I substituted golden raisins for the currants, and it was great. I served it with lamb chops and glazed carrots. It was devoured. Very easy, will make it again.

Sorry Ina, but this dish was a little too bland for my taste. It seemed to have needed something more, in the way of spices, to give it more taste.

This is my absolute favorite couscous recipe. I follwed it exactly except I used an Iranian berry called zereshk instead of the currants. They are small, unsweetened and very tangy. It turned out wonderfully. Next time I might try almonds instead of pine nuts. I already can't wait to have this again!

Nice change from potatoes and rice. Great flavor, especially with the sauce from the chicken. If you don't have currants, try golden raisins, or diced carrots and zucchini.

Fabulous recipe. Easy to prepare. Great aroma. All around well balanced flavors from pine nuts and currents (and I'm not a huge fan of currents OR pine nuts). Will put this in my "make this once a week" catagory.

I made this to accompany the chicken with 40 cloves of garlic, while it paired good for the most part, I thought it lacked something, so next time I will add homemade stock instead of canned.

I served this for a "Casablanca" movie night. All Morracan. The couscous, with a carrot salad from this site, and lamb kabobs. Everyone loved it.

I loved the currants. Served this with Coconut Curry Chicken and Marinated Roasted Tomatoes. I also don't like shallots so I substituted garlic. For the people who want more flavor, be sure you buy chicken stock and not broth if you don't make your own.

This dish on it's own may not be anything to write home about (a little on the bland side), but served with the delicious Chicken with 40 Cloves of Garlic it's amazing! The perfect complement to the stronger flavors of the chicken. Like another reviewer suggested, I also added a handful of golden raisins to the finished product. Yum!

I decided to make this recipe to go with the chicken and forty garlic cloves recipe. We had had couscous in the past and really weren't impressed but this looked so good on the show, I thought I'd try it. It was DELICIOUS! I enjoyed the lightness of the dish and the best part was it was easy. We will definitely make this again. Barefoot Contessa you have changed me into a Couscous fan :)

This recipe was very easy and yummy! I used low sodium chicken broth (pre-made) - however when I make it again I will not use it. The lack of satl made it a bit blah but it was still good!

Even without the nuts and currants, this recipe is delicious. One recommendation..it seemed that the couscous was a little sticky/too much liquid. I might suggest cutting back maybe 1/4 cup or so because it didnt really "fluff" up, more like stuck together. But the taste compensated!

Excellent as directed. I sometimes use, halved, dried cranberries with golden raisins (a few, chopped, mint leaves make it look like a Christmas dish!) and I believe there's no substitute for the toasted pine nuts. Thanks, Ina...

I loved this recipe!! I didn't use the butter in an effort to reduce the fat and calories and it was still delicious. I sauted the shallots in cooking spray instead.

The suttle flavours of this recipe makes it perfect for any bolder tasting entree accompanying it. ( Be it the 40 clove chicken, salmon, lamb, curried meats or fish ) It is so simple yet the nuts and currents add just enough flavor as well as simple elegance.

This made for a wonderful side dish. I served it along with my own Moroccan salmon and peas and carrots. To make it a bit lighter, I cut the butter in half (2 T vs. 4) and it was fine. I also used reduced-sodium chicken broth. It was so yummy, my fiance and I had it for lunch the next day. So simple and delicious--definitely a keeper!

I made this recipe with a little bit of hesitation because of some bland reviews. I was very pleasantly surprised, my guests said this was the best couscous they had ever tasted and I would have to agree. The flavors were simple, yet distinct. I will definitely put this one in my files, and I am very picky.
