I also used 1/2 and 1/2 instead of heavy cream, and 2% milk. I did have the ingredients at room temp before mixing together, and also took the advice from another reviewer who cut down the liquids quite a bit. I didn't top the pasta with cheese, but used bread crumbs instead and also used Cellantani pasta. I loved the flavor of the different cheeses, and can see where the Fontina is strong, so 8 oz. was plenty. I would definitely make this again. So easy, and there is no heating of the ingredients involved, which is great. I let the casserole sit for 10 minutes but another 5-10 would have been perfect. There was just a small amount of liquid left on the bottom of the dish. Although my husband and daughter ate this, it was a milky mess!! The cheeses never blended in with the cream/milk combo while baking and the dish looked like it had an inch of milk at the bottom of the pan when we dished it up. We spent more than $30 on the ingredients and it was a flop...... I later found out that the recipe called for 2 tsp flour when it should have said 2 tbs flour- also melting the cheeses and cream sauce before you bake it should make a huge difference. I cut the recipe in half and it still could have fed 6 people. I ended up using 1 1/2 cups half and half, and 1/2 cup skim milk because of the other reviews saying it turned out soupy. I also increased the flour to 1 tablespoon instead of 1 teaspoon. It turned out PERFECT, not the least bit soupy after resting for 10 minutes. I think it would have been on the dry side had I left it in the oven any longer. I made a couple subs: instead of regular diced ham, i added pieces of sliced (about 6+ slices) Boars Head Pesto Parmesan ham, and instead of the 2.5 cups whole milk, sub'd 1 cup skim milk, 1 cup half&half, and about 1/4 cup full-fat sour cream. The flavor is incredible and since I really only cook for myself, I've been eating it all week and adoring it every time. This is perfect if you have a busy week coming up and know you won't have time to cook. The Fontina cheese which is a cross between cheddar and cream cheese just made the dish! I did use fat free 1/2 and 1/2 in place of the whole milk and used prosciutto instead of regular ham. It turned out delicious and was absolutely picture-perfect. I can't wait to make this for my husband. It is a guaranteed crowd pleaser. I do make a few adjustments: I use an Italian preshredded cheese blend for the convenience of it.I also add a bit more flour, and I add frozen peas and imitation lobster meat in place of the ham. Lastly, I top off the top with a little bit of panko bread crumbs and drizzle it with olive oil--place it under the broiler for the last few minutes to brown. Followed everything else in the recipe except added 1 t dry mustard, came out AMAZING!!!!! No problems with runniness or blandness whatsoever. Buy my cheeses, pastas and cream at Sam's Club so probably spent about $7 for the whole dish. Only added 2 t of flour and no runny problems as in other reviews, I think pasta need be al dente to solve many of the runny problems, and don't overbake. We LOVED it, and will make it often. This recipe is so easy, so delicious, and pretty much foolproof, in my opinion. I made half, simply because I don't have a family of more than two to feed. Halved the recipe exactly, but used 1 Tb. of flour in the milk/cream/cheese mixture. Instead of diced ham, used some leftover prosciutto which I sauteed until crisp. No problem with it being runny after letting it set for @ 10 minutes. Frankly, the only problem I had was wanting to continue eating even after I was full. For me, this is too rich for a main course; but it will certainly stay in my repertoire as a fabulous side with grilled chicken, pork, whatever (probably without the prosciutto.)By the way, I think good quality cheese, particularly fontina, is key. I am used to buying more expensive cheeses from time to time so it wasn't a big deal. On the point of traditional mac & cheese, I read some of the other reviews. People who have seen the show will see that there is a little more liquid in it than regular mac & cheese. But, you need to remember when making this that it is an Italian dish, not American. So it will be a little different. What I did was add about 2 1/2 tablespoons of the flour, not teaspoons as some of the other reviewers suggested. I also added a little more cheese as I am a cheese freak. Upon it resting for about 10 minutes, it did thicken up some. However, this is an Italian dish so it was a little more runny. It was very filling and made for a great meal on a cold December day and it was very easy to make. If you haven't seen the show and think it is going to be like regular mac & cheese you will be let down. A lot of Italian dishes are known for their creamy sauces. Going in with that point of view, you will love it!
