I used the slow cooker on high for 3-4 hours and the meat wasn't quite as tender if I think you would cook it on low for 8-9 hours. Other than that the meal was easy to make.

This recipe was amazing. I was a bit weary since there were some other reviews that were pretty negative, but don't pay any attention to them. The meat was so tasty and tender - it was practically falling apart when I took it out of the slow cooker. I loved it and will continue to make it.

I love roast and I am always looking for a new and easy recipe. I tried this and have made it about once a month since. I don't like mushrooms, so i use 2 sweet potoatoes instead. I also use fresh baby carrots and use 2 fresh yellow onions. I always cook my roast on low for 10 hrs. This roast is very tender and flavorful. I have not had one turn gray as other users have mentioned. The gravy is more of a sauce and it can be thickened with a little flour, but it is always dark brown either way. I love this recipe and would recommend this to anyone!!!!

Before serving I added fresh parsley. It was delicious.

Please do not disregard this review. Our family thought that this was a very mediocre pot roast. We used a nice chuck roast and the meat was tender but not very tasty. And we were particularly disappointed by the gravy. It did not have that good beefy flavor that makes you want to dip your bread in it. Leftovers weren't popular. We will not use this particular recipe again.

I spend a lot of time at work, so by the time I get home, and sandwich is really all I want. Now that the weather is turning cold, a hot meal is definately the ticket and this recipe fit the bill. I got up, had some coffee, browned the meat, cleaned the pan, put everything in the crock pot and left for work. Driving home, I forgot that I had made it and walked in to a fantastic aroma! So moist and a perfect meal for a brisk night. Easy, flavorful and tender. It did not need the steak sauce.

User: Stephanie from Poplarville, MS    User Rating:
Please do yourself a favor and ignore the negative reviews. This is a very good pot roast. This is a "comfort food" type recipe, not trendy, just like mom's or grandma's roast. Be sure to use a good chuck roast and follow the recipe as written by browning the meat- it is an important step in the flavor. This is by far the best pot roast recipe I have ever made. Even my picky preschoolers loved it!

confused about veggies

User: Denise from Knoxville, TN    User Rating:
I would love for someone to tell me when to add FRESH baby bellas, FRESH pearl onions (blanched and peeled), fresh baby carrots, fresh baby Yukon gold potatoes and turnips so that they don't turn into mush. I am actually trying the Robin Miller recipe tomorrow and after reading the reviews here about mushy vegetables, am a little worried about how to stagger them. I usually spend Sundays that I'm off cooking but I'm not really slow cooker savy and we have a lot to do tomorrow so I can't use my regular favorite Emeril/Giada/Ina/Rachel/Alton recipes. Why am I here, I get a kick out of reading these reviews. I AM the doctor in the family...I actually take care of patients with kidney disease, hypertension and who are on dialysis, a medical doctor, not a phD (not that there's anything wrong with that) and...all judgement aside, these recipes are really time bombs if you have any pre-existing medical conditions or a strong family history of hypertension, heart disease or kidney disease. I spend 20-30 minutes of every initial visit with my hypertension/high blood pressure patients talking about sodium reduction. As a health care professional, I would really feel a lot better if Sandra would at least mention using low and no sodium alternatives that are readily available in todays supermarkets. I hope people continue to post alternatives to theses ingredients that will help busy cooks put good meals on the table without sacrificing their long term health.

I hate to admit that I'm 37 and have never made a pot roast before, but this turned out great! The end result tasted exactly like my mom's, I did change a few things after reading other reviews of this recipe. I omitted the frozen onions and mushrooms, I used 2 cups of fresh baby carrots and 2 lbs of red potatos (cubed), and I substituted worstershire sauce for the steak sauce. I turned my crock pot to high for one hour and then to low for 12 hours... that's right, 12 hours. My meat may have been extra tough, but that's how long it took to get as tender as I wanted. My husband loved this roast and I was very pleased with the easy preparation. Thanks, Sandra, for a great recipe that I'll gladly serve to family members and guests.

I made this for dinner tonight and used fresh vegetables instead of frozen, but other than that I followed this to a tee. It's so blah...I guess you can't rely on A-1 and soup to season your roast. I think it's missing seasonings other than salt and pepper...maybe some fresh herbs.

I seen this saturday on her show. Made it monday with a few slight changes, just cause of what I already had on hand. Mushroom soup, instead of celery. Replaced veggies with brown rice during last 40 minutes of cooking. Was wonderful, and my kids went bizerk! The steak sauce does it, I was skeptical, but it was great. Will be making this often.

