South Beach and Atkins Friendly

User: JUDIE from Binghamton, NY    User Rating:
If one omits the bread crumbs and uses non fat or low fat cream cheese, these yummy mushrooms are legal on the South Beach or Atkins diets. I used canned lump crabmeat and made half the recipe. I used jumbo white mushrooms and ended up with a baker's dozen to use up all the filling. They were the hit of the Valentine's Day dinner. I served them as a side dish alongside salmon, asparagus, a bleu cheese green salad, and strawberry tart. Hubby didn't notice I had no potatoes or starch. Wonderful and wonderfully easy!

This made about double the amount needed for 10 large mushrooms. Previous stuffed mushrooms I have made, the stuffing was heated before stuffing the mushrooms. I think I will try that next time since it was only warm following these directions.

Recipe was easy to follow and took little time to put everything together. I used canned crab and it turned out excellent! Fresh would be even better, but the can crab worked great. I highly recommend it and will use it again.

big hit

It was a hit at the party. The filling made more than the amount of mushrooms called for. Make 1/2 or buy more mushrooms. I used the small button mushrooms.

INCORRECT RECIPE
06/06/2007 at 08:25pm
User: Jed from tulsa, OK    User Rating:
first id like to say that this recipe is incorrect. the "house seasoning" is grossly disproportionate. 1 cup of salt, 1/2 cup of garlic salt, 1/2 cup of black pepper. Needless to say this dish was a total bust. it was completely inedible. those looking at this recipe should STRONGLY be advised to add the salts and pepper to taste. we had hoped the salt taste would lessen after cooking, but it wasn't. i realize the amount used is up to whoever is cooking, but those portions are used as guidelines and has cost us our stuffed mushrooms tonite. utterly displeased.

I served these for my inlaws. My father in law has been talking about these crab cakes he used to get in Maryland for years. He always complains that he can't get any good crab cakes. When he tried these crab stuffed mushrooms, he told me they were better than the crab cakes he remembered. So, needless to say, this recipe will come out at family holiday times!

This was my first time ever making these. I read all the reviews and incorporated a few of the ideas when I made them. The cheese mixture I made per receipe, but I brushed the mushrooms with some olive oil and white wine and sprinkled some salt on them. For the bread crumbs, I added a lil olive oil & white wine to some croutons and crumbled them. Top with some mozarella....DELICIOUS!!!

User: TRISH from San Diego, CA    User Rating:
I made these just an hour ago for New Year's at home with my family. I found another recipe of Paula's for crab stuffed mushrooms that used Boursin herb flavored cheese rather than cream cheese, so I used that instead. I followed the rest of the recipe to the letter. I can't get over how fabulous these little morsels taste! It was easy, they looked great, & I'd challenge any restaurant to make something as tasty. My family ate all of them within minutes of coming out of the oven. These will definately become a staple recipe anytime I want something impressive AND yummy!

mushrooms themselves need a kick
12/26/2006 at 12:37am
User: Matthew from Notreal, TX    User Rating:
The crab dip was great. Following the tips of other reviewers, I cut down on the parsley (to about 1/3 cup) and I put some beer and butter pats in the pan. I finished them off with some extra parm under a low broiler. It got lots of praise and I thought it was really good. My only complaint is with the mushrooms themselves. They should probably be seasoned directly.

I made the following changes: 1. Substatued Brosin cheese for the cream cheese. 2. Dotted the baking pan with a few pats of butter and then added about 1/4 cup white wine. 3. Toped with fontine cheese - no bread crumbs. 4. Cooked for 35-40 minutes. It was wonderful.

Too much parsley

User: Carrie from Watchung, NJ    User Rating:
I was SO looking forward to this recipe and ended up tossing it after one taste. The parsley totally overwhelmed the crabmeat, the breadcrumbs never browned, and the portabello didn't cook through. A shame, since the crabmeat was $16 for 8 oz.
