To make it thicker and add a little flavor, I replaced the chicken broth with spicy mango coconut sauce. Also, I replaced the cilantro with chopped green onion. It was so good. While cooking I tested the flavor, it was very sweet due to the coconut milk, so I added extra crushed red pepper and soy sauce. I also added ground cayenne red pepper. Using the recipe only for the sauce, I drizzled it over rice, Asian vegetables, and coconut encrusted shrimp. My husband loved it!!! Maybe it was prepared wrong. My boyfriend, who HATES coconut, loved this dish. He likes it spicy, though, so he added some chili sauce. I changed it a bit by using small Asian red peppers instead of the crushed red pepper and sprinkling the finished dish with toasted coconut as well as the cilantro. I also used raw shrimp that I marinated in olive oil and garlic and then cooked and added to the sauce. The sauce was so delicious I ended up using the leftover in an Asian soup I made for a dinner party. Made her way, the sauce was kinda bland because coconut milk is kinda bland. I added 1/4 cup of cream of coconut and that made it sweeter and taste like coconut. It was also very soupy so I added 2 TBSP of cream of tartar mixed with 1/2 cup of water and that fixed it right up. Next time around, I won't add the soy sauce. We really couldn't taste it and I didn't like the color it made the sauce.
