Maybe an amaretti cookie on the bottom would have been better. I sprinkled mine with chocolate shavings/sprinkles instead of the cookies to jazz it up a little. Good for a quick little treat. I loved that we were able to have banana pudding without any mushy leftovers. I spread a little peanut butter on the cookies before adding the banana slices to help them stick on better. It added great flavor! My two boys love this dessert. They had a great time making them and they looked and tasted great. My girls thought that piping them out of the ziploc bag was a really neat trick. We did use sugar free fat free banana cream pudding instead of vanilla. Again, these were great. We will definitely make these again. I did find that if you put a small bit of pudding on top of the vanilla wafer before you put the banana on top that the banana stays on better. Also, instead of crushed cookies, I sprinkled some chopped nuts on top. I just bought a bag of them in the baking aisle (so Sandra Lee-ish, buy them already chopped). They look festive for a family gathering, and they are easy. Next time I might try chocolate pudding. I made regular pudding and dusted with macaroon cookie crumbles. My grandchildren loved making this and the adults thought they were delicious.
