Wow, this turns out great Jerkey. I found the first time using the filters that some small fibers still stuck to the meat however. You can order mesh screens from Mcmaster.com (p/n 9238T52 in 24x24 sheet works nicely) and place the screen ontop of 1 filter, then use spacers for a few layers (tinfoil works) and a filter on top. Also if you have a table with a removable leaf, use that (with the leaf removed) to keep you fan horizontal. No need for bungee cords (unless you have dogs...)

We used the recipe three times so far. The first two times we used the box fan and furnace filters and the last time we used a food dehydrator. We much preferred the jerky from the box fan method. Although the flavor was about the same, the texture of the flank steak was superior to our tastes. The local butcher recommended using top or bottom round instead of flank steak to have less fat. We'll try that in the future. For those worried about getting the meat to 160F to get rid of nasties, I think the marinade done correctly removes all of that. Yes, this is the best jerky we've ever had. The biggest problem, however, is that it doesn't last too long around this house...

in the spirit of alton brown's macgyver-ism, i used cotton towels in place of air filters. i set my box fan on medium and dried the meat for 12 hours. it turned out awesome! buying air filters solely for beef jerky seems like a huge waste of time and money, and it ends up being a uni-tasker anyway, so why bother with it. using cotton towels may extend the dry time compared to air filters, but it works great.

I love Alton, but occasionally he may be a bit loose with the food safety for my liking, and this recipe was one of those cases. I followed this recipe to the letter and it worked well, but a few things. First, Alton isn't really clear on when the drying is complete. A bit more guidance would be appreciated. Second, the FDA says that when drying meat, it needs to be heated to 160 degrees either before drying or after. I did it after in the oven at 275 for 10 minutes as they recommend. Third, I'm still a bit worried about the fat in the meat going rancid. This probably won't happen, but its something to watch for. Fouth, my jerky tasted a bit like a furnace filter. I bought what I thought was paper, but maybe it wasn't. And last was the cost. With meat, filters, and ingredients I figure this 8 ounces of jerky cost me about $35. Next time, I think I will just buy my jerky in a grocery store already made.

When you add liquid to your meat, you will increase drying time. Liquid smoke is horrible. I have been making jerky for some time now. I measure and mix my own spices. I dont use bottled sauces or factory produced season blends. The food network has really gone downhill in the past few years. The dumbed down recipes are getting us further and further away from purity. Im actually suprized he didnt use ground beef and one of those jerky guns.

I have had nothing but compliments on the jerky that I made with this recipe. It is easy to do and tastes terrific! I vary it with a little more pepper on some of it or use teriyaki instead of the soy sauce. It seems to last a long time also. No fuzzy stuff here! Thanks to Alton for the great recipe!

I am a big fan of jerky, I can't get enough of the stuff when I need a portable snack. Having said that, this is the best jerky I've ever eaten, bar none. The box fan/filter worked like clockwork and the only gripe I have is that if you use the plain paper type of filter(that was the only non-toxic one I could find), you will have to pick off some little bits of paper that adhere to the jerky. Of course this is a minor annoyance at best, and well worth it considering just how darn tasty this stuff is(so good that friends ate about half of it).

This is by far the best jerky I have ever had. This recipe increases it's taste exponentially if you can get your hands on some good venison round steaks. I have enjoyed altering the recipe to add heat and sweetness (a little hot sauce here, a little molasses there). One tip: When stacking the furnace filters, be sure to stack them in a criss-cross pattern. This will help prevent the filters from collapsing on themselves and help keep the meet from sticking to the filters.

this recipe was very easy to use and turned out great! I did mine as directed, but addded some garlic to the mix. With the directed pepper, I think next time I will go less as the black pepper and red pepper flakes really show its power. But if you like it hot then go as directed! I used a dehydrator and was done in 9 hours. Was nice and crispy on the outside, but with some chewwy to it. I give AB a thumbs up on this easy to use recipe. I think any new person or vetern will like it.

