great for kids

My son (5yo) saw this episode yesterday & had to have it. So, I made it tonight for dinner. Didn't have wine, so I used stock. I made quite a few changes to the original recepie, but it was still great. For instance; turnips instead of potatoes. added yellow squash & zuchinni. no asparagus (too much for my kids). I used 2 1/2T of flour & only about 2C of liquid added in slowly because it was starting to look soupy. The sauce was the PERFECT consistency when done and my son ate 3 plates! Since I didn't have tarragon, I used an asain spice blend instead to give it some pop. My kids are actually looking forward to the leftovers with noodles tomorrow! Good job Rachel!

this dish has fantastic flavor with a few changes. It starts out as a soup to make it thick I added 7tablesoons of flour and to make it really yummy 2 glasses of wine. I also slow cooked it on low heat for a long time to thicken it up. I served it to company and they loved it.

nice

I like the tarragon addition, a classic flavouring with chicken, of course, and the use of poultry seasoning helps a lot with flavour. The asparagus can be omitted as some other reviewers have done. One can turn it into a real pot pie with the addition of store-bought puff pastry, or, as another recipe on this site does, one can use can use canned croissant dough and still remain faithful to the quick 'n easy philosophy, Ms. Ray espouses.

I am amazed at how much I love this dish. This is a perfect dish for cool or rainy fall days. It instantly warms you to your toes and the aroma is like a soothing vapor. I put in a little extra potatoes and carrots and do not use the asparagus. I have made this up on weekends to serve early in the week and it is even more flavorful. Thanks Rachel. This is almost as comforting as the mac n cheese at the Brooklyn Diner. Believe me, there is no better compliment.

Had to add 3 tablespoons of flour to stock and simmer for an hour. Didn't have tarragon so I added more course black pepper and poultry seasoning. My husband LOVED this as well as my 11 month old daughter. Will make it again with the Tarragon!

I actually had all day, so I took a lot longer than 30 minutes, but this was sooo good. I can't eat regular pot pies due to a gluten intolerance (no wheat, barley, rye, etc.), so this recipe was a God-send for me. I'll definately be making this one again, probably using the 30-minute method!

This is such a crowd-pleaser!

I have made this recipe over and over with rave reviews. I cut back a little on the poultry seasoning, and add or omit whatever veggies sound good at the time. I've made it with and without the wine, either tastes great. The tarragon is what makes this a stand-out. If it's too strong, just use a little less next time. My boyfriend requests this all the time, and takes the leftovers to work. (his co-workers have asked if I could make extra for them too!) Thanks, Rachel!!!

I neglected to read the reviews before making it, and regretted it once mine too turned to soup. However, a couple handfuls of flour (after everything else was all done) fixed it nicely, and it's now one of our new favorites!

I loved this recipe! At first I was skeptical, there wasn't a lot of spices to add flavor when I looked at the recipe, But boy was I wrong! It was so flavorful! Now i make it several times a month. (it's even better the next day!) Sometimes i even add noodles or dumplings in place of serving w/ a crusty bread! Thanks Rachael Ray!!!!!!

I love this soup but it doesn't seem to thicken for me the way it does on TV for Rachel and I'm not a good chopper yet, so it takes me much longer to cook this and coordinate the cooking. Otherwise I don't like asparagus, so I substitute frozen cut green beans instead. Yummy good stuff.

I agree with some other reviewers that this was not the consistency of pot pie- but thats an easy fix with flour or cornstarch. It was just slightly bland, so I think next time Ill spice it up a bit (definitely with some garlic- maybe rosemary) - But this recipe is definitely a solid starting point!

This was my first attempt at a Rachael Ray recipe, and I must say that it was just as easy as she makes it look. I was quite happy with the results and I'll be coming back for more ideas. I would've liked it a little thicker but I can easily reduce the amount of chicken stock/broth that I use next time.

Chicken Pot Pie is one of my favorite foods, but I rarelay eat it due to the high fat content. What a great idea to make the inside of the pie and to make it healthy, too. I made this on a weeknight--great to come home from work on a cold night and eat this tasty, healthy comfort food. After adding the asparagus, I let it cook longer--about 10-12 minutes. The broth thickened just enough and it really absorbed the flavor of the asparagus. Delicious!! I'll definitely make this recipe when I want warmth and comfort. Thanks, Rachael--great job!

I happened to be looking at different recipes on your website getting discouraged because all of the other sites I went to came up with nothing made alast minute choice to go to foodnetwork.com and will never another site again. I was flipping thru Rachel's recipes and came across this one it sounded easy to make and really good. I read the reviews and based on those I printed it making it for dinner that night. This went over really well I made this for my parents who do not adapt to change very well and they both loved it. I did make changes to the recipe based on what I had read Did not use wine instead 1 cup chicken broth, cut soup stock down to 3 cups ckicken broth, deleted asparagus because of price $4.00 per pound using fresh green beans, broccoli and zucchini instead, changing peas to corn and tarragon to fresh thyme and it came out amazingly good no need to thicken with anything it was thick enough.I also placed biscuits on top right before serving. This recipe only gets better the second day as the flavors mix together, yummy !!!! it's a keeper

I tripled the ingredients to accomodate 6 people and still had enough for left overs. At the end of cooking I mixed 2 coffee size cups of chicken stock with corn starch to get it to the consistency of chicken pot pie filling. I found it to be a bit bland, so next time I will try adding chicken bouillon and a little more salt.

