I make these and freeze them. They make a perfect quick breakfast for the kids, they just pop them in the toaster. And so much healthier than the stuff you buy in freezer section at the grocery store. I add a tablespoon of cinnamon for little something different.

These had a nice, neutral flavor & were really easy to make. I used to beat egg whites separately to make fluffy waffles but these were just as fluffy without the extra work. They were soft when cooked light brown, but when allowed to cook to a deeper brown, more crispy texture, the flavor was even better.

I love waffels and always make mine from scratch, I always use yeast to make mine. but when I watched this receipes . I tried it exactly the way the receipe did. It did not blow up, had no taste and did not even get crispy. My family told me to use my receipe. sorry (I tried).

We love Alton, and we love this recipe! I didn't have the Whole Wheat Flour or Buttermilk, and they still turned out great. Instead of Buttermilk, I used 2 TBSP Lemon Juice + 1 tsp Cream of Tarter to the 2 cups of milk, and let that sit for about 5 minutes. Then I added it to the egg + butter mixture. Next time I will use real Buttermilk plus the Whole Wheat Flour so I can taste what everyone else is raving about. :)

These were the best waffles I have ever made. I was about to give up hope with my new Cuisinart Waffle Maker. Other recipes I tried would stick and come out all soft and spongy. I followed this recipe to the T, and it turned out great. I also watched the show where Alton made this recipe and followed his tips for turning your waffle maker to high and using PAM to spray the inside of the waffle maker (I used PAM for baking). Additionally the extra waffles can be frozen in a big ziplock bag for later. I poped them in my toaster oven another day for Waffles on the go!

I tried this recipe to compare it with a batter I make for Belgian waffles. I was disappointed with the finish product. It has more of a cake like texture than a traditional belgian waffle. I use yeast in my batter a let it sit out overnight. I call it "Night-night waffles" Then add the eggs and other ingredients that should not sit overnight in the morning. "Yeast" is the key to making waffles that are light, with crisp out side soft inside. I was puzzled that Elton did not bring up "yeast" in his waffle episode. Don't worry Elton, I am still a fan of all your foodie Knowledge ! My recipe is called overnight ginger-cardamom waffles and is heaven ! I have tried several waffle irons, and find that the Waring pro works best for me.

I've done this AB recipe thrice now. Each time getting better. It finally dawn on me that the wets over powered the dry if you use (cups) with flours and buttermilk. This time I went just a tad heavy with the dry and a tad lite with the wets,... PERFECT. The soggy interior has disappeared replaced by fluffies. The outside is a bit more crispy as well. Goes to show you that approx. means exactly that,...approximately! Nicely done AB!

My whole family enjoyed these waffles... my one-year-old ate a whole one (one square)! And my husband couldn't stop eating them. I added a teaspoon of vanilla for some flavor because of other comments and also, since I didn't have any buttermilk I made my own by adding a tablespoon of vinegar to 1 cup of 2% milk. Very good!

The first time I made these waffles, my husband thought they were so-so. The second time, he ate two. What did I do differently? 1) I actually let the buttermilk get to room temperature. 2) I added a couple of shakes of cinnamon to the batter. Small changes, big difference!

I saw this episode a few years ago & hadn't tried it until I saw it on air again last week. I thought they were very quick & easy to make. I used a microplane to add orange zest to the batter for a little extra flavor. I found it funny that I liked them better when reheated from the freezer than straight from the waffle iron (crispier when reheated). I've made a few batches & put them in the freezer... no more store bought frozen waffles for me!

They taste kind of yukky. They aren't crisp, they have good flavor though. I whipped the egg whites in hope of making them fluffier. The batter was too thick. I added extra butter because there was want of a crispy crust. I don't think i'll make these waffles again. I suggest you don't bother. However, I think they would be luscious pancakes.

I have tried various waffle recipes and waffle makers throughout the years and this was truly the best explained waffle recipe thanks to the episode of Good Eats that explained the science behind it all. I even went as far as to buy the exact same waffle iron from the show (Villaware UNO - Round Belgian Waffle Maker), or at least what appeared to be the same (perhaps Alton's was not a Belgian?) and did the recipe and steps exactly as he instructed. I will say though, I am not a big fan of the "earthiness" that whole wheat flour brings to the taste, although it really was good, so I will be trying all white flour my next time around and setting the cook preference at a higher level for a darker, crispier waffle.