I'm a huge Alton fan and was intrigued by the box fan method, so my hubby and I decided to give it a try. The result was delicious, and disappeared very quickly. Most people are amazed to hear that you don't need heat to dehydrate meat, and are amused by the idea of strapping furnace filters full of meat to a box fan. Anyhow, we followed the recipe as written, and it was excellent. It was nice to have jerky that didn't give me a headache from having to chew really, really hard (which is what usually happens when I eat store-bought jerky). It's worth a try just for the novelty of the method alone, and the end product is delicious, to boot!!

This is a very good recipe and can be easily adjusted to suit different tastes. I add a little garlic powder and go heavy on the liquid smoke and the honey. When I make jerky for my wife and sister-in-law, I omit the red pepper and go very light on the black pepper. Very simple. Another hint - before slicing the beef (I wait for London Broil to go on sale), put it in the freezer for an hour or two. If the beef is half (*not* fully) frozen, it is much easier to slice. Enjoy!

The beef jerky was great, but the real star of this recipe is the idea of using air filters to dry the meat at room temperature. The hot air models commercially available both ruin the taste and aren't exactly the most energy friendly appliances to run for days. The air filters work great, especially with a box fan behind them, and you don't feel bad about leaving the setup running for an extended period of time.

This recipe is very straight forward. Most of my jerky recipies are more complicated with wine and more spices and stiring or heating the brine. I was so happy to try an easier recipe that came out great! I used my smoker instead of the MacGyver set up but it's good to be reminded that the idea is to dry the meat and that can be done with just a stream of air. I'll be doing this recipe again but I may add just a bit more honey. That is just my taste.

I sprinkle the pieces of meat with Grill Mates seasoning before I put them on the filters. It makes it so much better. Surprisingly the Lemon Pepper one is fantastic. I use the fan to dry them and won't try any other method. It's the best.

Nice job again Alton! I love the flavor myself..SO do my boys! Made a small batch dissappeared so fast it made my head spin! I am in the process of another batch. Added some dried mustard (tsp or so) and left out some of the ground pepper and red pepper flakes..a bit TOO hot for some around here! Using brisket this time..lean sirloin last time. My son has made the powdered added to hamburger sort of jerky, and was wondering if we could add this marinade instead..we might try that too. You may have seen this style on shopping networks. It is easy to make but worries me a bit. We do use a commercial dehydrator (for other things too) and would love it if Alton would do some other drying/dehydrator ideas/shows!

I was a bit skeptical about the whole fan and filter thing. So after driving around for 2 hours (box fans aren't exactly in season right now), I finally started my quest. I used the fan method and the oven method. To say I'm addicted to making jerky would be an understatement. I can't stop. The fan method is by far the superior way to make jerky. I'll never use any other method again. The recipe was a bit spicy for me but everyone else loved it. I did add a little garlic but other than that, I changed nothing. Yum-mo

So easy to make. My daughter and have a blast making it together. I found that it is very easy changing the flavor by substituting the soy sauce with different marinades. We really like the Jamaican Jerk. I also put a filter on the ends and I use 1/4" hole screens to place the meat on. The screens can be washed an reused. Love the show, good job Alton and very Good Eats

First of all, this recipe is awesome! It makes the best jerky and it's not hard to chew! BONUS! I had a heck of a time finding "cheap" paper filters like he suggested. The only ones I could find was about $4.00 a piece but I was dying to try this one out. I also found the jerky meat already cut up at Super Walmart. It cost about the same as any other bottom round or London Broil (same thing)so I bought it to save me some trouble. I will TOTALLY agree with what another person wrote about using a cheap box fan because I used a fan I just bought a few months ago and the medium speed feels and sounds like low so I just put it on high and kept it there. I also marinated the meat for around 12 hours to make sure the flavors really soaked in. I'm glad I did! Overall I'm pleased with the outcome of this jerky recipe but I don't think I'll make it again until I can find some cheaper filters because paying $4.00+ for 4 filters plus meat can get expensive. Any ideas where I can get $1.50 filters??

This is so easy! We made a double batch before going on a fishing trip with the kids. They loved it! So did my brother and dad. My wife was upset we took it all with us on the trip. Can't buy jerky that tastes this good...and so inexpensive. I used beef brisket. It is very lean, has the long straight grains for jerky and is cheap.

