The only reason I gave it four instead of five stars is the ingredients might be hard to find. I had some farro (spelt berries) given to me by a friend so that's why I decided to make this. Also, they had gorgeous fresh dill in the market and baby eggplants and organic tomatoes. I did the veggies in the oven, more of a roasting really, although I used the broiler. I added a green pepper because I had one I needed to use up. Bobby Flay has such a knack! I was skeptical, but the grilled veggies and dressing really compliment the earthy farro taste and texture. Worth the trouble to find this grain in the health food store and grow fresh dill or snatch it up at the market. Worse comes to worse, make it with yummy toasted bulgur wheat. BTW, it takes a lot of water to cook the farro, I used four cups and simmered it for about an hour. Broth would have been even better. It's kinda like risotto. I also added lemon zest to the vinaigrette, and it turned out amazing. I am making it for Thanksgiving tonight, as it tastes better the day after you make it. Delicious! The farro is a little hard to find. I got it at Whole Foods. I will make this again! Although I have taken a slightly different approach.I use my Italian version. For the vinegrette I used the juice of one fresh lemon mixed with olive oil, salt and pepper. To the salad,I added 3/4 cup of toasted pine nuts, 3/4 cup of capers, 1/2 cup chopped flat italian parsley, and 1 tablespoon of finely chopped fresh thyme. It is simply deliciouso. Everything was really good, but the vegetables were a little bland, and the dill dressing was a little too strong with the dill. Next time I would probably season up the veggies a little more and cut back on the dill in the dressing. Other than that, this recipe was great. My family really enjoyed it. |
