I am a HUGE fan of Emiril's, so I'm very reluctant to share my thoughts. However, maybe they will help someone else. I followed the recipe exactly and found the cakes to be waaaaaay to salty (and I like alot of salt). Also, the coating was too thick for a crab cake, at least as far as I'm concerned (flour, egg, and then bread crumbs). My last tip would be to pan fry instead of deep fry. The deep fry just didn't come out like a crab cake I've ever eaten in my life. I also made the Maw Maw Slaw. It was OK but it also was kinda salty and there was too much liquid. Good luck when you try it.

O.k. I didn't make the Maw Maw Slaw this time with the crab cakes, but have made it before with excellent raves! The crab cakes with a basic tossed salad and a Lockwood Chardonnay was fantastic!!! I followed the recipe to the letter except I doubled the amount of garlic. Bam!! Wonderful...wonderful!!

I made these for Mother's Day last year and they were incredible. I have yet to taste better, even at the finest seafood restaurants. They take time to prepare, but it is well worth it.
