Wonderful biscuit like muffins
07/19/2008 at 07:59pm
User: Jenna from Arlington, TN    User Rating:
These muffins are so good they taste even better than most homemade biscuits. And they are so much easier to make than rolling out dough. Also, Paula is right, they don't even need any extra butter! That is a lot to say for her and me!

User: Charles from Westminster Station, VT    User Rating:
I would't really call this a muffin although it is shaped like one. Actually it is a bisquit and not a very flavorful on at that. It needs a little sugar or something.

Heavenly and yet sinful!

User: Ronda from Bryceville, FL    User Rating:
I think you have to be a true southerner to enjoy and appreciate them as I do! Heavenly, wonderful taste and so easy, and yet sinful because I load them up with strawberry preserves while hot! I never have any left over for later, and better not tell anybody they are in the oven if you don't want sudden company! I have never had them turn out greasy, heavy, crumbly, or stick to pan. (Must be the higher altitude of the northerners who don't like them!)Thanks Paula for such a wonderful recipe!

Hard and Dry

These"muffins" did not rise and were hard and dry. I will not make them again! Now I have 5 lbs of self rising flour to use up.

I followed this recipe exactly and I am considered a great cook. The muffins stuck to the pans and were greasy.

Sour cream biscuits

My mother in law fixed these many years ago and now we have them for all special dinners. We use 1 stick of melted butter, 1 cup of sour cream and 2 cups of Bisquick mix. Mix just until blended. Bake at 425, in regular or mini muffun pans, until slightly brown....10 -14 minutes depending on size.

very crumbly

User: Anonymous    User Rating:
i didn't care for these...the butter taste was overwhelming...and it was of a biscuit texture..not a muffin....very crumbly...

Fast and incredible!
12/17/2007 at 11:48pm
User: Helen from Yelm, WA    User Rating:
I would call these more of a biscuit than a muffin, but whats in a name. They are easy and fast enough for a weeknight dinner and get raves from everyone I have fed them to. They are also very versatile. You can brush them with garlic butter while still hot, or mix in herbs such as rosemary depending on the entree. And they are great with a little fruit spread for a brunch. They are a regular now at my house.

I always love Paula's recipes but am really not a fan of this recipe. Maybe there is too much butter...but I just didn't like the taste very much.

Just ok

User: Latoya from Las Vegas, NV    User Rating:
I think that I personally messed up this recipe. I did not use self rising flour, because I only had all purpose. I added a touch of baking powder, but I am not sure what I did wrong. Can someone help me with this? The middle of the muffins came out kind of undone. Is it normal not to have to use and egg?

Pretty good, but......

User: Carol from Germfask, MI    User Rating:
These "muffins" are like biscuits because it is Red Lobster cheese biscuits-without the cheese and butter/garlic basting after baking. Try them with ? cup grated sharp cheddar and brush them with garlic butter when they come out of the oven.

Simple & delicious

User: Lisa from Scottsdale, AZ    User Rating:
Can't get easier than this with only 3 ingredients that turn out to be melt-in-your mouth delicious with anything they're paired with. Honey, cinnamon, jam, gravies, cream cheeses...you name it, these muffins go wonderfully with everything!

These are possibly the best "muffins" I've ever had. Although more like a biscuit in taste and consistancy. Made these to go along with Paula's Bacon Cheeseburger Meatloaf and it was meal to die for! Will definitely be making these again and again and again!

That easy?
10/16/2007 at 09:31am
User: Anonymous    User Rating:
Is it that easy? It's only 3 ingred - flour, sour cream and butter? No eggs, salt, sugar?? I made them with hesitation actually added a dash of salt and 1/4 c sugar. Their nice and moist, not crumbly at all. Over all if they're this easy and delicious I'll make them again for sure.

not happy with these

I was so looking forward to having these with dinner. I made them just the way the recipe read. 3 ingredients...how hard can it be?! They would not cook through and did not rise in the oven.

I made these "muffins" to go with my homemade Beef Stew and I thought it sounded too good to be true, and they were. The batter was like biscuit dough, stiff and they had little or no flavour. will not try again

Too rich for everyday
10/14/2007 at 07:27am
User: Anonymous    User Rating:
First of all, I love Paula so I had to try these absolutely as simple as they get to prepare muffins despite being perplexed by the proportions. Is it possible to eat so much butter and richness in one sitting? These cook beautifully but really, these are over the top rich unless you are trying to fatten up someone. That said, my little 15 month loved them so maybe it is just the right audience. Save these for special occasions only is my recommendation and for people that love really rich cooking!

i love it

I made these a couple days ago. They are (as Paula puts it) Melt in your mouth goodness. The recipe was a snap to put together, only three ingredients to buy and fast to bake. They taste BETTER than buttermilk biscuits ! So moist and flaky. I even used them the next day for biscuits and gravy.

these were not bad. I just think they need to be called buiscuts not muffins. muffins are like a sweet almost dessert like treat. These are are exactly like buiscuts.

User: Geisha from Miami, FL    User Rating:
These muffins just did not turn out the way I thought they would...They looked SOOOO scrumptious on tv when Paula made them but for one they took forever to bake (my oven must not be working right)I also found that it was way too buttery, and I do love butter! but the butter was like concentrated in the very center of the muffin! Well, I am sure that Paula's version is delicious, I do believe my oven was my downfall because it hasn't been working too well lately.

