easy Louisiana dinner

I made this and it was simple and required very little on my part. I cooked it in an iron skillet and just used bisquick for the topping to cut on the calories. I used a 16 oz. bag of okra because I could not find a 10 oz. and did not want to save any- it was a mistake because there was too much okra- my fault. I think next time I will add chicken and sausage with the shrimp like some of the viewers suggested. I liked it with just the shrimp, but it might be tastier with more meat. Definitely a keeper.

Addicting!

I'd never had okra before so was shocked at how tasty this dish was. I substituted the cornbread topping with reduced-fat Bisquick mix to cut some calories. This is an easy, healthy recipe that I will definately make again!

This recipe was wonderful. I cooked it tonight for dinner. The gumbo was great, but next time, I am going to leave out the cornbread. It was too much and too dry. I will put it over rice next time. I will make this again. Thanks for the recipe :o)!!!

Okra was mushy, topping was dry and too dense. Might be ok, but not in this house.

User: Marisha from Fairbanks, AK    User Rating:
I didn't think it was too bad actually it was kinda good, but I could probably live without the corn bread on top, but I guess it is all in where you are from. My husband did not say too much about it, so I guess I will not be making it anymore.

Awesome

My husband is a cajun so I was reluctant to make him anything with the word gumbo in it. He LOVES it. I do kick it up a notch as Emeril would say by adding a little andouille sausage and substitute Cajun seasoning for the house seasoning.

Didn't care for the Cornbread Topping

User: VICKI from Flower Mound, TX    User Rating:
The Shrimp Gumbo filling for this casserole is excellent and very easy to make. I also added some chicken to mine and a little more chicken stock. However I thought the cornbread topping was too much and too dry. Next time I'll just use the small box of Jiffy mix like the other reviewers or leave it off all together.

I made this at the lake this weekend for some friends and we all loved it. Very easy, however, I did not do the cornbread topping because I cooked it on the grill. It was still great. We added some hot sauce and it was even better. Thanks Paula!

As always, Paula's recipes make it to top, in a household where a couple of the household members are from Australia and have no conception of good taste! They are learning!! And Paula has helped...they are actually willing to try and to my surprise they like what I've made :) This was a very good and easy recipe!

The recipe was very good and was exceedingly easy to make. I added about 1/3 cup of chopped bell pepepr and a minced garlic clove as I sauteed the onion/celery mixture. I also added 1 cup of cooked chicken when I a added the shrimp. I plan to make this one often!

My husband actually made this for dinner tonight and it was so gooooood!! He now gets to make it every couple of weeks through the winter. We will add some "heat" next time and maybe some sausage. He used Jiffy (7oz box) and it worked just fine.

Easy and Delicious!

I made this last night for dinner and it was wonderful. When shopping for ingredients I couldn't find a 12-oz. cornbread mix, only 7-oz. Since we're supposed to be low-carbing and not eating cornbread at all I just went with the 7-oz., but then I didn't know what proportions to use for wet ingredients - follow package instructions or adjust percentage-wise for different ounces per the recipe? I goofed and the batter was too wet, but I spooned it around the top anyway. That part wasn't perfect but once the cornbread cooked I thought the 7 oz. package was enough "bread" for the dish. Next time I make it (and I will make it again) I might add a little "heat" to the sauce (personal preference) but it was delicious just the way it was.

Barb from Suburban St. Louis - my first ever review!

User: Barb from Ballwin, MO    User Rating:
I grew up in South Arkansas and my husband in north Texas - we both love gumbo. But, my husband suffers from GERD, so I don't make spicy foods. This was a perfect compromise. His comment: "great flavor - not too spicy." I altered it abit by using cooked, shredded chicken breast instead of shrimp. I also served it over white rice, and made the cornbread in a separate pan to serve on the side. I added extra broth to have plenty of gravy for the rice to absorb. It can easily be spiced up for those who like it - but it's a great basic recipe with lots of possibilities to experiment. I will definitely use this recipe for company. My husband took a tub of it to work today for lunch - and he NEVER takes his lunch!

It was a thrill to find this recipe. I was trying to come up with something for dinner, and had fresh-frozen okra and shrimp in the freezer. I also added some sausage and left-over cooked chicken. Spiced it up too. Didn't cover with cornbread, but made that separate. Husband announced to friends the next day that I had made the best Gumbo!

This is a very tasty meal, that dooes not require much prep work. However, it is a little on the messy side when it comes to serving the dish so the finished product does not always look the most appealing.

Very easy - VERY GOOD!

I followed the directions except for 2 things - I used an 8oz cornbread mix and I like hot so I added just a splash of hot sauce. My family raved!! It was very tasty, only thing wrong - there's not enough - I had no leftovers!!

Gumbo can stand alone
01/17/2007 at 06:23pm
User: Dinah from Miami, FL    User Rating:
The Gumbo was delicious. I used fresh okra and it worked beautifully. Next time I think I will add a few red pepper flakes to give it some zip and I would definitely leave off the biscuit topping. Bake the biscuits seperately and serve on the side...The gumbo is a meal in itself.

I found it wonderful, though I did make several changes due to my ingredients on hand. I only had tomatoes with chilies and seasoned okra with yellow squash, so I used them. I also had some chicken breast that I needed to use, to I added that as well as the shrimp. We LOVED it!

Very good recipe. However,I added garlic and some hot sauce that really made it better. Also needs more liquid, so use the full can of stock
