There was too much 'grease' in this recipe, so it's not for the dieting ones. It does take a long time to make, the time on the chickens' re-entry into the pot should be at least 40 mins or more as 30 mins is not enough. Next, as the sauce cools, it tended to separate from all the grease (butter, olive oil, and fat from the chicken). So the final presentation on the platter isn't attractive at the end of the meal! Taste is ok- you can get the same using a can of soup, add wine and garlic...without all the 'fuss'. So this isn't a great one. I had a Bell & Evans organic chicken cut up into pieces with the breasts cut in half. I followed some suggestions and seasoned the chicken with Paula Deen's House Seasoning and kept the chicken in a zip lock bag for an hour. I added about 1/4 cup chicken stock with the wine and congnac. I also smashed the garlic cloves while the sauce cooked and added lots of salt & pepper. The chicken went over rice. Two things I would change next time is add mushrooms because I think that would be very tasty and only use dark meat. The dark meat was very moist while the breast meat boardered on dry. Of course, I made a couple of minor changes, but I know it would be great as is. My changes: used a little more than four pounds of thighs because it was what I had. This produced copious amounts of far when browned, so I drained all but a tablespoon or two of fat after browning garlic. Also added about two scant tablespoons each minced onion and celery after fat was drained. Other than than that, I did it like she said, and it was SOOOO good! Thirty minutes on the lowest setting is not enough time to cook all of the chicken all of the way through; that part stressed me out because I was making it for a party, and I was late because of it. At the end, I took the sauce and put it all in a cuisinart and blended it all together so it would have a smooth consistency; I didn't want my friends to bite into pieces of skin that had been scraped from the bottom, and large pieces of garlic. He even had seconds...which he normally doesn't do. When he asked what it was...I told him chicken with 40 cloves of garlic and he was surprised. It didn't taste overly garlicky. The recipe was easy to follow. Glad I read the reviews and watched the show as the recipe on the website does not mention adding chicken stock. I only used one chicken since I was just cooking for 2 of us, but I kept the sauce ingredient amounts the same. We didn't have any cognac, so I used marsala wine in its place. The chicken came out tender and amazing. There was only a little bit left over, and it heated up perfectly in a saucepan the next day. I dumped it right out of the tupperware into a pan on low heat and allowed everything to warm up. Just as good the next day! Someone said it was bitter...Garlic will get bitter if you let it get too dark or burn. I made this recipe with 1 chicken because of what one review said about leftovers. I still have some left, we'll see in a day or two. I did make the full recipe for sauce, becuase we like things saucy and it went great with mashed potatos I made. Like Ina said, you really need to salt and pepper the sauce at the end. And I really did generously coat the chicken with S&P before starting. Also, I used a sweeter chardonnay, yum. I didn't have cognac, so I used a triple sec. This was delicious. I don't know what went wrong for others, sorry guys. I will definately make this again!!! I did a few things differently: 1) I cheated and used 1/4 lb. container of pre-peeled garlic 2) Used 4 whole chicken legs instead of 2 chickens 3) Eyeballed the cognac, so was a little more generous ;-) and 4) served the gravy on the side instead of over the chicken. One potential problem with serving the gravy in a gravy boat is that it's lumpy from the garlic. That didn't bother us, but I suppose one could puree it first in a food processor to make it smooth. It is time consuming but well worth the effort. I browned the chicken and made the sauce in a large frying pan as my large pot is taller than it is wide. Then placed the chicken in a roasting pan and cooked it on the stove top, basting every so often. On day of serving, brought chicken to room temperature before warming it in a low oven (250?) for an hour. Heated the sauce separately in a sauce pan. Placed chicken on serving platter and spooned some sauce over it. Served rest of sauce in gravy boat. The dish was a hit and I will definitely make it again. Love Ina's recipes. My mistake was undercooking the chicken. I had turned the stove (electric, not gas) to low that it was too low for adequate simmering. We just microwaved the chicken 5 minutes and it was tender and juicy. The gravy is so tasty. I left some garlic in there for looks. Follow the recipe but be flexible about the cooking time because everyone's stoves heat differently. If your garlic was bitter or strong, the only suggestion I would have is cook it longer! I seasoned the cut up chicken leg quarters with lemon pepper. Braised them in bunches. I added some chicken broth to the liquid wine/cognac mixture to make extra gravy and I baked it in the oven for 35 minutes at 350 instead on on the stove. I mashed up some of the baked garlic cloves to thicken the mixture some and add extra flavor. YUMMY!!! and great the next day. Definitely a repeat recipe from Ina. So, here is what I did this time on top of what it says in the recipe and turned out perfectly delicious. 1. Salt and pepper the chicken before start cooking and leave it for 30mins at the room temperature so that chicken has flavor from the beginning. 2. I braised the whole thing in the oven at 350F in the Dutch Oven for 30mins instead of cooking it on the stove so that the heat cooks the Chicken thoroughly. 3. Then, I even broiled the chicken for about 5 ~ 7 mins in the oven after I took it out from the oven and before putting it back into the Dutch oven after the sauce is done. Dy adding this into the process, the chicken got carmelized nicely. 4. As Ina pointed out, salt and pepper the sauce generously. This dish was tasteless. It took over and hour to cook the chicken and it was chewy so I honestly was worried it wasn't done. The garlic although sweet did linger a little too long...next time I would remove about half of garlic before cooking down sauce. I also felt that technique and cookware was imperative. I used a Le Creuset dutch oven which I find to do an excellent job on dishes such as this (and i believe Ina uses this as well). I would say the meal is worth a try but I've had dishes similar to this that out-shined this one. I am by far not the best cook. But I followed this to a "t", did NOT use expensive white wine, I used a $10 bottle of Bolla and some Henessey and this turned out EXCELLENT. I did chop the garlic because I really wanted it to mix well into the sauce. But other than that I did everything the same. Oh, and I used split chicken breasts. I think some people are skipping the part where you're supposed to put the chicken back in the pot and cook it in the sauce or something. That lets of some chicken stock which is needed in the recipe. No need to add separate chicken stock or broth as someone else stated though. Follow the recipe and this will turn out great!!
