It is one of my favorite "comfort food" dishes. My mother called it Christmas Eve Casserole. She used fresh Dungeness crab meat instead of chicken on Xmas Eve (but left-over chicken the rest of the year.) The biggest difference between her recipe and Paula's is that my mother put a cup of dried stuffing mix (the seasoned, cubed variety, not Stove Top)in the casserole mixture, and topped the casserole with another cup of stiffing mix, crushed. I agree with another reviewer that potato chips seemed to salty, and corn flakes worked great. I also added some extra flavor with some chopped, marinated artichoke hearts, and paprika over the top. It only filled an 8x8 dish though. The flavor was incredible. However, I thought it was far too oily. I agree that the mayo should probably be reduced to half and I will do that the next time. I also used a smaller dish to bake this in - a 9" round shallow baker. I think that was plenty big because it really would have been extremely thin in a 9x13. I will make this as an appetizer from now on by shredding the chicken instead. I had it the next day for lunch with tortilla chips and it was very tasty - after pouring out at least a Tbls of oil. We make it just a bit differently though. We don't mix the cheese in the chicken mixture, but rather sprinkle it on top, then we sprinkle on the crushed potato chips, and finally, toasted slivered almonds. The biggest difference is that we refrigerate it overnight before baking it which allows the flavors to meld. I refuse to eat it if it hasn't sat overnight because it just doesn't taste that great baked right after you've combined the ingredients.
