Like others have mentioned, the recipe calls for way too much sauce (I had about 1/2 of the sauce leftover) and I used dried currants instead of the raisins. I thought it might be too much curry powder, but once the chicken salad mellowed out in the refrigerator for a while, the flavors settled down and it was great. There are all sorts of different curry powders out there, so that may be why some people did not like this. I used the Spice Hunter curry seasoning blend and it was very tasty. I don't know if it was the type of curry I used, but I expected some spice or something and it was actually quite bland. I didn't use the chutney, nor the raisins, nor the cashews b/c that just doesn't sound good to me. I don't care for mixing fruit with savory. The rest of the mixture, was just odd. Both my husband and I ate a couple bites and opted to make turkey sandwiches for dinner. My 3 year old wouldn't even touch it once she saw the mixture. This is my 2nd recipe to make of Inas (the lemon cake was the 1st and OMG was it excellent) but I will not let this keep me from trying other recipes from her. Sorry Ina, but GROSS!! I did cheat a bit on the chicken, though: instead of roasting bone-in chicken breasts, I did boneless, skinless chicken breasts on the George Foreman grill. It was still unbelievably tasty. Following other reviewers' suggestions, I altered the mayonnaise part of the recipe; I only used half a cup of mayo with half a cup of plain nonfat yogurt. It still made more dressing than was needed, took the calorie count down quite a bit, and I can't imagine that it tastes any different than with all the mayo. It still had amazing flavor and the consistency was just fine. (And this is coming from someone who is usually anti-"low-fat-alternative".) Also, I stuffed the curried chicken into whole-wheat pitas instead of wraps, and my husband and I both liked it that way (though I'm sure it's fine with wraps or on lettuce, too). I paired this with the panzanella from the same episode, and it made me wish we had company over so that I could show off these great dishes! Overall, this recipe is a winner that I will definitely make again. I agree with others who said the mayo amount in the recipe is way too much. I used 1 cup and still had too much dressing, but then again maybe it's because my breasts were small (LOL). Also, next time I'll cut the salt in the dressing down to 1/2 tsp, at most. The dressing was a bit too salty. I didn't use chutney or raisins (yuck), but this was still a great recipe. I couldn't find chutney in my area, which is okay because I hate it. I also removed raisins from the recipe and substituted toasted almond slivers for cashews for personal preference reasons. The recipe turned out yummy, but I had a hard time getting them in the tortillas. I did manage and they were a hit for those who were not afraid of the curry stigma. I loved them but used less curry than called for because it seemed like a lot and I didn't have the chutney to cut the taste. Also, after a while, the flavor builds up on your pallet and it gets overwhelming, so this is not good for the main item of your meal. But I loved it and so did my husband! I took Diane's suggestion and used Golden Raisins, and followed the advice of several previous reviewers and reduced the mayo to a little less than 1 cup. I made no other changes. I made these, the panzanella, and the peanut butter and jelly bars also featured on this episode for a picnic/concert last night. Also, mix the other ingredients well before you add the chicken because the shredded chicken tends to break down while mixing. Mine ended up looking a bit like tuna salad. Basically, all I did was follow the cooking instructions for the chicken (I cooked it for 40 minutes and it probably only needed 30). Then I combined cashews, mayo, curry, salt and pepper. That's it! I read the reviews before preparing it and agree way to much mayo. I cut it back to 1cup like reviewers recommended, however, it could be cut back to 3/4cup. For those in the northeast, use Stonewall Kitchen's Old Farmhouse Chutney...it's outrageously good. Also, I use 1-2 tablespoons of apple cider or white wine vinegar in place of the 1/4 cup of dry white wine. It doesn't comprimise the flavor one bit. I used a whole rotisserie chicken(the sams club kind which is bigger than most grocery store versions)boned, and added cashews, green onions (chopped), water chestnuts (chopped), grapes (halved),celery (chopped),and raisins. For the dressing I eye-balled it using about a cup of mayo, half a lemon's juice, 1 tblsp. tamari (Japanese soy sauce), 1/2 jar Major Grey's chutney (about 1/2 cup), 2 tsp curry powder, salt and pepper to taste. I liked aspects of both recipes so this is what I came up with. I used to work in a specialty food grocery store in the deli, and we made a less exciting version of this salad. I used onion flavored pita pockets toasted and it was a huge hit. Everyone loved it including myself, who has had it for the last 3 meals.
