Superb! 06/26/2008 at 02:54am User: Anonymous User Rating: I've always loved polenta but have never found a recipe that I truly love. Until now, that is. This was excellent. Smooth, creamy, and full of flavor. I only made one change to the recipe - I used 3 cups chicken stock and 3 cups water instead of all water. This was also very easy to make. It does make a lot, so save the leftovers in a loaf pan, chill overnight, and slice and broil (or cook in a skillet with butter or olive oil) to eat the next day. While I really like Polenta, many recipes I've tried can be a bit bland. This recipe is fresh and flavorful. The combination of aromatic herbs and the rich texture from the cheese (which I added more than the recipe called for to compensate for using skim milk instead of whole) makes it luscious and elegant. I know on the show, it was paired with a pork loin. But I think other white meats such as turkey, veal, or cornish hen would go really well with this. If you're looking for something different to serve as a starch with a meal, I would highly recommend trying this. It's easy and delicious! If you are cooking this dish to accompany Giada's Pancetta Wrapped Pork Roast then you are almost there. In that episode, she makes this polenta as a side dish with the pork. At the end of the recipe, she has you pour the pan juices into a cup and skim the fat. You should have a bunch of this juice left over after you pour some on the pork. I've eaten polenta before and it was not as flavorful or as well done (seemed gritty) as this recipe. I used a little more cheese and could'nt resist adding a little pressed garlic. Had roasted potatoes standing by if we did not like this dish. Had lots of potatoes left over. This recipe does make a lot of polenta. Tried the polenta sauteed in butter the next day and it turned out great. Will definately be making this again. A very nice variation from standard side dishes. I thought the amount of butter that was called for was bit too much, so I used five tablespoons. Even five tablespoons was too much! (I am not a fan of tasting butter in my dishes) I also used freshly grated parmigiano reggiano cheese instead of parmesan. Don't get me wrong, it was still good! So I expected a Food Network worthy Polenta recipe to be special. This is bad. I wonder if they even tested it. Way too many herbs (not taste-wise, texture-wise). I made the recipe as called for, but as I had a few other fresh herbs on hand, I threw in a bit of fresh sage and oregano as well. I'd never made polenta before. It was easy and incredibly tasty. My husband absolutely loved it. I put the leftovers into a lightly greased loaf pan so I can slice it up tomorrow and fry it up. I cheated and used the whisk attachment on my hand mixer. It made the 15-20 minutes of cooking time much easier. The polenta was smooth and creamy and was seasoned perfectly. I think the best thing about polenta is its versitility. You could do so many things with it. I thought of adding fresh corn to it, cheddar cheese and chopped chipoltole peppers would add a great zing to it. Cool it down in a sheet pan, chill it in the fridge and then cut into squares and fry for a fried cheesy treat |
