Surprising Success

I was a little concerned about serving raw corn, but this dish was raved about at our last BBQ! I used frozen white corn that I let thaw over night and I also realized at the last minute that I didn't have white vinegar and used balsalmic which I thought worked out nicely. I'll be making this again this weekend for another group of friends.

A great "go to" dish

I would have given this five stars but this has WAY too much salt in it. I would halve it in the future. Otherwise it was incredibly fresh and delicious! I let mine marinate for 3+ hours in the fridge and served it cold. Thanks! I will make this again!

Very good

This was a very good salad. I actually used a bag of frozen corn since it's too early in the season and it was still very good. I thought it was too much green onion as I was making it but as it sit for a bit it came out very good.

This is, without question, the best corn salad I've ever prepared or eaten. I used feta cheese instead of mozzarella which made it a bit more creamy. Absolutely wonderful. Even better the next day -- if you can possible save some.

This is so simple and inexpensive to make for a large group of people and since there's no mayo it can just sit outside. The longer it sits the better it tastes!

This is the perfect dish to serve to company in the heat of August. Everybody loved this recipe and asked for a copy. We grilled the corn and used regular white vinegar.

This salad is wonderful, and you will get rave reviews!!! Only drawback, is that it probably should only be made in the late summer months when the corn and tomatoes are at their peak. I wish it could be made all year around. Every time I make this, everyone asks for the recipe.

Big Hit - Whole Family Enjoyed

I have made this summer recipe for a BBQ, family camping trip and for a dinner party this summer - it has been a hit with everyone I serve it to. I have been asked for this recipe every time, and am happy to share! People can't believe how yummy the raw corn is. In a pinch I substitute the homemade dressing for lite balsamic vinagrette.

Delicous!

I make this frequently. Frequently asked to share the recipe. I roast the ears of corn in their husks for 350 in a convection oven for 15 minutes first. Easier to remove silk, and gives a sweet carmelization to the corn.

Wonderful!

This is one of my favorite summertime salads. Before trying this recipe, I'd never used uncooked fresh sweet corn before and I've found it makes a delicious addition to this simple salad.

This salad was fabulous! I've made it twice with a variation on the second time. Instead of basil, I used cilantro. I oven roasted the corn and added a half can of drained black beans. The fresh corn (raw) was wonderful. I expected it to taste "earthy". It's on the menu for our 4th of July meal.

What a wonderful, fresh burst of flavor. This salad is delicious. I served it with filet mignon and the combination was fantastic. It would be a great salad with fish too. I used the left overs for breakfast with poached eggs and it was great! I just love recipes like this!!!

I added red and yellow bell peppers to this to give it extra flavor and color, and substituted red onions for the green. I would also use less salt and vinegar for this recipe next time to keep the flavors fresh and clean.

This recipe is the best of fresh summer produce. I made it after seeing the recipe and making a trip to the farmer's market. After making my own mozzarella cheese from mozzarella curd, this recipe can't get any fresher. Quick, easy and incredibly delicious!!

This recipe looked so good on paper, but didn't taste good at all! Way too salty and the vinegar made the cheese taste funny. I'd skip the salt, oil, and vinegar and just mix the corn, tomato, and cheese with some herbs. Wouldn't recommend.

Question please?
08/28/2005 at 04:34pm
User: Anonymous    User Rating:
Was the corn raw or fresh or both? I mean you don't cook the corn before taking it off the husk? Seriously? I did not see the show and may not be able to catch it on August 31. Thanks for any help.

Beautiful Side Dish

User: Anonymous    User Rating:
What this recipe lacks in flavor, it makes up in beauty, but I wouldn't want to take away from the freshness of the vegitables. I used 2 cups of sliced tomatos and 5 ears of corn and it was still too much corn. Next time, I'll use 3 cups of tomatos and 5 ears of corn; for more guests, I'll use 4 cups of tomatos and 6 ears of corn.

I made this salad with about 6 different types (and colors) of heirloom cherry tomatoes and it was quite a beautiful and tasty dish. The fresh corn was an unexpected pleasure. I'm going to try this with frozen corn for an experiment. The corn got rave reviews from my wife. Almost good as a healthy dessert :-)

This salad was incredible. My family was sceptical at first--raw corn?? I must say, I didn't think the dressing was too great, especially by itself, but when I put it on the salad, oh my gosh, it was fabulous!!!
