For the best flavor I've found using Italian-flavored breadcrumbs for some extra flavoring and grating the cheese fresh works best. Most of the time I will substitute veal for the lamb. I normally don't even put them in sauce, but just serve them with some fettuccini alfredo and eat them with knife and fork. These are so good I had a recovering vegetarian licking their plate...

I have tried entirely too many meatball recipes and this by far is "THE BEST"! Occasionally I substitute the Lamb for Veal (some don't care for the taste of Lamb) and it tastes even better!! For sure these are GOOD EATS!

I used turkey instead of the other meats because we try to eat leaner meat.I used mushrooms instead of spinach because all I had in my fridge were mushrooms. It was a hit!

They turned out perfect! Flavorful, juicy, crispy on the outside, and soooo delicious. We had to sub spicy ground italian sausage for the lamb though, didn't have lamb at the store. I toasted fresh sourdough baguettes and put the meatballs in with marinara and freshly sliced provolone. They were the best meatball subs ever created. If you put a bad rating, you must have done something wrong.

These were the best meatballs, and they were super easy to make. The breadcrumbs on the outside gave them a nice crust and the cheese and spinach inside was a nice addition over plain meatballs. The little bit of red pepper also gave them a nice kick. I didn't weigh them when I made them, but they still cooked in the named amount of time. I'll definitely make these again. Thanks for another solid recipe, Alton.

Super easy and makes the ultimate meatball. Used the mini muffin tin to bake and it worked really well although I could see that if you had a lot of fat in the meat you might want to use a drip tray underneath.

Followed the recipe to a T, except I omitted the garlic 'cause my dad will not eat it...and the meatballs were delicious. I heated up a jar to store bought spaghetti sauce, made some garlic toast, (plain toast for my dad) cream corned and a green salad and everyone was happy. Will def. make in the future. Cannot wait to make a meatball sandwich for lunch tomorrow....yummy!!!!

What a great way to treat friends on New Year's Eve!! I made these for a New Year's Eve party last night and I should have doubled the batch, because they were gone in a wink. This is absolutely spectacular! I have even used the meat mixture when I want a cooked ground meat, such as in a meat lasagna. It is always moist and doesn't need to be soaked in sauce to eat!

Let go of tradition! - finally, a meatball recipe that doesn't leave a pool of grease in the gravy. I used 1lb of ground chuck and .5lb of ground pork (skipped the lamb) and they came out great - I could actually use good, fatty, meat without worrying about a greasy sauce. I used a regular muffin tin, which yielded about 10 meatballs. Well done, Alton.

I've been trying to match my Italian mother-in-law's meatballs for years, and this recipe finally did it. I used beef mixed with Italian pork sausage because that's what I had on hand, and other than that, I followed the recipe exactly. My husband is veggie-phobic, but he didn't mind the spinach in these at all, and the meatballs overall got rave reviews. This recipe made a ton of meatballs, so I have enough to make meatball subs later this week, which will make me a hero in this house all over again! I loved the mini-muffin pan idea, it makes making the meatballs much less messy and much less greasy. Thanks, Alton!

These were the best meatballs I've ever made or eaten. I only had ground beef so I didn't mix meats. I used fresh, chopped spinach and Italian style breadcrumbs. I thought the muffin tin thing was silly, but it actually browned and lightly crisped the meatballs on the sides as well as the top and bottom. The breadcrumb coating added a delicious crunch. The flavors would be lost in a tomato sauce so I served them on the side. Everyone from my 3 year old son to my 17 year old son loved these.




No mini-muffin tins but improvised - terrific recipe!

I used my broiler pan with foil on top which I shaped into the grooves. I then punched holes in the foil in the holes of the grooves so that the grease would drain off. They came out great. The texture was perfect and they stay together even after adding to sauce. Best meatball recipe I have ever tried! I will definately be making these in the future. Thanks AB, you are the best!!!!!

By popular demand, I've made this recipe 3 weeks in a row! However, using the the same quantities of the same ingredients, my cooking time has varied quite a bit. The mini-muffin tin sold at Wal-Mart, exactly matches Alton's description, and was the most satisfactory. The cups taper quite sharply, and meatballs sit quite high, and the results are great. However, when I used regularly shaped mini-muffin tins (shaped more like mini-muffins| the meatball cooking time was almost 50% greater, I guess because the meatballs stewed in their own juices. They still tasted great though.

