I really like this recipe - it's easy and tastes so good. I like to let mine simmer a little longer than the recipe suggests. But, either way, it tastes great. I made it with dried beans, my husband, who is a chef, has a habit of prepping foods that need some time, and then doing nothing with them. He'd soaked some beans overnight, and I've been married to him long enough to know that they'd still be sitting in the refrigerator in a week if I didn't use them, so I gave this recipe a try, modifying the cooking times appropriately. I also used turkey bacon and reduced the amount of oil to make it a super healthy soup. And since I like my soup thick I pureed about 1/3 of it in a blender for a few seconds then added it back. An immersion blender would be even easier. Definately a 5-star recipe! I followed the recipe exactly as written. I got a packet of Mexican cheese bland to top the soup and used the same for those AWESOME corn muffins. The only change I made was to use less Chipotle in Adobo for the muffins because my son doesnt care for food too spicy and believe me half the peppers still made for a really nice spicy muffin. It is actually more like a chili than a soup but that doesn't make a difference. My one tip is to just fry the bacon whole, take out bacon but leave grease to do the rest of the recipe and then crumble the bacon back in at the end. It says time chopping the bacon into small pieces and also ensures that you don't either undercook or burn the bacon when cooking everything else.
