I thought it would be a great way to serve leftovers at Thanksgiving and boy was I right. This was a winner any time of the year. I made sandwichs with roasted turkey on dark rye with the pesto and a combination of cranberries and cherrys (simmered in orange juice and then pureed in blender). I don't think you really need to add the extra salt. It was the right amount of salt without the extra added separately. Also, I bought a bag of 4 smaller ciabatta rolls, and used that instead of buying one big one, since it's just me. Then I can make this every day, and nothing is mushy! I pretty much love all of Emeril's recipes! |
