Tasty, AND easy!!! 11/25/2007 at 04:12pm User: Anonymous User Rating: I needed a small amount of mango chutney to add to curry powder & mayo to use up TG turkey in a wrap (which was TDF, I have to say). I halved the recipe, and using what I had on hand, substituted minced candied ginger, and a jalapeno for the Scotch Bonnet pepper. I also added a tiny bit of cinnamon and fresh nutmeg. It smelled wonderful while simmering, and tasted even better. I was concerned the cider vinegar might be too strong, but the flavor was nicely balanced. I'll portion the remainder, freeze it, then vacuum pack it so it only need be defrosted to make more wraps, or something else. Thanks for such a wonderful, tasty chutney recipe! I started with less vinegar, as one reviewer suggested, however it would be fine with the full amount, so I added the rest in. I didn't buy the scotch bonnet pepper and added a bit of ground cayenne pepper instead, so don't know how it would be with it. The website I found is www.batnet.com/rwc-seed/Habanero.scotch.bonnet.html which gave a pretty good idea on what the pepper is and exactly how hot it is (it is not for the weak). However, I still had problems finding the pepper in store since I live in a rural area. I plan to try it on top of some grits next. The chutney is sweet, but also packs some heat. For those wanting more heat try adding red pepper flakes or a bit more of the scotch bonnet. Then, five minutes into simmering on the stove, I poured it in the blender to give it a pureed texture. This works perfectly. It was great!!! I used in on the Chedder, Ham and Chutney bites from Sara's Secrets. Made a few changes substituting things that I had for things I didn't and it turned out to our satisfaction. This is a definate keeper at our house. Instead of using stricly raisins I used dried cranberries and sour cherries! Yum. I amso took half of the chutneya nd ran it through a food processor and served it over a pork tenderloin with brie.
