I've made this for three different parties and everyone raves about it--even one person who hates Brussels sprouts. Consider adding dried cranberries to the raisins.

MADE THIS DISH FOR THANKSGIVING TODAY AND EVERYONE LOVED IT. I LOVED THE RASINS IN THIS DISH, THEY GAVE IT A BIT OF SWEENESS THAT WAS NEEDED. THE ONLY THING I DID ADD WAS JUST BEFORE SERVING IT I SPRINKLED ABOUT 1/4 CUP OF SLIVERED ALMONDS ON TOP TO GIVE IT A ADDED TEXTURE AS WELL AS A GREAT TASTE.

this was delicious. i also omitted the raisins, not a big fan. it was extremely flavorful, watch the salt though- when you add the pancetta it really adds lots of saltiness.

Ina tends to use a bit more salt than I like so I omitted the salt as the pancetta adds enough. Very good and tasty and easy.

I like the saltiness of the bacon contrasted with the sweetness of the raisins. Soak the raisins before adding. It makes a big difference

What a perfect combination of ingredients and easy prep. This recipe would go well with a pork roast stuffed with prunes and apricots or the famous turkey meatloaf. I knew it would taste good as I was watching Ina prepare it!

I usually don't eat Brussel Sprouts but my mom loves them so I made them. They were very good. Just a tad too much salt though. Next time I'll only put in 1/4 tsp. instead of 3/4 tsp. I will also cook them longer as they were a little to crisp for my taste. With those changes, I will be making this recipe from now on instead of my moms way of just boiling them which does nothing for me, LOL! Thanks Ina!!!

Tried it and loved it.

I hate burssels sprouts but my mom and step dad love them. When I saw this recipe I thought if I don't like them prepared like this then I will never like them. I actually had two servings they were so good. You can hardly taste the brussels sprouts at all. They were a little too salty but if you get a low sodium bacon or low sodium chicken broth I bet they would be perfect.

Cooking the brussel sprouts in chicken broth adds great flavor! I used hickory smoked bacon instead or the pancetta or regular bacon and it really gave it very nice smokey taste.

I really like this dish, except for how salty it is. My husband and I are not a big fan of pancetta because of hos salty it makes everything. I would suggest replacing it with bacon, or just leaving it out. The brussel sprouts are fantastic cooked this way.

User: Maggie from Reno, TX    User Rating:
I had only tried brussel sprouts once as a child and hated them, which I now believe was due to how they were prepared. When I saw this recipe prepared on TBC it looked so yummy I ran right out and bought some brussel sprouts. I didn't have pancetta or golden raisins so I substituted bacon and reg. raisins & it was still fantastic. I almost left out the raisins and am now very glad I didn't. This will be a new staple on my home menu.

Very good!

Normally we just "steam" brussel sprouts, but when I saw this Ina make this on tv - both my husband and I decided we HAD to try this. It's easy and very flavorful. If you normally don't like brussel sprouts - try them fixed this way - trust me - you'll love them! Kudo's Ina!!!

If you never liked brussel sprouts, this recipe will convert you. Easy to prepare, great taste and looks yummy. The bacon flavors the sprouts and browns them nicely and the stock adds flavor and tenderness. The raisins add the perfect sweetness although I would use a little less.

One of my new favorite side dishes and also great leftover. Who could resist anything cooked in bacon fat? I think the raisins are a necessary addition for a little kick of sweet with all the saltiness. I used canned broth and they were very tasty.

although I did omit the raisins.(I personally don't care for them that much). Just a question...did anyone out there include them in the recipe when you normally don't care for them either? If so, how did they add/subtract to the dish? The dish was succulent as I prepared it and I can't imagine it being too much better!

First time ever making brussel sprouts
01/07/2008 at 07:04pm
User: Brianne from Santa Cruz, CA    User Rating:
I'm new to cooking, but adventurous. I caught the beginning of this episode and missed the end, but remembered how good the brussel sprouts looked on t.v. so by memory, I grabbed brussel sprouts, bacon & golden raisins at the grocery store(...but forgot to buy chicken broth.) I've made "this" recipe twice in the past 2 weeks. The first time was "inspired by" and the second, I took the time to find the actual recipe to check on how well I did. Both ended up fantastic, the chicken broth is very necessary for all around flavor. The first time it was lacking..."something"....my BF and I added a few random ingredients to enhance the body of the dish... when I followed the recipe more closely, the trial & error for taste wasn't necessary. Also - I used center cut bacon both times, the whole package, omitted the olive oil due to the amount of bacon grease in the pan *yum*, had no problem with excess bacon, as nibbling hands found the bowl of drained bacon pieces as the sprouts were cooking...you can never have too much bacon, IMHO.. And you HAVE to try it with the golden raisins..I'm not a huge raisin fan, everyone will give you excuses & looks, but they are easy to pick out if you could possibly not want them, not a single raisin or brussel sprout leaf was left in the pan....the dog was bummed. There were some extra folks around when I made these Saturday evening, although nobody was a "fan" of brussel sprouts, or raisins, and one doesn't "do" pork, Everyone tried some, and everyone asked for the recipe.