So So good! I was a little leary becuase I subbed lean turkey for all the meat, used egg beaters, and cut out the cheese completely in order to make it more healthy, but they were still FABULOUS. Really fast and easy as well.

These meatballs were almost perfect. My husband thought they were perfect. I'm not a real lamb fan, and I could taste it a bit too much. The next time I made them, I cut back on the lamb but still used some, and added some sweet italian sausage.

By far, the tastiest meatballs I've ever had. The only thing I did differently was use all the breadcrumbs at once as opposed to saving them for a crunchy coating. That isn't my style. Follow the recipe to a T and you won't be disappointed.

Made these over the weekend. Terrific! No, I did't weigh them nor bake them in a muffin tin. Used a wire rack on a baking sheet. Also, added grated lemon rind for extra flavor. These rank up there with America's Test Kitchen recipe.

I omit the red pepper so that my children will actually eat the meatballs, but I love this recipe. Easy to put together and cook up, which, as everyone knows, is an anomaly for Alton Brown's recipes (not that I don't love him regardless). Also, there's no finding ground lamb where I live, so I use 1 pound of ground pork and 1/2 pound of ground beef.

Honestly! If you have ever had a dry meatball, these are NOT them! The mixture of meats and the variety of herbs and spices makes these, by FAR, the most amazing meatballs I have ever had. I used lean ground beef for this recipe. I didn't have garlic powder so I minced 1 clove of garlic. I don't have a pan to catch the grease so I sauteed them in the pan. These meatballs are very flavorful. I think this recipe is a keeper! Thanks AB.

These are our new favorite. I used 1 Lb each of pork and beef (no lamb), a whole small box of spinach, and Italian bread crumbs. I divided the mix into 20 balls, and put them into 2 9"x13" pans (there was no spillover). Be sure to check with a meat thermometer to cook to the temps on the meat packages. Thanks to Alton for a tasty meal!

These were the best meatballs I've ever made, and I've made some pretty good ones. Instead of the mini-muffin tins I baked them on a rack set over a jelly roll pan, and it worked like a charm. My husband said he liked them because the crust allowed more sauce to adhere to the mushroom. The crust also did a great job hiding the bits of spinach from my 7-year-old until my sister-in-law asked him if he had seen the spinach. Even though he had been eating them like popcorn, the revelation put a halt to his consumption. I'll make them again, though when she isn't here for dinner. The only change I'll make is to halve the red pepper flakes. I like hot but don't think meatballs should be that hot. Thanks Alton. Love you as always.

This recipe blew them away! Alton is amazing! I watched this episode and thought he was nutz, "baked meatballs? No, no that's not how the Italians do it. They fry them and then put them in a pot of sauce...all day... don't they?" Now I ask you, how can anyone improve a rolled up ball of meat? Listen to Alton, that's how. I found the receipe easy and delicious. I have made several variations, like one I left out the spinach and added grated onions, and am always playing with the basic ingredents. I also like using Panko bread crumbs for the final roll in the crumbs.

I only had ground beef on hand but they still turned out wonderfully moist and flavorful! My tip: a great way to get water out of thawed spinach is just to squeeze it with your (clean) hands. I put a precautionary sheet pan under the muffin pan (hint from other reviewers) - but didn't have a problem with overflow. I cooked them for exactly 20 min. and they were great. However, when I tried to keep them warm in a low oven they did dry out. Will definitely make again.

Very good recipe for meatballs and unique. Especially his suggestion not to put them in red tomato sauce. I put mine over spaghetti and a mixture of olive oil, red pepper flakes, garlic, parsely, and fresh basil. Very good meal. Also made a nice meatball sub with them too, enjoy!

