My husband and I love Blue Cheese Dressing and have a hard time finding one we like, so when I tried this recipe I had my doubts. I must say this is the best Blue Cheese dressing my husband and I have ever eaten. My husband says it's off the charts. My neighbor hates Blue cheese dressing, but loved this one. A huge hit at my house and so easy to prepare.

If you think you've had good blue cheese or even great blue cheese dressing, you're in for a big surprise. This is one incredible explosion of flavor. It's now a "GO TO" in my recipe box!

The main reason why I like this recipe is because it looks so refreshing to eat & also easy to prepare for a picnic.

Everyone in the family loved it and it would be easy to adapt to whatever is in the fridge. Bacon instead of Pancetta, left over pork loin, fresh spinach instead of arugula etc.




Great with a few alterations!

I agree that the dressing was good but I thought the wrap was even better with a nice Italian red wine vinegar and oil dressing. Also the procuitto gets a bit chewy when cooked that long so I think bacon would be better. Otherwise really yummy, will make again!

I only made the Blue Cheese dressing...it was excellent the first night but even cut in half made an enormous amount. After just one night in the fridge it was very runny and all you could taste was the onions.

I didn't make the cobb salad wrap, just the blue cheese dressing to go with a different recipe, it is SO good. Just chopped the onion and carmelized in the pan, followed the rest exactly. Highly recommend.

We had this simply as a salad, no bread, for dinner one night. Our 2-year-old even loved it. I cooked the pancetta first, then cooked the onion for the dressing in the same pan. It gave the onions a nice flavor. The dressing is so rich and delicious. Michael makes it look so easy. He rocks.

dressing was absolutely delicious but way too thick, I thinned mine out with water and it was perfect.

Very easy and tastefull. Exact amount of each ingredient, that you can actually taste them all. I thouhgt maybe the dressing would be too strong because the blue cheese, but not. It's a very elegant dressing. My 2-year old baby girl loved it!!!
