I must say this is the best Blue Cheese dressing my husband and I have ever eaten. My husband says it's off the charts. My neighbor hates Blue cheese dressing, but loved this one. Also the procuitto gets a bit chewy when cooked that long so I think bacon would be better. Otherwise really yummy, will make again! Just chopped the onion and carmelized in the pan, followed the rest exactly. Highly recommend. I cooked the pancetta first, then cooked the onion for the dressing in the same pan. It gave the onions a nice flavor. The dressing is so rich and delicious. Michael makes it look so easy.