User: Carrie from Coeur d Alene, ID    User Rating:
This is a fantastic recipe! I used diced frozen potatoes and they turned out beautifully. I also added diced frozen broccoli at the same time as the peas bec. my husband hates asparagus. Dried tarragon (a heaping teaspoon) worked beautifully. Thickened the sauce with corn starch mixed with chix broth. Topped it with saltines which sounds juvinile, but it was the perfect compliment. Added some crushed red pepper for that warm feeling when it goes down. This is a winner out-of-the pantry recipe. Over 1 1/2 days, I heated up several individual portions in a saucepan, adding the broccoli and peas at the end. It just got better and better as the flavors developed.

I went to the supermarket to look for some asparagus inwhich they did have but at over $3.00 a pound, i don't think it was worth it, so i used fresh green beans in it's place. I can also say that it even taste better the next day for leftovers and the next time i make this again, i will use Garlic. This a keeper.

My husband said this was one of the best dishes I have ever made. Granted I don't cook all that much ;) . But still, it was delicious and hearty. My only complaint is that it took more than 30 minutes, with all the cleaning, peeling, and chopping of the vegetables and the meat. I also added only a small amount of the tarragon, and replaced broccoli instead of asparagus. I also added more flour so it wouldn't be soupy, and it was perfect. Definitely the consistency of chicken pot pie. I will make this again for sure.

The first time I made this the whole family named it a definate add to our dinner favorites. I found slightly less chicken stock gives a little thicker "sauce" and my mother-in-law makes it without the wine to rave reviews. This is also good because we have someone who cannot eat wheat or corn so I just thicken with a little potatoe starch. Works just fine.

My family loved this stew with beer bread that I made earlier that day. It really was on the table in less than 30 minutes, and I had to wash veggies - they weren't all ready to go like she suggests on the show. My youngest son remembered watching the episode with me and loved it, wishing he helped me make it. It is quick comfort food.

30 minute Easy with all day cooking flavor.

It was so easy that I made it in 30 minutes and it definitely had that all day cooked flavor! It is truly all about the method. I added mushrooms and didn't have white wine so I used more chicken stock. If I didn't have potatoes, adding some pasta would work too.

A little Adjustment and WOW!

Fixed this tonight and, paying attention to other reviews, I cut the chicken stock by 1 cup and added 1 TBS of chicken base. Although I love Terragon in small doses, this seemed a little too much for my tastes so I reduced it by one half. Everyone loved this dish! It had the perfect texture and, served with wonderful whole grain bread, it was fabulous. One thing I do is use a substitute for flour that I buy at a ridiculous price at the healh food store! 10 calories a T though! Then, this really is a guilt free dish! Rachel, you are my dream girl!

This is the best. I made exactly like Rachel with one exception. I only put one tablespoon of tarragon and it was perfect. Also, my husband likes a little spice in his soups so he added a bit of Tabasco to his. Rachel you out did yourself on this one. Keep up the good recipes. Pat originally from Arizona living in the Bahamas!

Good and easy, as usual.

I used the prescribed 5cups of chicken stock and it came out a little more like a soup than chicken pot pie, so I would use a little less stock, or add it slowly as you go.

My boyfriend and I decided that we prefer this to chicken pot pie (with crust). It's like a hearty soup and served with crusty bread, it's delicious! I think the white wine adds lots of flavor and I also added 1/2 cup heavy cream to make it a little richer and creamier. This will be a favorite this fall and winter for us!! Thanks Rachel - as always you are wonderful!

Yummy!

I have one of those summer colds, and this was so comforting! I think it is too soupy for a pot non-pie. I only used 2 cans of chicken broth and it was soupy. I did use red potatoes which may have made a difference. Also used frozen green beans instead of asparagus. It's definitely in my do again file!

Yummy

Made this today and we loved it. I did not use the white wine, just extra chicken broth. I did not use the asparagus because we don't care for it. I did thicken up the soup just a little bit. Will make a wonderful fall/winter soup.

Good enough

This would be excellent without the white wine. I used a decent quality wine and it still left a funny aftertaste - I just don't think wine has a place in good ol' chicken pot pie. I'd prefer that the chicken stock be the dominant taste here...but I'll definitely try it again and omit the wine altogether.

Fast and delicious

This is so easy and takes little time to prepare, but the results are fantastic! I didn't have chicken stock or white wine on hand so I substituted chicken broth. It still tasted great! I used sea salt to add a bit of a kick, and plenty of pepper to spice it up a bit. The asparagus is a nice compliment to the other flavors in this dish. My picky 11-year-old even liked it.

My husband absolutely loves chicken pot pie, but I'm not a big fan of it b/c of the pie part. This was the perfect compromise for us. It was such an easy recipe to follow & we absolutely loved the food!!! So glad that we caught this episode