I'm sorry to say that I missed your show on baked meatballs. I was informed that you made a comment about Italians not frying their meatballs. That must be the mainland Italians, because Sicilians stand by the stove and fry their meatballs. Looking over your recipe, you and I do things quite differently. I will not divulge my recipe to you, but my meatballs are authentically Italian. I'm giving you five stars because I have not tried your recipe, so it's fairer to give you a high rating. Great meat balls! I used ground turkey instead of lamb, and I added some italian seasoning blend and extra salt (actually, I used my favorite salt blend/seasoning salt) since a few people commented on a lack of flavor. I baked them on cookie sheets and turned them half way through, and they were perfect! To those who say they were too dry, that depends entirely on the fat content of the meat you use (and possibly over cooking them). One last tip: Don't omit the spinach! Push all the moisture out of the defrosted spinach in a strainer (a lot of water will come out) and use it even if you don't like spinach. You can't taste it in the final product, but it adds moisture, texture, and nutrients. (I rated 4 stars since I made a few additions/changes).

Although I followed his receipe exactly, the cup cake trays overflowed with grease causing smoke everywhere and my detector to go off and then a greasy mess to clean up..oven and those little muffin tin sections...all 24 of them. Next time, I'll cook them in pan!

I made a small test batch so I could tweak the actual meatballs I planned to serve. They turned out good, but dry. Considering that could be a sign of them being over exposed to dry heat causing them to become overcooked I'm going to try baking them plain for 15 minutes and then put them in a covered baking dish with sauce the remaining amount of time. Hopefully that will help.

This was so easy to make and very tasty! If you don't have mini muffin pans place a cooling rack on a cookie sheet and the cooling rack will keep the meat out of the drippings and the cookie sheet will catch the drippings. You just won't have the perfect round shape that you would with the mini muffin pans.

I use beef & pork. I followed the recipe as best I could. At first I thought the powder garlic was going to be a bit much but use it as it said. I did let the meat sit over night (24 hour) I think that made the flavors much richer. I rolled the balls the next day and used a little more Italian breadcrumbs to cover them lightly all around. I fried them in a skillet lightly. I placed them in individual cupcake (the ones that have the foil on the outside for more support and the paper inside) on a cookie sheet. Easy clean up. They came out great. The best I ever had. The garlic & crush pepper is a great complement to any spaghetti & pizza sauce. I'm Italian and my whole family said they were the best spaghetti & meatball ever. I made them again for pizza & meatball and they were amazing. It only gets better every time. I used flat bread instead of dough (good Italian ciabatta bread) to make the pizza. I highly recommend them. They are my signature dish now. AB is a God in the kitchen. Love, N, Roberts from CA

For those who got dry meatballs, perhaps you didn't realize that on the show he used FRESH bread crumbs, not the dry stuff in the can. Big difference. That should have been noted in the written recipe, but wasn't. (This should also solve the "bland" problem as well.)

This was without a doubt the best recipe for meatballs. My Aunt Vera made them when I was a kid on Long Island and I could never come close until now. I made them larger, 1 3/4 oz., so they took about 30 min to cook but they are the best.

I make this just like Alton in the mini cupcake tray. It made a huge mess. Just be sure you put a pan under the cupcake pan! The meatballs are some of the best I've tasted.

With Alton's help I believe I created the best meatball around! I used Deer burger instead of the meat that he used and Itailian sausage. It was great. Thanks for your help

Moist and flavorful - my new favorite! I think that if you are going to take the time to make meatballs, you should make excellent meatballs! When I asked my fiance's what he thought, he replied smiling with his mouth full he said, "Those are good meatballs!" You may think he said "good," but he never talks with his mouthful. He couldn't even wait to swallow to share his opinion, which means more than the actual words. The only thing I can say about the reviews that said they are dry, they must have missed something. My old recipe was dry, not this one!!!

I picked this recipe because of all the 5-star comments but we were disappointed. After following the recipe to the letter the meatballs came out quite dry and the taste was a bit on the bland side. We had them for dinner anyway but I won't be making them again and I wouldn't recommend the recipe.

Yummy with or without chopped garlic, my family prefers the chopped garlic, but for those that don't like alot of garlic I will use the powdered.

I had just beef on hand but followed the rest of the recipe to create the most tender, delicious, moist meatballs ever! I can't wait to go shopping and get all 3 meats for the next meal. And as always, the info and tips were very useful

I thought the mini-muffin tin approach was a bit weird, but these were the best meatballs I've ever had. The addition of spinach and outside crust were great unexpected touches, and delighted by guests. I gave out a few copies of this recipe and maybe snagged Good Eats a few more loyal viewers. I didn't have the mini muffin pan so I used a regular one. They still came out great - good texture and taste. A new family favorite.