I love breakfast food at anytime of the day. Having a good waffle recipe is essential and this is the only one I use. I always make a double batch and freeze what I don't use -- they are just as good when toasted like store bought frozen waffles.

No more modified pancake mixes. Alton's recipe was a great Saturday morning treat. The family thought I had become a gourmet breakfast cook. Waffles were crisp on the outside, and fluffy with just the right amount of chewy goodness. Not as much work as I anticipated and well worth the time.

I am normally a huge Alton Brown fan but these are not what I look for in a waffle. I want them light as a feather and crispy golden brown. You could tread tires with these. Try the Joy of Cooking recipe - cake flour, eggs separated and whites beaten stiff and folded in. Yum.

I bought the villaware uno belgian round waffler from Amazon for my son's tenth birthday! :) I don't think the children love anything better than waffles. I am sprouting some soft white wheat and am going to try using all 100% sprouted wheat in the recipe next. The waffles can be a little lighter if you separate the eggs and whip the egg whites very frothy and then fold them into the batter. Alton is the best!

I like this recipe, but I've found if you use 1 1/2C white flour, and 1/2C whole wheat flour, and add a bit more vanilla, they taste so much better, and not as heavy. ALSO, I only get 4 waffles out of this recipe, and I have an 8" waffle iron. Not sure why.. *i love waffles*

I'm usually use waffle mixes but I didn't have any at home so I decided to look for a recipe to make them from scratch. I experimented and used all whole wheat flour and soy and buttermilks so the waffles were not only good but also good for you. Crispy on the outside and moist and tasty on the inside. One recipe made 14 waffles so I froze the extra ones to pop in the toaster later. Thanks for the great recipe.

Almost by mistake, in one very early Sunday morning, I tunned into a local channel and there it was, Alton Brown's Good Eats, I've never saw that show before and I was captured by it's style, so simple, and so down to earth, and I decided to keep looking, the episode: The Waffle Truth, Here in Mexico Waffles aren't quite popular, but I like'em. The recipe is so simple and with basic ingredients anyone could do it. enjoy.

This is the best waffle recipe. I could not taste the whole-wheat flour. I also substituted Splenda for the sugar, oat flour for the white, and canola oil for the butter. It still turned out wonderful. Thank you Alton.

This recipe isn't bad -- and the wheat flour and eggs provide good fiber and protein -- but it just isn't the best waffle, in my opinion. I followed the recipe exactly but found the results to be very heavy and dense. I think this waffle would be very good for a savory recipe. However, if you desire a light, fluffy breakfast treat; this probably isn't your recipe.

This was the first recipe I tried with my Villaware round waffle iron I got for Christmas. The waffles came out crisp and golden - just perfectly cooked - better looking than any waffles I've ever baked in other waffle irons. However, I found the waffles to be rather tasteless. The whole wheat added some texture, but there just was no flavor to be found. Drowning them with syrup and butter helped, but I'll keep looking - I'm thinking my grandma's recipe may work for me now that I've got this waffle iron.

Just made these and they are great! I have been considering a waffle maker for some time and when I saw Alton's show "The Waffler" it helped a lot! I got the right waffle maker and this recipe is awesome. I added cinnamon and orange extract. This is how a waffle should be. Thanks Alton!

As a newlywed with a brand new waffle maker still in its box, I needed a reliable recipe and this one was terrific! The waffles are delicious every time. It really does help to have the same waffle iron that Alton recommended(Villaware), as the batter cooks consistently.

David from Oceanside almost got the waffle iron right. However, AB didn't make Belgian Waffles, he made American style waffles (much thinner, with more and smaller square impressions). So while the waffle iron manufacturer is in fact Villaware, the model is V2004 (not V2002). This model is hard to find, but Williams-Sonoma sells it and I've seen it on eBay as well. Good luck!

