I baked them only 15 minuttes and they are moist and would make a great meatball substatue in spegetti and meat balls. I dipped them in ranch dressing and they are great . It was simple to make. I even combined the ingredients in the morning, rolled into balls in the afternoon and then baked in the evening (refrigerating in-between) and they came out great! I added seasoned salt, but other than that, stuck to the recipe. They came out really dry (maybe I baked too long, but only 20 min.)and I also made a yogurt, cucumber, fresh parsely, lemon and garlic sauce. I'm sorry to say, my sauce was the best part of this appetizer. When I make them for the game party tomorrow, I will bake less, but I sure wish they were not so dry and not so much like a bread crumb ball. I would probably not make these again. To help them keep their shape while cooking I froze them and put them in the oven directly from the freezer. I then broiled them at the end of the cooking process to get a lovely golden color. I read the reviews for this recipe and made a few changes: I added an extra egg, one extra garlic clove and sauted the onions. I also froze the "balls" and then baked before the party. Just be sure to let the sauted onion cool completely before mixing the ingredients together, otherwise you will cook the egg. Also, the suggestion to wear "gloves" was a good idea, they can be very messy to make. When making them to freeze, place wax paper on a cookie sheet and place the spinach parmesan balls so that they do not touch each other. Freeze overnight, then remove from the cookie sheet and place them in ziplock bag or use your airsealer system. Place bag in freezer until ready to bake. Let them thaw at room temperature for about 20 minutes, then place on a baking sheet and bake for about 10 to 15 minutes (Depending on how big you made them). I served with Ranch Dressing. These were a HUGE hit with the party that I just did. I will add this recipe to my standard items list for future catering jobs. I baked a few sample balls for 20 minutes. I did not realize I made them smaller than the recommended size. I made mine about the size of a melon ball and baked the second batch for 10 minutes. They were perfect. SO I needed to make something for a Tupperware party the other night and made these spinach balls. Everyone loved them! I made them a little smaller, because I knew there would be other food. It obviously made more pieces that way and I rolled out the extras and froze them individually on a cookie sheet and then stored them in a freezer container to make later. My family wanted me to let them have them all and not serve them at the Tupperware party! I learned a trick a long time ago, instead of using a towel to drain the spinach (you always end up with a green towel), I use my potato ricer. I use the insert with fine holes, and just push hard, all the water comes out and all you have to do is rinse the ricer. I too have been looking forward to their show and was not disappointed. I used 20 oz. froz. spinach, 2 c cornbread stuffing instead of the breadcrumbs...(and by the way using butter in this recipe is quite fine.) I used a small onion, 1/2 c fresh shred parm, 1/2 c white shred cheddar (had it on hand). Put the oven on 300 and cooked 15 minutes which alleviated the too-brown bottom of the spinach ball (for my oven anyway). While hot, sprinkle with a cayenne/salt mix and then again with microplaned parm. Perfect for us. If you found the orig. recipe lacked flavor, this is your answer. Enjoy! Dan and Steve's recipe was good but breadier than the one I remember. I substituted 8 T olive oil for the margerine with no problems. Next time I will try increasing the amount of spinach and decreasing the breadcrumbs to the bare minimum needed. As is, I think this version would be a great stuffing for broiled mushrooms, etc. Great for vegetarians. Yum!
