I cooked it in an iron skillet and just used bisquick for the topping to cut on the calories. I used a 16 oz. bag of okra because I could not find a 10 oz. and did not want to save any- it was a mistake because there was too much okra- my fault. I think next time I will add chicken and sausage with the shrimp like some of the viewers suggested. I liked it with just the shrimp, but it might be tastier with more meat. Definitely a keeper. I substituted the cornbread topping with reduced-fat Bisquick mix to cut some calories. This is an easy, healthy recipe that I will definately make again! When shopping for ingredients I couldn't find a 12-oz. cornbread mix, only 7-oz. Since we're supposed to be low-carbing and not eating cornbread at all I just went with the 7-oz., but then I didn't know what proportions to use for wet ingredients - follow package instructions or adjust percentage-wise for different ounces per the recipe? I goofed and the batter was too wet, but I spooned it around the top anyway. That part wasn't perfect but once the cornbread cooked I thought the 7 oz. package was enough "bread" for the dish. Next time I make it (and I will make it again) I might add a little "heat" to the sauce (personal preference) but it was delicious just the way it was. But, my husband suffers from GERD, so I don't make spicy foods. This was a perfect compromise. His comment: "great flavor - not too spicy." I altered it abit by using cooked, shredded chicken breast instead of shrimp. I also served it over white rice, and made the cornbread in a separate pan to serve on the side. I added extra broth to have plenty of gravy for the rice to absorb. It can easily be spiced up for those who like it - but it's a great basic recipe with lots of possibilities to experiment. I will definitely use this recipe for company. My husband took a tub of it to work today for lunch - and he NEVER takes his lunch!