This is one of the best roasts I've ever made in the crockpot. I cooked it on low for 10 hours and the roast just fell apart. Not only was the beef tender, but it was full of great flavor. I AM CONFUSED. APPARENTLY SANDRA DID NOT FOLLOW THE PRINTED RECIPE DIRECTIONS ON HER PROGRAM. SHE DIDN'T SAUTE THE ROAST; SHE PUT THE ROAST IN FIRST FOLLOWED BY THE VEGGIES; SHE DIDN'T MIX ALL THE LIQUID AND SEASONINGS TOGETHER BEFORE ADDING TO CROCK POT. SO, WHAT TO DO? FOLLOW HER OR FOLLOW THE PRINTED DIRECTIONS? ANYWAY, IT SOUNDS LIKE A GOOD RECIPE AND I WILL BE TRYING IT -- ONE WAY OR THE OTHER.

Crock-Pot-Roast is the Best!

User: Jerry from Gig Harbor, WA    User Rating:
I, like others, used lots of fresh carrots and onions, not frozen. Also about 3-4 stalks of celery. Small New "red" potatoes came out perfect. I also used a "little" more onion soup mix and beef broth than called for. (The "less sodium" broth is best.)I browned the meat on a 3-burner gas grill instead of "oil" browning. Sometimes the meat get a funny flavor from "oil" browning. Lastly....the only way I would cook this is on low heat for 8-9 hours. Definitely will do this again!

I couldn't wait to make this recipe! I made it the next day after I saw the show. It was so tasty, however, when I made it,it was not done in the 3 hour time frame. To be fair, I did not use a chuck roast. I used a bottom round roast. Possibly, that cut needs longer to cook to be tender? I don't know. I will make this again. I'll just give myself more time. Go ahead try it!

I think that this recipe was great for my dinner party because it was just a few things I had to do for preparation but I didn't have to stand over the stove the whole time. the slow cooker cooked by itself giving me time to do other things to get ready for the party and not have to worry about dinner too much. When it was time for dinner, my meat was so tender and so juicy,My guest thought that I slaved in the kitchen and they raved on about my meat. I think that I will be using this recipe more often. I added cream of mushroom sauce and it tasted great. I agree the steak sauce made it taste a little off but I still thought it was a good meal. For those who say it's awful--it wasn't AWFUL but it wasn't all that great either. Although I still think this is a good recipe but with additional ingredients then it becomes great. I have already made this three times and with the last one I didn't add steak sauce but still good. Just don't forget the onion soup mix and the canned soups (whatever they are)....

I was a little skeptical after reading several reviews of this recipe to actually make this dish, however, I decided to go ahead and try it and boy am I happy I did. I made the recipe exactly as it said (except I did not add mushrooms because my family does not like them) and it came out great. I cooked it on low for 8-9 hours and when I got home from work to the amazing smell in the house, I took the meat (tender and delicious) and vegetables (which were very much in tact, not mushy) out of the slow cooker and placed them in another dish. I then poured the beautiful brown gravy into a pot, added a little flour (to thicken it) and cooked it on medium high (stirring frequently) for a few minutes. The gravy had so much flavor to it as well. I would definitely recommend this recipe to my family and friends. Thanks Sandra for a great recipe!

User: James from Huntington Sta., NY    User Rating:
OK, I braised the meat (5 lbs of chuck roast from Costco). Lightly seasoned it. Used fresh potatoes, onions, carrots and injected fresh garlic. I used 5 cups of beef broth and a small can of cream of mushroom. 2 Bay leaves. I have an All-Clad crock pot. Set it for 6 hours on Low and IT WAS PERFECT. This is the second thing I've slow cooked and aside from adding some salt after plating, I don't see the complaints unless you did something wrong or maybe it was beginner's lick on my part.

I didn't see the show when Sandra made this; I just found the recipe online. The only thing I did differently was to use fresh vegetables instead of frozen. I thought this was probably the best crock pot roast I?ve had, and would recommend this recipe without reservation. You do end up with a fair amount of juice, so I would almost call this a semi-soup (I did eat it out of a bowl and kept switching between a fork and spoon, so call it what you will). Anyway, it was very good and I will make this one again.

