This is so easy to make and so delicious. We have had this dish several times and the kids love it. Plus it's an ego builder since my wife thinks I have new found culinary skills. By the way, instead of pancetta, try wrapping the loin in prosciutto. Trust me you'll love it!

I have Recently done this diner for my new mother and father in law! This diner went off with out a hitch. I shocked them to no end with the Pancetta-wrapped pork. I served the pork roast with butternut squash risotto and green green veggies. WOW that was the comments around the table.

I did exactly as directed and it came out SO DRY. And lacking in flavor other than garlic. Blech. There was a ton of juices in the pan, and the roast was submerged up to half way the whole time. I didn't overcook it... so what gives? Maybe a tenderloin would have been better than just a loin roast?

Another winner from Giada. This is a really easy meal to prepare - it goes more quickly each time I make it, and always comes out perfectly. The pancetta bastes the roast beautifully - my one suggestion is to remove it for last 10 minutes to get a crust going on the pork itself. The pan juices are incredibly tasty. Thanks, Giada!

I made this for the first time last night, wary that my husband is not a big fan of pork loin. He could not stop raving about it. My kids could not get enough. For the reviewers who claimed it was dry, perhaps the pan was too big, thus the juices evaporated much quicker. To that end, I did find that the roasting took longer than 1 hour, but this may have been that my pan was too small? I took into account others' comments that the pancetta all but disappeared, and added more than called for. I will deinitely make it again. Delish.

I made this for dinner last night and after the meal, my son-in-law said, "This is one of the best meals I've ever had. Honestly, you should have your own show on that food cooking network." My daughter pointed out that Giada and Tyler might have a problem with that idea. I will be making this again, but will scale back on the garlic and will use thicker pieces of pancetta.

This project was fun and easy, but I felt I should have cut way back, almost half, on the garlic. I thought the sauce was a perfect compliment to the roast but I would like it to be thicker.I would try it again with a few modifications.

I love doing pork roast..nothing fancy. This recipe was so very easy and the result was great! Pork stays very moist, cooked in time suggested, perfect. Herbs add so much to the flavor of the meat! My husband loved it! It would be a great company dish.

I used bacon instead of pancetta, just be sure to turn the roast to tuck the ends of the bacon underneath while cooking. Was the best pork loin I've ever served.

I substituted regular bacon for the Pancetta since the Pancetta was pretty expensive. It still turned out great! It was a hit with everyone & delicious - and I usually don't like Pork!

I didnt bother with the food processor, just chopped up the garlic. I used bacon because I didn't have pancetta and I used a rib end pork roast. It was really easy and SOOO good. I cooked it to about a medium and it was so tender. Loved it.

I only used 5 large garlic cloves instead of 8 and it was way, way too strong. I couldn't even taste the flavor of the meat, just the garlic and herbs. I won't make this again.

Delicious. I could not find a tied pork roast so used a loin roast with a bit of fat. Put Salt and garlic pockets in the meat then the garlic mix on top of the meat. Very impressive for company!!

Excellent recipe: juicy, tender and very flavorful. I bought a piece of pancetta and sliced it myself. Unlike the pre-sliced, store-bought pancetta that is too thin and may burn, the thicker slices cook perfectly in one hour at 400 degrees.

I made this after watching the show. In the show she used roasted garlic. I roasted two heads of garlic at 400 degrees for an hour in a baking dish with tips cut off and olive oil drizzled on top. I marinated it for 6 hours in the fridge. I think that made a BIG difference in the flavor. I cooked a 5lb roast at 4oo degrees for an hour and 45 mins. and it was thoroughly cooked and still very tender.(165 degrees internal temp) I put the lid on the pan all but the last 15 minutes (lowered oven temp to 350) which kept the pancetta from burning. Some of the reviewers had problems with that. Did you baste the roast? Giada did not baste - I think we automatically do that and it will cause the pancetta to burn. I cooked this for a pre-fight party and my neighbors ate until it was all gone. Three helpings was the norm for the guys! Easy - stress free meal for company. Served with good ole parsley/butter boiled potatoes, corn onthe cob, and fresh baked bread. Meal for 6 for less than 20 bucks!

