After the protein bars and granola bars Alton had on the same show, we just had to try the crispy treats too. We couldn't find the puffed brown rice so we went to the health food section of the grocery store and purchased brown crispy rice cereal. And we had to wait a week for the store to get their supply of flax seed oil back in. But now that they are finally made, mmm, mmm, mmm! That's good eats! Even my 6 year old picky eater loved them! Since I used canola and didn't need to worry about how hot the oil got, I should have done it on the stove. It's hard enough making rice krispie treats and mixing everything together - you don't need the extra hassle of a double boiler. I think I will try to throw in flax seed meal next time for the nutritional value. I will definitely use these in the morning before workouts - if there are any left. My entire family enjoyed the almonds and dried fruits. They were wonderful on days 1 and 2. I'm not too crazy about the flax seed oil, though, after day 2. There seems to be a lingering smell and taste. Plus they would just plain make me nausous from all the sugar. These ones are excellent with the puffed rice and flax oil. I don't have to feel guilty eating them. Plus, they were a big hit with my friends. Excellent recipe. I measured the cereal by volume not weight because Kashi's Puff cereal is heavier. I also added semi-sweet chocolate chips. The tartness of the cranberries balanced the sweetness of the cereal. I think the reason I don't like these bars is the flax oil. It just smells bad and tastes even worse. And there's so much of it in this recipe that it overpowers all the other flavors. I do think this recipe would taste pretty good if made w/ butter. I know it's not as healthy, but considering all the other healthy ingredients I think I'd rather go w/ butter. I spent all this time shopping for these ingredients, then making them, just to get rid of the evidence before the kids and hubby return home. Needless to say I'm disappointed. These turned out great and I would definitely make them again. I figured out the points for Weight Watchers to be 3. The show in which Alton makes these yummy treats specifically addresses this problem by giving you a safe way too cook with the oil so that it doesn't develope the bitter taste while still allowing you to benefit from the chewy, moist by-product the oil gives us. It helps to watch the show. I find the double boiler unessisary for melting the marshmallows. Putting them in a pan directly on the stove top works just as well, and is a bit easier. I was unable to find puffed brown rice, too, which was disappointing since they therefore had less nutritional value using puffed white rice. Even using brown rice, though, don't kid yourself that this is health -- marshmallows are only sugar, after all, and dried fruit is high in calories. For the dried fruit part, I used golden raisins and dried blueberries. I didn't have flaxseed oil, so I used canola. Delicious! Toasting the cereal in the oven was a must, though, so these are a little more work than regular rice crispy treats. Yum! Very oooey, gooey. The bars were extremely sweet for me(the only dried fruit I coud find had sugar added) and aromatic so I just cut them into smaller squares which also blissfully makes more bars to enjoy. The almonds are such a magical addition. Toasted those in the nuke, too. No need to heat up the oven in this midwestern heat spell. Sometimes at our high altitude, recipes just don't come out the same way that they appear on the show. This one did. The only part that was different, was that it took the mini-marshmallows much longer to melt. The mixing was hard and I couldn't get it all combined. I had not problem with my brown rice getting mushy, I toasted it in the oven a few minutes longer than suggested at a lower temp. These taste great, are good for me and I am so glad to have an alternative to the regular rice krispie treat. I added different fruit also, dried apricot, papaya, and sour cherries these are great. Being pregnant this is just the evening snack that I have been looking for. I get my treat and none of the guilt. We doubled it because I bought way too much puffed brown rice (86 cents a bag!) and used dried apricots and dried cranberries because it is what we had but it was still great. The only problem with this recipe is trying not to eat half the pan before it cools. As I am pregnant and constantly looking for healthier snacks, ricekrispies treats are a craving and this looked like a great alternative. Well, didn?t work for me. Puffed brown rice tastes OK by itself, but mixed with the marshmallows, honey and oil became soggy and too chewy, and, in this case, chewy was not good. To me what makes RK treats great is precisely the crispness, but these are limp like they were made with old cereal. Adding fruit and nuts, though, is a nice twist and I will try it again but with the original recipe. I have lost over 25 lbs since January 1, and am always looking for healthy snack choices instead of the usual garbage that is out there. I made this about an hour ago, and couldn't wait to try a piece. The dried fruit gives the treats a wonderful "bite" to them, which complements the melted marshmallow. The slivered almonds add a unique crunch, which almost "pops" in the mouth. One thing that is lacking though, and perhaps this is a good thing, is the lack of sweetness as compared to the original rice crispy bars. I found the marshmallow to puffed rice ratio to be a little unbalanced. I would suggest changing the marshmallow portion by adding another half cup to the original amount. I found the portions to be a bit dry tasting for this very reason. Otherwise, this is a wonderful recipe. I have really come to love AB's suggestions, and find them well worth the time and effort to make. Thanks for thinking of us "health conscious" people, AB!! |
