I didn't have any potatoes on hand and used instant potatoes (saved a bit of time), added some corn and it was the bomb! I think I'll try adding some peas next time. I substituted white mushrooms for cremini since I didn't haver those either. Overall this was a great one dish meal....between my husband and I, it was gone in 2 days! (Try even adding peas). To save time, I did not peal the potatoes (washed real well though) It's more healthy that way and tastes even better. Also, I made extra mashed potatoes for a ham dinner the night before and then saved the left overs for the sheppard pie-- getting two meals out of the time. I have tried several others but the recipes had too much of a gravy to it vs this recipe which is more like a sauce. I also tried the frozen corn idea and found it a great addition (just add it when you put in the beef, so it doesn't get mushy), as well as adding some chives to the potatoes. Also, I was skeptical of the mushrooms because my mother and I don't like them, but they went great; she didn't even notice they were in there! I did find that between the mashed potatoes (and I didn't skin them), the chopping, and the bake time, it took me about 2hrs and 15mins, so I'd leave more time than the recipe says. It was a fabulous recipe, though, and I'll definitely be making this again! Browned the meat in a separate pan with some worch., beef broth, salt & pepper then drained. Cooked the veges on hand, onion, garlic, celery, 2 mushrooms, frozen corn and frozen peas & carrots, then drained. Combined everything, added in the tomato paste, more worch., broth and seasoned to taste. Topped with instant cheesy garlic mashed potatoes and a little extra cheese. YUMMO! Thanks Tyler! The taste was really good. The only negative is that the meat & veg. mixture come out relatively dry. There is no gravy so to speak. Next time I will try using a can of tomato sauce instead of the 3 Tbsps. of tomato paste and I might add additional beef broth. If that doesn't work, then I would try a can of cream of mushroom soup. Also I find russet potatoes to be dry and I prefer the silkiness of red potatoes or yukon gold. I also added some chives with the parsley to the potato mixture and it was good.
