And, after all that work, nobody liked it. We ended up eating last night's leftovers instead.

We tried this recipe and it tasted great! We had most of the ingredients at the house, but we didn't have wine, or the type of cheese specified. We used cheddar cheese instead and it still tasted great. Thanks!

This was ruined my the taste of the gruyere cheese

I think this would have totaly worked if it were not for the cheese at the end. I should have followed my gut feeling when I first smelled it. It smelled awful so I should have known it would taste awful. Everything started out well, I tasted as I went along and I think it tasted good. I like all the ingrediants and like poultry seasoning alot. It was alot of liquid but I cooked it til most of it reduced. I just really hate that this was a waste of food. My husband, my son and myself did not end up eating this. If I were to ever try this again I would use a cheese that we enjoy.

Not one of my favorite RR recipes. The sauce was thin and the taste OK, but not great. Even good (and expensive) Gruyere cheese didn't make this dish a keeper.

I wanted to try this one because I like cooking with wine and don't like cooking with canned soups, no one in the family liked it, not even my 3 year old. I was very disappointed with this one. I have enjoyed RR show and recipes for the past 2 years and never rated a recipe, but this is one deserves a low rating.

I made this the other night for some friends who came over for dinner. They absolutely loved it and my very picky husband told me that this recipe was a keeper! As for the sauce being too runny for some other people, I found that reducing the sauce a little longer than the recipe implies worked well.

This casserole has become a "regular" at my house. Excellent to share at pot-lucks but BE CERTAIN to label the dish - it resembles tuna casserole. I've improvised a few changes and it's always turned out nicely. I substitute the mushrooms with water chestnuts and the bread crumbs with Japanese bread crumbs and used 1 cup of Monterey Jack cheese and 1 cup of Gruyere (for the younger pallets as Gruyere can have too much "bite" for my kids.)

I tried this recipe last week and my family loved it! Just to make it more well-rounded, I added some spinach. I sauteed two bags of fresh spinach, then drained and chopped them, but you could probably use frozen chopped spinach. I made the casserole in the morning, stowed it in the fridge, then pulled it out and heated it for 30 minutes at 350 and it came out great.

This looked good when Rachel made it on the show and I read the reviews, as I always do before I make a dish from the Food Network. I followed this recipe exactly and followed the advice of a few other people by thickening up the sauce with a little flour, which worked beautifully. Everything looked great, but it tasted awful. My family wouldn't even eat it after they took the first bite. I can't say I blame them. I feel like I went through a lot of work with this dish and it was a total bust. I will be more cautious before trying another one of Rachel's recipes (I'm finding it's hit or miss with her). I will stick to Paula Deen's recipes - I've NEVER been disappointed when it comes to hers!

User: Adrienne from Reisterstown, MD    User Rating:
Just read the review written by someone else from Reisterstown and I agree completely with all she said. This was a very easy recipe. I followed the directions exactly as well until I got to the creamy sauce. I didn't like how very thin it was but that was easily remedied. I had grated extra Gruyere cheese and so I simply mixed in a good handful (eyeballed it...lol) and that made the sauce less runny looking. The family loved it. Great warm meal for a chilly autumn night and a fantastic twist on a classic turkey casserole. A definite keeper!

I really try hard to prepare the recipe as it stands the first time. I look for reviews of recipes that haven't made changes, (other then maybe very small changes) because I believe we are reviewing the recipe, not how we the (individual) make changes. I thought this recipe was easy to follow, had all ingredients on hand, and turned out to be a real "fill your ribs" kinda dinner. Great for a cool fall night! My adult son's came to dinner and started eating before it even got put under the broiler.DH has leftovers for next day. A true recipe to keep in your personal collection.

This is the first Rachel Ray recipe I try and it was a success with my husband. The sauce did turn out pretty watery (I wish I had read the reviews prior to making the dish), but the wine and chicken broth combination was super tasty. Took a lot more of 30 minutes (cleaning and slicing the mushrooms was time consuming), but I'm no pro and it was still a quick and easy meal.

Sauce was too thin. Also, RR calls for dried thyme in the list of ingredients, then in the body of the recipe she says to add ground thyme. I wish I had noticed before I added dried thyme - ground (or fresh) would have been much better. Finally, the dried bread crumbs didn't work at all - along with the dried thyme, the dish had a gritty texture. Buttered fresh bread crumbs would be much better.