One of my husbands fave dishes is a pork tenderloin. I have recently been trying new recipes to change things up. This one was great. It made my house smell so delicious and it tasted even better. The meat was nice and juicy and the pancetta on top was nice and crispy. I did take another raters advice and baste the meat with the pan juices every 20 mins when I added more liquid to the pan. Overall really great!

Just made this for Easter dinner yesterday and we all agreed it was the best pork we ever ate. I didn't believe it would cook in just one hour, but it was perfect, tender and juicy. We also had the herbed polenta with the pan juices from the roast. What a great meal!

I was scared to do this recipe...it turned out supereb! If you are scared to make meats (I was so scared) don't be YOU CAN DO THIS! I used really good bacon instead and it was so great! I used extra garlic and herbs on the inside, and only salt and peppered the outside. Next time will put salt & Pepper on inside too. Will definitly make this again and again. Made the Red wine Risotto (Giada) and the Zucchini Gratin (Ina Garten) with it for my whole family, everyone loved it all! I was a ROCKSTAR in the kitchen with this!

I made this pork exactly as the recipe called for and found the pancetta to be burnt and the pork to be undercooked. I soaked the pancetta in the juices as well as heating slices of the roast through in a larger pan on the stove. The result tasted good, but it most definitly was not the elegant meal I was hoping for.

I followed the recipe to the letter. It was a big disappointment. It just didn't taste good at all. The pancetta burned, and the sauce had a "bite" to it that we didn't care for. I spent a small fortune on the pork roast and threw 80% if it in the trash. I definitely won't make this one again.

The roast looked wonderful on TV and also in Giata's Family Cook Book. Wonderful what food photographers can do! Guess what: At 400 degrees thinly sliced pancetta burns and as it does so it tends to fall off of the roast. Visually, it was a disaster, but the roast itself wasn't bad. Would I try it again? I don't think so.

I bought a whole pork loin at Costco that worked fine! I thought this recipe was wonderful. Next time, I will use Low Sodium broth. I would also like to know how to thicken the sauce. Overall, loved this recipe!!

This is now my favorite meal. I have served it at 2 different dinner parties and the guests raved about it, and all of the women hounded me for the recipe. The pork comes out tender and juicy, and there is an amazing amount of pan juices left to serve. The pancetts gives it a zing of flavor! The only thing I recommend is allowing some extra time to cook. All three times I have made it with different sized roasts, and have found that halving the roast works better. If cooked as long as directed, all three of the roasts even though recommended size, were still rare throughout the entire center of the piece. Serve with mashed potatoes and use the pan juices as gravy, and with sauteed asparagus as a side, gralic bread and you have yourself the best meal of your life!

This recipe was great. At the advise of other reviewer, I adjusted my temp.(lower) and cooking time (longer). Make sure to watch the wine and broth in roasting pan, they disappeared fast. Served with polenta and a mixed green and basil salad. What a feast!

I had some fresh oregano that I wanted to use up, so I substituted that instead of the thyme. It turned out unbelievably delicious - loaded with complex flavors. I cooked a 2 and 1/2lb roast for 1 hr and 5 minutes. It was very slightly pink, tender and incredibly juicy. Served with roasted acorn squash and a salad. A classic to serve for family or guests!!

I expected great things from this, but ended up only mildly pleased. THe pork was juicy and the pancetta gave it a great flavor, but I think the rosemary and thyme were too strong. This is a great recipe for those who like the strong taste of herbs.

In my opinion, today's lean pork needs to be cooked "low and slow" - 400 just dries it out. I took it down to 325 and increased the cooking time. It gave the pancetta time to melt down into the pork and kept the pork moist a juicy.