Use Golden Mushroom Soup not the creamed
06/16/2006 at 06:08pm
User: Elizabeth from New London, CT    User Rating:
I also tend to sear my meat first (unless I'm really rushed) and use fresh veggies - the frozen aren't as good in a crockpot. But the BIG thing is to use the Campbell's GOLDEN MUSHROOM soup instead - TRUST ME. Even if you plan to omit the fresh mushrooms - the soup mush's are so unnoticable in the dish after cooking, even a mushroom hater won't notice. It's about .50 cents more, but much more worth the cost. The steak sauce is an interesting addition I have never thought of using. It's delish and very much like my own crockpot recipe - with my noted changes. Remember - it's the method and not the exactness of a recipe that counts when doing this sort of thing. Enjoy and give Sandy a break all you haters out there. Not every cook is perfect - she's creative, and with some trial and error, you can use her ideas to your benefit. PS: If you don't have a crock pot, this can also be done by lining a baking dish with heavy duty foil and doing it "foil packet style" - be sure to fold and seal the packet well and save the money of buying a cooker just for the recipe - look for a roast that's flat like a big london broil, and ask the butcher if you don't see a cut like that - cook it at 350 for a couple of hours, longer for a really big piece of meat. And the clean up is easier than scrubbing the crock pot. Regards to all from Groton/New London, CT

Bland but tender

User: NICKI from GREEN BAY, WI    User Rating:
My husband and I thought this turned out really bland, even though I followed the recipe exactly. To make it better, I took the liquid and reduced it by about half on the stovetop and added in a lot of seasonings. This also thickened up the sauce to make more of a gravy. Once I did that, it was pretty good, the meat was very tender.

This was the first time I have every made roast and my husband and I agreed that is was delicious. I used cream of mushroom and worchetshire sauce instead of what the recipe called for and left out the onion packet (added onions) and it turned out great. Brown and season the meat with Lawry's. Also add some Accent to your vegatables. I will be making this again.

This is a great recipe for pot roast. I browned the pot roast before putting it in the crock pot. I used 1 cup fresh cut up onions,1 cup fresh baby carrots, russett potatoes, Beefy onion soup mix and a store brand of steak sauce. I've been cooking over 35 years and this is the best pot roast recipe. My husband loved it and I will definitely be making my pot roast like this in the future. Great job Sandra!!

This recipe is quick and easy to prepare. I read some of the other reviews before I trid it and I was a bit leery, but it turned out terrific! In all honesty I did tweak it a bit for my taste. Instead of the cream of celery soup I used cream of mushroom, instead of steak sauce I used worchester sauce, I also added grilled red and green bell peppers that I had leftover, two bay leafs, and I browned the meat really good before I put it inthe crock pot. But other than those things I pretty much followed the recipe, and I turned out the most delcious and tender pot roast I have ever made.

This was a delicious recipe! I could not find frozen onions so I added fresh carrots and fresh onions about 2 hours before I served. Also, I pulled the meat out and de-fatted, added corn starch to thicken up liquid to gravy consistency. I had 6 guests for dinner and they all raved about it, some said it was the best they had ever had. Meat fell apart, cannot believe it was so easy.

I used the recipe found at the site with a couple of exceptions. I browned the meat in a red hot cast iron skillet about 3 minutes per side (a must for any roast). I used 8 oz of fresh baby carrots and one large white onion quartered and an entire container of pre-cleaned and sliced mushrooms. No potatoes (I prefer mine mashed). I put the veggies in first, then the meat, then the sauce. The sauce is almost exactly the same as the web recipe except that I subed onion & mushroom soup mix for the plain onion soup mix. I slow cooked it on low for 9 hours. The meat came out very tender and very flavorful. Acually, I think it's the best chuck roast I've ever eaten. The only reason I didn't give it 5 stars was because lets face it, it's still a chuck roast, not filet mignon. I think that the people who are complaining probably went with the recipe off the show. 'cause this rocked. Can't wait to make sandwiches with the leftovers. Oh btw, get rid of the excess grease and thicken the gravy as needed with some flour. Great stuff.

I used all fresh veggies instead of frozen and added 3-4 stalks of celery cut into big chunks. I would recommend adding the veggies in maybe an hour or so later than the meat because they did turn out a little too soft. I also added a little cornstarch to the "gravy" to make it a little more of gravy consistency or you can use flour. I served the pot roast over garlic mashed potatoes and it was fantastic. Definitely will make it again.

I do make a few substitutions however. I use fresh potatoes and baby carrots and the frozen pearl onions. I leave out the fresh mushrooms and use cream of mushroom instead of cream of celery. I also use Heinz 57 for the steak sauce. It makes a pretty tasty sauce....give it a try!
