One thing though..I would not call this "super quick". The chopping of the vegetables takes some time, but it's worth it. But why don't they consider using the Cuisinart to slice and chop vegetables? The Cuisinart can julienne or dice carrots, onions, zucchini--you name it- in no time. You don't even have to wash it out until you have finished all the chopping and dicing. The Immersion blender/chopper works beautifully, too, for garlic and herbs. I have begun to think there is a liability problem with the complete avoidance of tools like these. But surely, kitchen knives are pretty scary, too. I am all in favor of anything that will make it easier for us to prepare homecooked, fresh meals. I do enjoy the availability of new recipes. At 77, I've used a lot of old ones, and it is fun to see some of them, like summer pudding and minestrone, being resurrected. I did add quite a bit of salt, pepper, and chili powder to make it more tasty. I will definitely make this soup again! I have leftovers that will last for days! My entire family loves it. It is hearty, tasty and nutritous. I prefer the veggies cut into small pieces. I also change up the stock. Sometimes I use vegetable stock only and sometimes I use 1/2 chicken and 1/2 vegetable. It gives it a nice flavor. For noodles I have used No Yolk egg noodles, small size shells or the tubetti. Also to make it truly a meal in itself I will buy already cooked chicken breast, cut into small pieces and add to the soup. There are so many things you can do with it. This is it! The flavors are magnificent! The only thing I will do next time is increase the vegetables, using green beans too, and decrease the pasta a little bit. I did put a rind from an expensive imported parmaggiano reggiano in and didn't like how it changed the freshness and sweetness of the soup. It also mitigated the thyme. i love it in other soups, but in this one, I'll leave the recipe as is. It was 5 stars before the cheese. Also, in one of the other recipes for minestrone I found this recipe for toasted bread crumps that you put on top of the soup and that really make it delicious! 4 c. fresh bread crumps 1 c. grated parmesian 1 T. thyme salt and pepper drizzle with olive oil and bake 350 for 20 minutes or until toasted. Hazleton, PA User Rating: I followed this recipe almost exactly (which I almost never do) and this turned out as good if not better as any minestrone I've ever had.I grew up working in fine Italian restaurants so this was a treat for me. I used no thyme, but did add basil. Use a good romano cheese at the end instead of parmesan. The broth tasted rich and flavorful and the potatoes, carrots and beans absorbed the broth beautifully. The only change I would make would be to read the recipe more carefully next time - I cut all the vegetables and sliced the pancetta to big. It is a bit more like veggie soup, so 2nd time around I added 2 cups of tomato sauce to replace 2 cups of the chicken stock. I also omitted the celery and yellow squash - my family liked this version better. I also added grill seasoning for some extra flavor. I cut back on the olive oil slightly, and, after researching other recipes, added a rind of parmiggiano reggiano. I used both rosemary and thyme (about 1 tablespoon each). I thought it could have used more tomatoes, but it was still amazingly delicious. The only time-consuming thing was all the chopping. But it was so worth it. My husband says this is the best soup he's ever tasted! We made it over the weekend, and I'm making it again as I write this. This is a recipe that I'll make again and again. Truly fantastic! I think minestrone tends to be better wiht beef broth. I followed the recipe exactly and I think there is too much pasta and not enough tomato. The soup is good, but it's more like a vegetable soup, doesn't have the minestrone flavor I was looking for. I pretty much followed the recipe to the tee. It was a lot of chopping, especially if you make everything small so 40 minutes is lean on time. I think prepping some of the stuff ahead of time would make more sense next time. The cooking part goes quick and the results are heavenly. Everyone loved it, even the fussy teenagers. I used fresh tomatoes instead of canned and crushed the juices in. I also used great northern beans cause that's all I had and little heart shaped pasta I got for Valentine's Day. I was surprised that I could make good minestrone as I have never attempted it before. Kudos to Michael...I always found his recipes a tad bit tedious but this one wasn't time consuming at all! If you find chopping to be as relaxing and meditative as I do, this recipe is definitely worth your time. I made it just like Michael did on the show, using the Parmesan Reggiano rind and preparing the soup a day ahead. I had to use a little more chicken broth to thin out the soup when I reheated it and chose not to use all the cooked pasta. What a wonderful treat for a cold, rainy day - or anytime. Prep time took over 40 minutes, about the same for other minestrones. Next time I'll prep earlier in the day. Maybe I chop slower than others? I also added an extra can of cannelini beans and a small can of red kidney beans and I had some leftover spinach. Along with the rosemary I added 2 tablespoons of chopped parsley. I am so happy I found this gem of a recipe. The proportions were right on the money from the broth, vegetables, beans, etc. I didn't have cannellini beans, just red kidney beans, no problem. But I made sure to get cannellini for the next time I make it...this weekend in fact. To serve, I drizzled truffle oil and grated parmesan on top. To make this soup even MORE super quick, prepare the vegetables a day ahead.
