First, I added a splash of dry white wine along with the onions to pick up the bits of bacon that were fixed on the bottom of the stock pan. Second, I forgot the lime juice, which was just fine. Third, I didn't have fresh cilantro, so I used dried. I did add sour cream and some shredded extra sharp cheddar cheese to each bowl before serving, which I think was necessary - it was not as good without those ingredients. The flavor of the peppers was overwhelming and I only used about 3/4 of the can. I think next time I'll either leave out the peppers all together, or only use 1/4 of the can. Texture wise, they did stick some. I even prepared the tins. Don't be afraid to add the full amount of chipotle peppers- the peppers mellow somewhat with cooking in the cornbread batter and they are distributed throughout many muffins. The recipe calls for ONE canned chipotle pepper, not one can of chipotle peppers. This ONE pepper adds a small kick to the normally bland cornbread. I like this recipe because it's tasty, looks great and is super easy to cook. I didn't try them with the peppers in them, but I followed the recipe besides that. The one problem I saw with this recipe is that the muffins end up sticking really badly (an extremely nonstick muffin pan and some oil did not help), but if you end up just adding them to the bottom of the bowl anyway, like I do, it doesn't really matter if they come out of the pan perfectly. On the show Dave did not drain the can corn but the printed recipe calls for it to be drained. I think the other reviewer was right in saying the recipe calls for ONE canned chipotle pepper vs. one CAN of chipotle peppers. That's my mistake although I don't think its possible to buy just ONE pepper..so the recipe reads as though its one CAN. The adobo sauce totally overpowered the flavor of the muffins. Anyway, I'm sure this really is a good recipe, afterall it is Dave Lieberman. I just think that next time I'll try salsa instead of the peppers. Even for me, I didn't have the cornbread muffin mix but I just improvised and used the corn meal muffins. Although the word spicy in the title may make some people second guess this recipe I must tell you that the muffins are not spicy at all. You can taste a little kick of something in the aftertaste but they are not overpowering. The muffins are excellent!!! You should also look at the other recipes from this episode.