This is an excellent recipe and not as hard as it sounds. Recipe is rated as expert, but only need medium knowlege of cooking skills. Jerky turned out exactly as it should and is delicious. A little spicy so if do not like spicy food, cut back a little on the red pepper flakes. If you like jerky do not be afraid to try this recipe.

I used the box fan method to make five pounds of jerky last week and it is so much better than what you get in the stores. Patience is key with this, AB's time estimation is just about perfect. The result is a moist jerky that is very tender and the marinade imparts just the right amount of flavor.

Even though I couldn't find the correct fan filters, (and both my Husband and I looked in several stores), I did it anyway using my dehydrator. My husband and his brother loved it and asked me to make it again, for the 3rd time. I think I may try the window screen idea I read on another review next time. Really cool way to dehydrate. I love Alton's originality!!

The Fan is the coolest part. Don't buy a cheap box fan though - the airflow is too weak. (I learned this the hard way.) Lakewood makes a high-power 20" box fan model P-25 that matches perfectly to 20"x20" air filters. Finally, go to the cheaper section of air filters to find the ones that don't use metal or fiberglass. There's a brand called American Filters (or something like that) These are ideal. You can take the two support strips off easily by cutting them at the frame and peeling them off. It all stakcs perfectly with a 36" bungee cord - when you're using 4-6 filters.

Better Than Any Store-Bought Beef Jerky

I recently tried this recipe with the usual waryness I have had with jerky recipes due to many disappointments but was very pleased with the results. The only part of the recipe I altered was reducing the amount of ground pepper by one teaspoon as I worried about this recipe being in the popular "extreme peppering" catagory. It was a good decision. The beef I used was Rancher's Reserve (Vons) London Broil and I meticulously trimmed off most of the fat. After marinating the sliced beef overnight (but drained the excess liquid from the bag after 6 hrs) I decided to pound each slice for tenderness and faster, more even drying. Another good decision. I used a Nesco American Harvest dehydrator which has the fan on top as opposed to many that are located on the top. The drying time was about 5 hours. Great recipe-- try it next time there's a sale on London Broil (I got mine for $1.78 a pd).

I also add 2 teaspoons of garlic powder, a dash of Tony's spice, 2 tablespoons of meat tendorizer (no MSG) and increase the liquid smoke. I bake it in the over at the lowest setting on cookie racks for 8 hours.

I improved the process by using sliding screens that you use under windows. I got 3 at home depot for less 11.00. I placed the jerky on the screens which worked perfectly and I can simply wash the screens for easy reuse. Reusing the furnace filters is not the best idea, since they absorb the sauce. Good Jerky Eats!

When you consider how much beef jerky cost to buy in the store, you'd be a fool not to make it at home. I picked up the filters for $1.50 a piece and a cheap box fan for $10 and change. I'm not sure why they rate this at an expert level of difficulty. It was super easy to make. If you know how to operate a whisk and a knife, you should have no problems at all. We went through 2 pounds of jerky in a week. I highly recommend everyone try this and free yourself from the shackles of over priced store bought jerky. Also consider making this in bulk. If you go to cash & carry bulk foods store you can save at least $1 per pound on the meat, and you'll have a great snack food item in your home for months. Thank you Alton for you mad scientist food tendencies.

Best Jerkey around. very easy tender if yo use a fan, kinda tough in a dehydrator but still tasty. AB is the man.

Fantastic! You simply CANNOT get this stuff in any store, farmstand, or county fair site. Perfectly preserved jerky without preservatives - amazing stuff indeed! I started the chemistry experiment right off the bat - added garlic powder, Chicago steak seasoning, and spicy Adobo to the marinade and then crushed some extra dried red pepper for some more heat.

I love the ease of this and the jerky is so much better. I also can make more than I did before by just getting a few extra fan. My entire family is getting jerky for birthdays and Christmas now! i first did not like all the work involved with the beef jerkey. but as the days went on i loved the smell of the meat. the marinade works good for other stuff also.once i ate it i was in heven. after that i could nopt get mad at anything.
