I broke up the sausage as best I could and mixed it with the other ingredients. 4 cups of cheese is way too much - I ended up throwing away a good 2 1/2 cups of the mixture when there was no more sausage left. Also, it only made about 4 dozen balls. The dip may have made it less dry, but we decided to do without. The pepper didn't make much difference either. But I have made the sausage ball recipe dozens of times over the years. It's so simple to make and it's always a hit. The only thing that is a little difficult is ensuring the baking mix is well incorporated with the sausage and cheese. It helps to rub the mix and sausage together between your fingers. Once everything is well mixed, the balls will not fall apart in the oven and they won't be dry since the sausage will moisten all the ingredients as it cooks. I tried Paula's way but didn't care for it. Here are my suggestions based on my family's recipe: heat oven to 350. It can be tough to tell if they are cooked through. I pull one out at 15 minutes and cut it open to see how cooked it is. Usually 17 minutes total is enough. make sure the sausage is at room temperature. When I make the mix I start with 2/3 cup baking mix per pound of sausage. The total mix should be crumbly so I usually end up adding a little more. I think Paula has too much mix in her recipe for my taste. Be careful not to over work the sausage into the dry mix. Just like meatloaf, over working will make the cooked product tough and dry. Mix just enough to combine. Roll the balls very lightly. It shouldn't be a hard solid ball. That will take longer to cook which will make them very dry If you are using a low fat sausage or ground turkey or chicken and / or a low fat cheese, make sure you add some extra moisture. Lower fat ingredients will result in a dryer sausage ball. Try a splash or two of milk or some grated onion - grate and use the juice The person that said that Paula is a fake must not understand the concept of the show.....her show is about home cooking. Of course there are many versions of the food she cooks. But that doesn't mean she's a fake. I love her show - I just didn't care for this particular recipe. The ingredients were exact. For those people who have complained about the recipe being too dry...you are over-cooking the sausage balls. Also, you must be sure to completely mix all of the ingredients. It is necessary to use your hands in order to get all of the Bisquick mix incorporated into the sausage. Sausage is a very firm meat and it takes awhile in order to break it down. Once mixed...roll out the balls being careful not to make them too big because it will take too long to cook and then of course they will be dry. Anyway...these sausage balls tasted exactly like a sausage and cheese biscuit. By the way...they will dry out if you let them sit out too long so if you are planning on serving them for an appetizer cover them in an air tight container or ziplock bag with a warm damp paper towel to keep them moist. You have to know how moist the cheese and sausage you've chosen are and you have to understand your oven. I made this w/ 2 Cups Bisquick, one pound uncooked sausage, 2 Cups white cheddar (I grated it myself). Baked @ 350 until golden (18 min.) I only got 3 dozen out of it, but my family ate them practically before I could get them off the tray and onto the table. As far as the dip goes, they all tried it and then reached for the Ranch dressing. I think this is one of those recipes that you just have to play around with until you get it where you want it. I read a couple of the comments from people about them being a little bit oily. I used Jimmy Dean sausage and they were fine. Experimented with different varieties of sausage. Found I like the hot sausage best. Also tried once reducing the Bisquick down to 2 cups. It worked for me anyway by making the balls more meaty. Family loved them more with the reduced Bisquick. Paula hasn't failed me yet. I followed the recipe exactly, so next time I will try some of the variations the other reviewers suggested. They fell apart while baking and I had to press them back together halfway through, and the cheese got too brown and crusty. We did eat them though, and they had a good taste. I think less Bisquick and more liquid is a must. Also, I tried the mayonaisse dip and did not like it. I used strawberry jam instead. I took they advice of some of the others and used less bisquick and added a few other ingrediants. I added about a half a cup of sour cream, 1/2 a tablespoon of mustard, 1/2 teaspoon of dill, and 1 teaspoon parsley. I also only used 2 cups of bisquick instead of three. They turned out delicious and the sauce went well with them. It is very simple, but it turns out to be a creamy spicy mustard sauce that goes perfect with the sausage. I can see how many people thought that these were too dry. If you don't add any type of wet ingrediant and use the full amount of bisquick they would be really dry. Take the advice of others and then give them a try. They are a delicious, quick and easy appitizer. I also use Jiffy baking mix, it has less sodium and a better flavor (IMHO). I dont technically measure things out. I let the sausage (1.5-2lbs) cool (but not completely cool) after cooking and draining. I add maybe 2 cups of jiffy mix. I then put about 2-3 cups of cheese (mix of extra sharp and sharp) If the mixture isnt soft enough to roll, I add 2 tablespoons of melted butter with a 1-2tablespoons of whole milk. I roll into small balls and cook on parchment paper at 375 degrees for about 10 minutes. I need to start measuring this because everytime I cook it people ask me, all I can say is that you dont want so much baking mix that there is some standing in the bottom, you are really just coating the sausage very well. A great variation is sliced or diced pepperoni and shredded monterey jack/parmesean cheese with a half stick of softened butter. I read the reviews first so made some changes. I reduced the Bisquick to 2 cups and since some had said they were a little tasteless, I added some sage, a touch of minced garlic and some grated onion. As I was mixing everything, the mixture still seemed very dry and crumbly, even after several minutes, so on a whim I added 2 tablespoons of olive oil and 2 tablespoons of water. After a little more mixing, it was very pliable and easy to work with and held together very well. They took about 19 minutes at 325 degrees in my oven to bake but they were great. They were very light and soft but with a crunchy bottom. The taste was wonderful. I believe a lot of the problems depend on the sausage brand and the amount of fat in the sausage.
