Other reviewers had problems with the tortillas breaking, so before using them I put them in the microwave for 15 minutes sandwiched between damp papertowels and I had no problem with breakage. The recipe took me quite a bit longer to make then the recipe states, but maybe because it was my first time? If you like goat cheese, you will love this recipe! First off, the ingredients are very expensive. We still thought it was worth trying though. Making the sauce was very enjoyable for us. We found it to be a tad bitter and more smokey than we would like. Once everything was plated for dinner we were excited to dig in. The first few bites were good, but as we moved deeper into our meal we found it VERY rich. So rich that we couldn't finish it. We thought this would make a much better appetizer than a meal because it is so rich. We probably won't make it again, but enjoyed the process none the less. To avoid the tortillas from splitting put them in the micro for 20-30 seconds. They become more pliable. Instead of goat cheese (expensive and overpowering) you can use Chihuahua cheese w/ Cotija(can find it in walmart). The goat cheese flavor and soft texture overwhelmed the dish. The only thig I can think is that different goat cheeses have significanty diferent flavors. I used two varieties from Trader Joe's and one was firm and very mild. The other was tart and much softer. Uses less of this last one but it still was all that I could taste. Recommend anyone looking for a cheese enchilada simply use monteray jack and chopped onion filling. Although the dish looked different, the taste was awesome. I made all of the recipes in the episode and they came together to make a wonderful meal. I couldn't find hte mexican cheese so subtituted with parmesan. Also - could not find ancho peppers, but found dried seasoning and made a sort of pastes with it and used it instead. Red sauce was the best I have ever tasted. Like the others have said it does take awhile to make (if you buy enchalada sauce it would be a little faster). I didn't think i was going to be able to find cotija cheese but suprisingly walmart had it. I would say this cheese texture is somewhat close to feta and the taste is somewhat close to Pecorino Romano. SO if you can't find cotija you pick what to substitute. Anyways is there any downfall to this recipe other than how long it takes to make it yes? However, since we moved up north, our cravings have gone unanswered. Sick of the everything-out-of-a-can Mexican restaurants here in town, we decided to take matters into our own hands and give these a try. Wow. These enchiladas certainly don't make themselves, but the effort is entirely worth it. After the first bite we all just looked at each other and knew. The sauce was authentic, the filling delightfully tangy, and the cheesy crust on top was the crowning glory. To anyone interested in making their own enchiladas, this recipe is a must-try. Just be sure to use good tortillas; we couldn't find fresh ones and they fell apart. They'll still taste good, but the presentation is somewhat lacking. Overall, five stars (and then some!). I was VERY skeptical at first because I also do not like goat cheese. HOWEVER, I was very very pleasantly surprised at how much I enjoyed this dish!!! I had to make some substitutions because I couldn't find ancho chiles - I had to use canned chipotles instead which gave an amazing smoky flavour.. MMMM....Even with the substitutions, the enchiladas turned out sooo goood. I kept eating them and when I wasn't eating them I was dreaming about finishing the leftovers. I highly recommend this to anyone at all.. even non-enchilada-non-goat-cheese-loving individuals. Here is a variation for finger food: I altered this recipe for quesadillas too: QUESADILLAS: Use goatcheese filling to dollup on 1/2 of a blue corn tortilla and fold over in pan (use cooking spray). Brown on both sides. While making all - keep warm on a baking sheet in the oven. When completed, use kitchen sheers to slice slice in half for small triangles. DIP: Use 1/2 to 1/2 ratio of red sauce in recipe to sour cream for a great dip for these quesadillas.