Since I don't own a kitchen scale and I didn't know whether "approximately" meant a little more or a little less, I used exactly one cup each of whole wheat flour and all-purpose flour. Apparently I should have used a little less, as my batter was very thick and the waffles turned out heavy. I think the whole-wheat flavor contributed to the heavy effect as well.

My husband bought a waffle iron on a whim and the waffle episode just aired; too much of a coincidence to ignore. I gave it a go, but the batter was too soupy. My husband tried it, and the batter was EXACTLY like Alton's. I think the difference was my buttermilk was too cold?? When it comes to cooking the batter, the iron makes the difference. We used a square, two sided iron and it was pretty lame...soggy, only browned on one side, and took forever. We used a toaster to try to make it crispier. I'll try this again when I get a better waffle iron.

I have tried a number of waffle recipes - and found that while I liked the technique for these waffles, they were disappointing. Not crisp! For those looking for a waffle with a bit of crunch, see Pam Anderson's cookbook - hers are the best so far and she provides great background research on all her recipes.

I love this waffle recipe. Its healthy, yet flexible-i can add fruit, spices, or anything else i feel like adding. I make these weekly and freeze them for later use.

Found to be really easy and simple. Kids love to help with this recipe. Since I have two kids. One mixes the dry and the other mixes the wet. Then dad puts the two together.

I've had a waffle iron for about 5 years and have used the basic recipe that came with it. It was good, but AB's basic recipe is so much better. My husband who sometimes eats one of the other recipe will always eat two of these. Even my kids ask for seconds of these. Unfortunately, that doesn't leave any for the freezer to use on school mornings!

This was a wonderful recipe, although you really do have to like whole wheat(which we love) You know its in there. Also, if you don't have a waffle iron that gets very hot, the waffles are not crispy. I think the waffle iron on the show is a VillaWare (at least it sure looks and sounds like one!)

I bought baking soda and baking powder for the first time for cooking so you know what a novice I am. These waffles were easy to make. They were light and delicious! I made them using all white flour. My husband already had the square waffle maker and they turned out fine. I was able to make 12 waffles total and can't wait to toast up the ones I froze. Oh, and for those who don't have buttermilk, you can replace it with either 2 TBS cider vinegar or lemon juice, and fill the rest (up to 2 cups) with milk. You're supposed to let the mixture rest for 5 minutes and since the buttermilk needs to be room temperature, you can do this first before putting together the rest of the ingredients.

As far as their tenderness and fluffiness they can't be beat but if I want to eat a healthy breakfast waffles would be my last choice. My husband liked them but I found them to be too wheaty. Next time I will cut down on the wheat flour and see how they do. When it comes to waffles, give me decadence or give me a donut

Keep in mind, this is from someone who hates waffles: They were fantastic! Super-easy to make, great with syrup and butter or like AB said, with chicken. (I ended up making waffle wraps with mashed potatoes and chicken inside and gravy on top. =) ) I thought we'd have plenty left for breakfast tomorrow... but we ate them all! ^.^

I liked it. I think the key is emulsifying the butter and egg yolks and cutting the wheat flour with the AP four. This is the best wheat waffles I have tasted. My attempts have come out a little thick so I end up adding a little more buttermilk or regular milk than originally called for. Yes, I "just walked away" and didn't mix it too much!

This was only the 2nd time making waffles or using a waffle maker. Mixing the recipe was more work than a store bought mix, but it was well worth it. The batter consistency was just right and easy to use, not too thick or runny. I loved the chocolate flavor, the light texture. These are now my favorite waffles, and the best part is I made them myself!!

The key to this is the waffle maker as Alton talks about. People who want crispy waffles don't know good waffles. These are so light and fluffy melt in your mouth the way they should be. Alton is God!!!!!

I never liked those frozen waffles, but it was the only thing I ever grew up on that resembled a waffle! Now thankfully my kids do not have to go through the same thing! This recipe is easier than pancakes! Completely foolproof if you have the right waffle iron!

I have tried lots of AB's recipes with lots of success, so I was rather disappointed with the results. I followed the recipe to the letter and technique just as demonstrated on TV. The waffles were not crispy at all and just did not have a lot of flavor. But I will keep trying with other recipes.
