My daughter and I both make this. Yummy, and lasts for ages in frig. We use packaged baby carrots instead of cutting lg. ones.

I have used this recipe twice now and everyone loves it. Plus because it keeps so long, there is no waste! Even my husband will eat carrots on occasion now!

I have to admit I was hesitant to try this but I needed something different for a group I cooked for every year, so I gave it a whirl and I am very glad I did! It was simple, fast and looked fabulous when we put it on a bed of Romaine.

I made this for our Hit 'n Giggle couples golf outing. Everyone loved the texture of the carrots and the sweet/sour taste. I cut the onions into cubes the same size as the pepper and carrot pieces which made it easier to serve (no rings). i'll make it again for the annual family outing in Michigan. I love carrots, I love onions, I love tomato soup so this seemed like a great recipe until I made it. I followed the directions to the letter. The flavor was just disgusting. It was like eating carrots with super sweet Catalina salad dressing. The sweetness was sickening. If anyone wants to make this recipe, they should just save time and put the carrots, onions, etc. in a bowl and pour Catalina dressing on it. It would probably taste better and save time and money.

When I first read the receipe I was a little hesitant but very interested. I made copper pennies for a family reunion. Everyone loved them. This Labor Day week end I will be taking them to another party. They were requested by the hostess, who had them at the reunion. I have tried and enjoyed many other receipe from you site. Thanks!

only compliant,recipe makes much more marinade than is needed. it will tend to cause dish to be soggy. less oil and vinegar and it will have better texture and keep longer.

I missed the beginning of the show where Paula actually made the Copper Pennies Salad but thought it looked good so I went on line to download the recipe. I was alittle put off to read one of the ingredients as a can a tomato soup but oh my gosh, this is fantastic! A little sweet, a little spicy, a little tangy. Awesome, awesome, awesome!

These are the best tasting carrots y'all will ever have. My husband doesn't care for cooked carrots but LOVES these. It's nice that they last so long in the fridge too.

I really liked the combination of flavors and the fact that it makes a huge amount and lasts a long time in the refrigerator. This is good for the summer, offering a cool vegetable instead of a warm one. A very interesting mix of flavors!!

1. Can make in advance. 2. Good sweet/sour taste. 3. Good side dish for many main dishes. 4. Good refrigerator life. (up to 6 weeks) 5. Easy! Note: I used sliced "purple" onion for color.

Quick, easy, tasty and inexpensive. Great served as a side or on lettuce. Also great if you substitute the carrots with sliced cucumbers.

This was easy to make, keeps well in fridge, and takes me back to the 70s when a similar recipe was very popular! I don't know how I could have forgotten to make these all this time, but leave it to Paula to remind me how good they are!

I served this to some friends for dinner. They all thought it was great. One of my guess asked to take some home which I gave him. He like the dressing so much he said it would be great on a salad. I did take some of the dressing and put it on a salad and it was very good. Thanks Paula for your recipes.

We like this recipe because it was a little unusual. It was tasty and a nice change from the normal side dishes. Both my husband and I thought however that we would have prefered the carrots raw.

I have over 1,000 cookbooks and I have been trying to find this recipe again for about 34 years! I never knew it to be called Copper Pennies, but what ever the name, it is a very interesting taste that I enjoy. We always had this during the holidays and cut the bell pepper and onions in rings and layered it into an oblong cut crystal bowl so that all the layers would show through. Thank you Paula!
