I'm sorry but I didn't care for this recipe. The fennel and leeks were not something I enjoyed and the whole thing just had a strange texture and taste. Plus there did not seem to be a very good ratio of filling to noodles. I only took about 3 bites of it. We threw almost all of it out.

This was so good. I substituted fairy tale eggplant for the zucchini (forgot the zucchini at the store) and it was delicious. My husband who hates eggplant even liked it. It was really easy to make too.

Delicious, easy recipe...the artichoke hearts need to be chopped. I substituted goat cheese for the feta.
