Make sure to use a non-stick pan for this recipe. When I cooked it, it stuck really bad to the bottom of the pan. The flavor was excellent.

Wow ```such flavor in this rice un believable, but you do have to like spicy...A warm flavor great taste. Alittle more work than I usually do for rice, but it's the worth the extra time that goes into this.

I used a different combonation of peppers and jalepenos, so mine was probably a little spicier than the original recipe. But it was so good we couldn't stop eating it! I agree with the extra liquid comments also, I put a 2 to 1 ratio as well, although the veggies will add a little bit of liquid as well. Overall, a winner of a recipe.

I actually did this a little differently, as I was afraid it would be too hot if I boiled the chilies in with the stock, I charred them under the broiler and then cooked them with the rice. I also added more liquid as other reviewers have suggested - rice should be a 2 to 1 ratio as far as I am concerned. It was so flavorful and was a perfect accompaniment to the goat cheese enchiladas, as well as to any other Mexican dishes I've made. A keeper for sure!

Due to reading some reviews here beforehand, this turned out so dang well. I used more liquid than the recipe suggested, three cups as opposed to the suggested amount in the recipe. In hindsight, I could probably lessen that, but it turned out well none the less. This is a great, wonderful dish for anyone that loves the taste and aroma of peppers, but can't take the heat they produce. And if you want to spice it up, just leave some of the pepper seeds in. I ended up having to roast the peppers myself, but in the end it was well worth the extra effort. I couldn't get a Spanish onion, but a sweet vidalia added to it nonetheless. The cilantro was the perfect accompaniment to the peppers, mingling nicely with the earthy taste of the poblanos and the zippy tangy-ness of the jalape?o. It was amazing how much the garlic added to it overall. Some good, but basic flavors here that still manage to wow the taste buds. It really was an easy recipe. The short list of easy to find ingredients is a major plus and even though it always takes me longer to cook than a recipe states, there was nothing hard about the prep and cooking. For such a wham bam punch of a taste, it as surprising how easy it was. As another reviewer stated, restaurant quality all the way. This is going in my official recipe box at home. One last thing--it tastes just as good the next day!

This recipe was a huge hit at my dinner party and a nice twist on regular rice. The only thing is, I used brown rice, and I needed about 1/3 cup more stock. Everyone from young kids to teens to adults loved it! I made it again on a weeknight and had to use plain green bell pepper instead of poblanos and I skipped the onion/garlic step and it was still delish!

My husband and I usually have a tomato based rice dish with Tacos, Echilladas, etc - but tried this one this weekend. great flavor, little spiciness, but not an overwhelming burn. Excellent dish! It will be one of our standard dishes when cooking mexican dishes

This side dish was a big hit in our home. The combination of heat and herbs is quite nice. I highly recommend this recipe if you are looking for a way to add variety to your meal.

This is so delicious; however, I found that the liquid wasn't nearly enough & should be (as another reviewer suggested) about two to one proportional to the rice. Having to add more liquid after the 15 minutes was up & kinda start over made it a little bit gummy. If you start off with enough liquid at the beginning I'm sure this will be perfect. It was beautiful and delicious!

I have made a lot of Bobby's recipes, and this one was as tasty as they all are. However, I found that the rice needed more liquid and a little more time than what he says (more in line with what it says on the rice package, which is usually double the liquid to the amount of rice). I just added more chicken stock and then it came out fine.

I didn't have poblano peppers, so my rice proabably didn't turn out the way it was supposed to, but it was really good with the enchiladas. The perfect complement!

i love this recipe because its easy. i used brown rice instead of white rice but to me it tasted better. it tastes so good. if you do not like spicy foods then just add half of the halapeno just to be safe because mine is spicy.

This recipe is a fair amount of work, but is worth it. It is not so hot as one might think from the pepper ingredients - the cilantro gives it a lovely fresh taste
