I made it immediately after watching her do it on the show and I thought the flavor was great. I had the same problem though with the batter melting off. The batter was not too thick, but it still did not really stick to the dog. When baking it just melted and spred out on the cookie sheet. My son thought it looked like a big cookie with dogs in it. We'd seen the episode and it sounded good, but after reading the reviews I was a bit unsure. There was a misprint in the recipe that I wouldn't have caught had I not seen the show - luckily I caught it. The batter did seem a little runny once I had everything mixed in & since the many of the reviews mentioned a similar problem, I made sure that I had an extra box of corn muffin mix on hand. I had to sprinkle some of the extrat corn muffin mix in to get a good consistency for coating the hot dogs. After that they turned out great - even my 3 year old loved them. The chili flavor was a good accent to the corn dog. I'm sure it will be one of our favorite recipes. Although it tasted good, it turned into a corn dog casserole. I have a couple ideas for next time though. I might try to bake the dogs in a corn muffin pan. Put one dog in each corn-shaped indention. Or I might cut the hot dogs into chunks and put them in a Texas-size muffin pan, pouring the batter over the cut up dogs. I guess they would be corn dog muffins then. My husband made them even after we read all these bad reviews. He made 2 mistakes and they still turned out delicious! I think we each ate 2 1/2 dogs after eating a big salad! My hubby put in too much milk (1 1/2 instead of the 1 1/4 cups) so the batter was a little too runny. He also accidentally put in cayenne pepper instead of sauce which made it REALLY spicy. I left out the scallions, because I'm not a big scallions fan. And don't make the same mistake that I made by mounding too much of the batter on the dogs. The batter really puffes up. I agree with the person who said use common sense! Recipes are not set in stone, they are meant to be altered to your tastes. Add a package of chili seasoning mix to the cornbread mix instead of chili powder and hot sauce. What a difference! Also, make tin foil "boats" and spray lightly with cooking spray. Put the sticks in the hotdogs first and then coat. Do not measure out the milk. Just add enough to make the mixture thick and smooth. Adding coating mixture and lay hotdogs in the tin foil boats to bake. They keep their shape, the coating stays on and they are ready to eat - sticks are already in. I followed the advice from the lady from South Carolina and it turned out PERFECT. I cooked the hotdogs first, dried them off, made the batter with enough milk to make it the right consistency. I made tinfoil boats and sprayed them with cooking spray. I put a few spoons of batter in the tinfoil boat then placed the hotdog on top and pressed it down into the batter. I then put some batter on top of the hotdog and used my fingers to cover it completely. This was quite a process but it worked perfectly! I cooked 6 hotdogs and had a little too much batter so next time I'll either reduce the recipe by 1/2 or just use more hotdogs. If you're willing to do a few extra steps this recipe really does work. Had to clump it on one side then spoon it on the other and try to mush it all together. They should be flipped half way through cooking which was not in the recipe. It's got a nice flavor and makes for a quick meal. Instead of dipping the dog into the batter. I put the dog on the baking sheet and and scoop the dough on top of them. Then I just shape the dough around the dogs. Messy, but pretty effective. I was really afraid of the breading falling off like others said it did so I mixed all the dry ingredients first, then coated the hot dogs with that and set them aside on a plate while I finished the breading mixture. Then I cut each hot dog in half and dipped them and not one bit fell off while cooking. They were easier to handle being smaller pieces too. Hope this helps! This really is good! |
