I did some things differently, though. I added Tabasco sauce to the chicken before I dipped the pieces into the batter to make them spicier and to cut down on the sweetness from the pancake mix. Made this with Mashed super skins with steak and pepper hash, which was also delicious. The only thing was its not a 30 minute meal, took more like an hour, even after preparing meats ahead of time. I have in the past dabbled in trying to cook things using pancake batter. One time specifically I used it to make something like a corndog without the corn meal. The result was nearly the same, delicious but a little too greasy. I just wonder if there is a better way I can cook these, if maybe the temperature in my oil was off and if there is a way to prevent them from sticking to the metal basket. I'm actually going to make these again tonight for my son because I know he is going to love them. I am going to try frying them in a pot on the stove or leaving the basket out of my fryer. Buuutttt... the hot sauce actualy was not for the heat, it was only for giving extra flavor, extra yummyness!! The only thing I did wrong was adding salt to the chicken before frying. I think in this dish you don't need salt at all, since you get all the flavoring from the pancake mix & hot sauce. Her ability to slim down and shorten cooking times for great food is phenomenal. This version of a classic bar favorite is no different. The batter is sweet and light, not heavy. You actually eat less quantity because of the breading, making it a great splurge from a diet. I made the equivalent of 4 chicken tenders for my husband and I, a normal serving from a restaurant, correct? We have at least half of the chicken left and are full with no side dishes (only dessert). I recently had my gall bladder removed, and can't tolerate most deep-fried foods. I was quite skeptical to try this, to be honest! I drained the chicken bites twice, on two plates of paper towels before serving them. This eliminated enough grease to not make me sick, and I will definitely try this batter on other meats - maybe leave out the tabasco and use the plain batter in making sweet and sour chicken...hmmm...
