I used two EXTRA large eggs so I thought it best to hold back a bit on the water; but despite the larger eggs, it still needed ALL the water called for PLUS more, a lot more. Before adding extra water, it ended up as coming out looking more like a wet bread dough more than a thick, pourable pancake batter...this was a bit troublesome. I worked as best with the 'looser' batter after all this doctoring and despite all that, the taste and texture was good.