I loved it and will make it often, but next time will use less garlic and herbs so I can more fully enjoy the flavor of the pancetta. Next time I might use 6 oz. pancetta instead of 4. Very, very savory, moist and tender roast. Leftovers make terrific Cuban Sandwiches.

This was OK but will not be a repeat. We found it kinda dry and I'm not sure that the pancetta really helped out that much to moisten it. In fact, we felt the pancetta was a little bit too much. Something was just off with the flavor of it. I have better recipes for pork roast.

Fantastic Recipe! I added a little dijon mustard to the pan drippings, and added some extra crispy pancetta with freshly chopped parsley...just to make the sauce a little more exciting.

All my guests raved about this. Full of flavor and easy to prepare (assemble in the morning and put in refrigerator). Be sure to have pork at room temp before putting into the oven otherwise it takes much longer than 1 hour to cook. Remove at exactly 138 degrees and let sit loosely covered with foil for 10 minutes. I served it with butternut squash (made ahead) and roasted asparagus (a little olive oil, salt and pepper then roast for 10 min. @ 400 degrees). Remove and squeeze half a lemon over. Voila, simple and delicious. Wonderful recipe! Have made it many times. Note: go easy when salting the pork because the pancetta is pretty salty.

Melt in your mouth delicious. This is our new most requested Sunday dinner. I can't always get pancetta, but my butcher does have a wonderful thick sliced pepper bacon so I often substitute that. There's always a fight over who gets to take the leftovers home!

The end result was good but I had trouble getting there. I had trouble "wrapping" the pork roast, which I will chalk up to my clumsiness. But the roasting time in the recipe seems exceptionally short and the temperature she suggests to remove from the oven is not anywhere near the recommended temperature for eating pork. Good overall!

I neglected to reduce the spices to accommodate the size of my roast. Hence it was overwhelming with spices. Next time I will cut the amount of spices in half and I'm sure it will be excellent. I thickened the sauce with flour & water it was quite good.

This was delicious and moist. I used a high-sided roasting pan and reduced the oven temperature to 375, after reading other reviews about the pancetta burning. Mine did not burn. I had some leeks leftover from another recipe, so I used them as a "rack" for the roast.

So far, everything I've made from Giada's recipes have been outstanding. This was no exception. I wasn't expecting much because I'm not a huge fan of pork roast. However, for New Year's I wanted to make pork and my husband loves roasts and I thought this would be perfect. I received such rave reviews on this roast. I served this for a Christmas party for a group of my friends and they went crazy over it. Everyone begged for the recipe. When I made it I first thought it was a LOT of garlic, but it mellowed overnight and was delicious. Beautiful presentation too. Just be sure to baste the roast while it's cooking so the pancetta doesn't burn. Great for leftovers too!

Careful with the oven temperature on this one. The pancetta wants to burn and the broth/wine in the pan wants to evaporate very quickly and potentially burn. I used 2x the broth/wine mixture or the pan would go dry. Made great gravy/au jus at the end. I would recommend a lower oven temp on this one but overall very tasty and good for small dinner party.

I've made this recipe several times and it's always a hit. You really need to use a good and thick pork roast because if you use a smaller cut, it doesn't turn out right. I tweak it slightly by cooking down the broth after the meat is done so it's thicker. Fantastic recipe!

After I watched this episode on tv, I was eager to go online and get the exact instructions. I noticed however a couple things that I think would help it to turn out better. On the show, she simply rubbed the roast all over with the garlic-herb rub and then placed the pancetta on top of the roast, slightly overlapped. Also, she simmered the leftover drippings over the stove for about five minutes to reduce it. I can't wait to make this- it looked great!

I was hoping that the roast would be very tender and really fall apart. The flavors were wonderful, but it wasn't as tender as when I slow cook a pork roast. I also found there were more juices in the pan than expected and very thin. I would have enjoyed it just a bit thicker for more of a hearty sauce to go over the meat. I think my guests still enjoyed it very much.
