This dish is absolutely fantastic. Didn't have skirt steak so I used round roast, sliced it and then pounded with my meat mallet. Shredded the cheese and mix it with dried sage leaves (didn't find any fresh sage). Used the sage sparingly based on the comments. I deglazed my pan with red wine and finished the meat in the wine mixture. After slicing, I drizzled a little green peppercorn sauce - OMG so good!

Excellent combination with sage. I just pan fried on shallow pan to medium rare. It is a keeper! :)

My butcher doesn't pound the flank steak for me and my arm practically fell off trying to pound then myself. I never got them thin enough to see my hand through, as Michael did, so the finished product was somewhat chewy. Once done, the flavor was nice; but I won't do again unless I can get a thinner piece of Fland from the butcher!

I really liked this recipe. Easy to make and great flavor. I like sage but found that by using the whole leaves, some bites packed a lot of punch. I think next time I'll chop the sage and sprinkle lightly. This is a keeper.

I really did not like this. It was easy but definitely did not suit my tastebuds. My husband ate only a few bites and later said it made him want to gag. Sorry MC

This steak was succulent and tasty! The provolone and prociutto definitely added lots of flavour. The meat took a lot longer to cook and I ended up cutting into the pinwheels and then broiling until it was cooked the way I like...This is a recipe to be used again for sure!

I make this recipe regularly and serve it both hot and cold. And you don't need a lot to serve many people since it is a little heavy. Pile on the veggies and you are good.

As a young guy finding my way in the kitchen, I love finding excellent dishes that are just delicious. This saltimbocca was not only college student budget-friendly, but the flavors were great. Don't skimp on the aged provolone, or the prosciutto. The more the merrier. And at 5.99 a lb, the skirt steak, made tender by the beatings, was a steal. Recommended!! Rock on Chiarello!!!

I was really hoping this was THE skirt steak recipe that would be great. I pounded and flattened and pounded again... to about 1/4". The flavors was very nice, but the steak was still tough. Won't try again.

Made this recipe last night using some thin cut eye of round steaks. It turned out really well...the flavor was amazing, but make sure you secure them well enough with the toothpicks, one of mine fell apart (but was eaten anyway, so good!)

You really need skirt steak to pull this off. Flank, depsite pounding it thin, is too tough for this dish. But, the concept is great and easy to make.

How anyone can consider this recipe as "thinfully delicious" is beyond me. When I think of a healthy dish, I think of light and refreshing, unlike this heavy, greasy and cheesey hunk of red meat. I felt fatter after eating only two bites! I liked nothing about this dish--it was bland and oily and a huge waste of money. I am so gald I tested this one out before making it for friends. If I am going to eat a "healthy" steak dinner, I'll stick to a filet.
