I particularly liked the advice about skimming the crud off the top, cause it was definately there. I made it in a crockpot, which worked wonderfully. Also, I just put it all together in the morning, except the potatoes and beans, then when I got home at the end of the day I pulled out the bones and added the potatoes and beans and diner was ready in half an hour. I also didn't have hot sauce in the house but believe it or not, I used chili sauce and it worked well!! My family loved it and oh, I used chicken cutlets instead too. I browned them first to give them a little color. But my husband gave me a thumbs up and said, "Make it again." So I will take that as a winner. I used chicken broth and white wine in addition to the water, and used more garlic and onions than listed. Also, I think it would be better if you cooked the chicken in broth for a while BEFORE adding the vegetables as they got pretty mushy by the end of cooking time. This dish has wonderful, mellow and satisfying flavors (and the beer biscuits that went along with it were easy to make and delicious, too). I didn't change anything in the recipes (my partner says that's a first), except to add a bunch of italian parsley to the stew right before serving it. Why? Oh, because my Mom added parsley to just about everything. pretty good! 06/11/2006 at 04:38pm User: Anonymous User Rating: After reading the reviews I wanted to try this recipe. here are some pointers that I think will help. 1. must add plenty of salt! in the recipe it does not say how much, but be genorous;you have to flavor all of that water! I guess you can use chicken stock, but I used alot of garlic salt. and the hot sauce adds good flavor. 2. after cooking the chicken and carrots for 1.5hours the carrots were sooo soft that I did not want to eat them. so I took out the chicken and strained everything else out. I then added more raw carrots along with the potatoes and cooked them for 20min. overall, I think this is a pretty good stew. I browned the thighs first, then removed them and sauteed the onion, garlic and carrots in the rendered fat until they were tender crisp, then removed to a bowl and set aside. Returned thighs to pot with thyme and water and cooked down for a stock / broth. When finished, I strained the broth and set aside the thighs to cool. Put the broth back in the pot with the garlic, carrots, onions, and potatoes and simmered 10-15 minutes. Added green beans and simmered 10 minutes more til they and the potatoes were just done. Meanwhile I shredded the cooled meat, discarding skin and bones. Returned meat to pot for last minute or two to heat through. Also, during the last 5 minutes I added 1/2 can of condensed cream of celery soup which I happened to have in the freezer. It added flavor and creaminess though it might have been okay without it. This altered version is more work than the original recipe but very flavorful. Since I don't make traditional chicken soup / stew all that often (though I do make lots of ethnic soups and stews from many cuisines) I'm not sure how it compares with other traditional chicken stew recipes for the amount of work involved, hence the 3 stars rating. This is a perfect & healthy meal - fresh ingredients and easy to pull together with chicken or turkey meat. On the second night -- add some corn or maybe a can of beans for variety. Spice it up with some different spices and maybe add some cheese - we make it once a week for a two night dinner. I make it probably every other week during our raw New England winters. I have made several variations and some of my favorites include using no potatoes and a little bit less of the shredded chicken (you can use any extra for a chicken salad the next day). This makes it a bit more of a soup rather than a stew. I also like using baby spinach or kale instead of green beans, but I've used all sorts of greens (snap peas, asparagus, whatever I had on hand) and it all tastes great! I also allow people to put their own amount of hot sauce in their bowls rather than adding it to the pot. The only caution I have is that I have never been able to serve more than 4 people with one batch of this soup. Its just too good!! Just go easy on the amount of water you add to it if you like it thick and rich rather than soup-like. I added instant mashed potato flakes to thicken it up, and it really added even more flavor to it. Although it needed more salt and pepper than I put in it b/c I reduced the sodium for my Mom who's on a restricted diet.
