My husband sat right by the fryer and ate it as soon as it finished cooking. It was even better cold the next day. The only thing I would do differently is cook fewer pieces at one time. I was worried at first about the hot sauce because I can't handle anytype of heat, including black pepper. Paula said that the heat would cook out and just leave the flavor. She was right! I had no problem devouring it, and I'm the girl who orders naked wings (mild too spicy most times). My mother in law used this recipe also and for the first time in her life was successful at fried chicken. She was so excited, she literally jumped up and down. I thought she would cry. The only variation I made was that I fry using Canola oil instead of peanut oil. My youngest son is allergic to peanuts and we don't take any chances. This recipe is relatively easy to make, and the end result is what is to be expected from Ms. Deen! However, I was using a Teflon-coated pan (T-Fal brand); it seemed as though the coating got done before the chicken did so I had to extend the cooking time a bit which was a challenge as to not burn the coating. I believe next time I will use a cast-iron skillet. It heats more evenly and it's easier to work in than the pan I used. However, my mother never used the hot sauce, but I did!! My wife and I had a church function to go to and I fried up chicken using this recipie but I did not use salt. I fried it in veg oil, but it still came out. Well, just as we put our food on the table along with other deletable delights, my chicken was GONE in five min!!!!! When the church ladies told my wife she did a great job, her reply was" Oh I did'nt make it. My husband did!!" They were surprised!! It was a big hit! You only use a scant teaspoon, if that! You store the rest for use later to use like salt or any other seasoning. I am a great cook, but I have never been satisfied with my fried chicken. I thought this would be really spicy, but even the next day it was very mild and let my chicken sit in the eggs and hot sauce for about an hour. It was so juicy and tender and the crust was absolutely perfect. It looked as though it came right off the magazine page! My guests enjoyed it so much that I had to roll all three of them out the door when it came time to leave. Nothing but "ooooo's" and "ahhhhh's" all throughout dinner. I am hooked! By the way, to those who thought the recipe too salty: Please note, the House Seasoning is to be sprinkled on the chicken, NOT added to the flour (and, I think, not ALL of it!). If you added the whole recipe of House Seasoning to the flour, it would indeed be too salty. In my Mother's recipe, a small amount of salt, pepper, and garlic powder were added to the flour - maybe a couple teaspoons each. The amount of House Seasoning in the recipe coud be used for many recipes of chicken, or anything else you wanted to season. BUT for the people who do not follow the recipe which says "season the chicken with the house seasoning" means sprinkle on to your taste not dump the whole sheebang on and for the ones who say It had little flavor you should have sprinkled liberally. Also Paula said you could leave the chicken in the sauce up to an hour,the longer you marinate it the more flavor it will absorb. The key to this recipe is the frying temp. if your oil is not hot enough the chicken will soak up the oil and follow the recipe. Thank you Paula I am still licking my fingers! You're not supposed to put the whole recipe of house seasoning in the chicken... in case you didn't read the whole recipe, the first line says clear as day that you can store the house seasoning up to 6 months in an airtight container! That should've been your first clue! Common sense should clue you in to the fact that its just a light sprinkle of the house seasoning, especially if you saw the episode she made it in! It turned out fantastic when I made it and that's probably because I had enough sense not to put a whole cup of salt on my chicken! It probably has todo with the house seasoning - the recipe shows a separate full recipe for house seasonong - you shouldn't use the whole thing on only 2 1/2 pounds of chicken!! And if you don't use enough, it will taste bland. The only thingI wold suggest is to changethe wording on the recipe - perhaps - House Seasoning - 3TBL or to taste. Love you Paula! | ||||||||||||
