They thought I was gonna pull out the box of premade stuff, but nope! I made it from scratch! I topped it off with a scoop of vanilla ice cream and it was great. BTW I LOOVE good eats!! On it's own, these waffles are extremely bitter. I used metric measurements, so I am confident that the problem is this recipe and not me. If, ONLY IF, one was to drown them in ice cream or loads of sweet whipped cream and sugary topping like strawberry sauce are these waffles even edible, and certainly not palatable. I'm guessing, but I think it is a possibility that the people who rated it well may have done just that, which reduces the bitter taste. I would never use this recipe again. Might be OK with a lot of powdered sugar, syrup, or ice cream, but definitely not very good on their own. Too sweet for me but without that they seemed dry and not sweet enough. Also didn't get crispy on top, even when turning the waffle iron to highest setting...but that's probably the fault of my waffle iron. Will get new iron and try again soon! I invited some waffle lovers over for a Sunday breakfast and these waffles were a big hit. The kids ate them with chocolate syrup and whipped cream and sprinkles. I had mine with traditional maple syrup. The chocolate ones were a bit sweet, I'll probably reduce the sugar the next time. Since he loves chocolate, I decided to make this for his breakfast before he goes back to school. I followed the measurements by weight where specified and used well-shaken Grade A culutred lowfat buttermilk and mini semi-sweet chocolate chips. With a belgium waflle maker, recipe made perfect ten 4-inch waffle squares. Batter came out thick and chocolate chips did not sink to the bottom. Buttermilk cannot be replaced for regular milk because buttermilk is thick and must be well-shaken before using. This recipe is perfect and will continue to make this for my son whenever he comes home from college. They looked very chocolatey but did not have a lot of chocolate flavor. In fact, they were saltier than they were sweet. I made some whipped cream and put it on top and it helped. Might be OK with a lot of powdered sugar, syrup, or ice cream, but definitely not very good on their own. I have had much better at restaurants...was hoping to be able to replicate that same nice flavor/texture at home. I made sure I got the same one AB used on his show. The chocolate waffle recipe is simply sublime. I used mini chocolate chips instead of the larger ones, and took care not to overmix. I will admit, however, that I doubled the amount of sugar used in the recipe, to make sure it was sweet enough to counterbalance the depth of the chocolate. The first time I made this recipe, I used 2% milk instead, HUGE mistake. The waffle batter was very, very thin and unusable. So, after purchasing buttermilk, I tried again. I was afraid at first that the "twang" of the buttermilk would be too invasive, but to my surprise it wasn't. I taste almost no buttermilk influence at all. I didn't have one of the dishers AB uses, so I used a measuring cup and probably ended up using about 3/4 c of batter for each waffle. These freeze very well, and will toast up nicely in a standard 4 slot toaster if you cut it in half. Just be sure to watch the heat setting, these will burn quickly. Put a little whipped cream on this, and you have my 10 year old son's favorite waffle. Once I added syrup, they were very good. Looking forward to trying them as a dessert with a sweeter topping. The smell that filled the kitchen was wonderful--like hot cocoa on a cold day! Only had a cup of buttermilk so used heavy cream and milk to make up the second cup of liquid and they were still awesome. Start a little light on the batter for the first one and adjust to prevent overflow-messy batter to clean your iron if you use too much. The recipe given in The Waffle Truth calls for 7 oz (~1.5 cups) of AP flour, while the one from "I'm Just Here For More Food" (pg 109) calls for 9.5 oz (~2 cups), with everything else the same. Well, the 1.5 cup version (sorry AB, I'll buy a digital scale when I find a job!) makes the batter slightly too thin, and 2 cups is slightly too thick, so next time I will try 1.75 cups. Also, in the book, sugar is considered a wet ingredient, but on this show it was added to the dry goods. AB, I'm confused! I've made them for other people as well and all agree that they're excellent. I find it's best to use a high quality cocoa powder and chocolate chips (my favoite is Ghirardelli because it's good and easy to find) - the cheap stuff just tastes nasty and if you're going to spend the time to make it, you should do it right. The chocolate chips tend to sink to the bottom of the batter so make sure you stir it every time before you add more batter to your waffle iron. For an extra chocolate kick, sprinkle a few on top of the batter before you close the lid. Also, a good waffle iron will make all the difference. Don't waste money on a bargain quality model that will fail in 2 years. Spend the extra bucks and get the upgrade.