Made exactly as recipe stated, and ended up with a batch of greasy biscuits that were still raw in the middle, even after cooking for 30 minutes. I LOVE Paula, and have enjoyed many of her recipes, but this one just didn't do it for my family.

I halved the recipe and made these this morning while the family slept and they woke to warm muffins. I have to say, they were bland - better with strawberry jelly on them than butter; but just not all that exciting. I guess it's a southern thing that maybe we northerners just don't get. I will try them again and put some chocolate chips in them to see how that does. Love ya Paula.

User: Novella from Olympia, WA    User Rating:
This recipe looked so easy and delicious on the program that I tried it at home. Usually have pretty good results following a recipe - especially one with so few ingredients. This mess was so horrible that my beagles would not eat it!! The muffins don't rise, they don't completely cook in the middle, and they don't taste good at all. Although there are a few ingredients - they are fairly expensive in my local grocery stores, so I wasted a lot of money for a terrible product. Now I'm afraid to try anything Paula Dean makes.

But in this case, although the taste was actually pretty good (the 3 stars), the proportion of butter to flour was absolutely unbearable. i suspected this would be the case when i was mixing but then again i had to try because this is Paula. All in all i have to say that i would not make these again for my family or for company, because as i said butter is good, but in this case there is WAY too much of a good thing.

This is the closest thing to eatting a biscuit as a dessert. Being a true Southern requires a bread at every meal and this makes it easy. Great taste and texture to the muffin/biscuit.

First let me say, Paula, my girls and I love you. Was in Savannah a few years back, this was the first time I had heard of you and your resturant. I was unable to get in though. I was on a Girl Scout function. I still kick myself for not getting away and going to your resturant. The muffins were great and I will continue to make. Thanks Paula

First let me say that I LOVE Paula Deen's Home Cooking show. That's why I was totally disappointed with this recipe. I followed the instrucitions to a T and they did not come out at all. The middle never set (even after 40 min. of baking), I think this was due to the large amounts of butter used. Secondly, from what I did taste, there was way too much flour in them. I really thought that this recipe would turn out great...too bad.

I made a second batch the correct way and they were just as moise and tasteful. They were absolutely wonderful. thank you so much for this recipe

This recipe made 10 1/3 cup muffins. Though, to be honest, they came out more like biscuits than muffins. Very moist on the inside, nicely crispy on the outside, but they didn't rise very much. I used home-made self-rising flour, and my baking powder is still good, so not entirely sure why they didn't rise.

I have made these muffins many time nows, each time adding a new piece to the reciepe each time. First I made them by the book, then I made them with added almonds, and a bit of vanilla extract. I have added strawberry preservitives, each time I make them they are tasty. Most recently I made chili, I added a bit of cheese to this receipe, I baked the muffins as a cup formation (taken from another one of Paula's shows) I filled the center with the chili, and wow what a hit. the flavor doesn't complete with anything else, so adding to the receipe is easy. I agree they can be boring but for an easy muffin these are the key.

Just a little salty!
09/09/2006 at 12:36pm
User: Beverly from Erie, PA    User Rating:
I made these muffins a couple of weeks ago and they turned out very well, but I thought they were a bit on the salty side. I definitely did use self-rising flour, followed Paula's recipe to a "T" in every way, and it's a very quick & simple recipe. Believe me, they were all eaten here the day they were baked. Now that Paula has married The Captain, perhaps she's become an Ol' Salt (meant only in the kindest way). I'll make these again, because they are very good, but if you're on a low sodium diet, this may not be a good recipe for you to try. Of course, Paula's like me on one other thing: butter ... love that butter! Thanks, Paula!

Not awful, but modifications made them better for our personal taste
09/08/2006 at 10:01am
User: Wendy Beth from Bloomington, MN    User Rating:
The first time I made these I followed the exact recipe and my husband and I did not care for them; they were simply far too greasy for even our butter-loving selves. However, we really liked the flavor of the sour cream and saw potential for a really yummy biscuit, so I decided to modify the recipe as follows: add an additional 1/4c flour; replace one of the sticks of butter with 2 beaten eggs; add 3T of chopped fresh chives; add 2 cloves of minced garlic; add 1/4t of salt (I had used unsalted butter); add 1/2t of black pepper. I dropped them one heaping Tablespoon at a time into un-greased-non-stick muffin tins and baked them at 350 for 30 minutes. The results were AMAZING!!!! They rose to be kind of fluffy, but then immediately melted in your mouth. I will absolutely make these many times again! I have found that they really are best fresh?two days have gone by now and they?ve dried out a bit, though maybe I should try re-heating them just a bit in the toaster oven or microwave.

I made this recipe this week. My friends and I have dinner night where every Thursday we go to each other's home and have dinner. This week was my turn and I was watching Paula for ideas. She made these muffins and mentioned that they were a southern staple. I had never heard of them, and I have spent quite a bit of time in Savannah (including having lived there), so I decided they were so easy to make that I had to try them. Only 3 ingredients, how great is that?! They were so easy to make and they were sooo goood!! My friends loved them, too.

I wanted to try these muffins sweet so I added three tablespoons of brown sugar and one teaspoon of pure vanilla extract to the melted butter. Not only did it add just a touch of sweetness but also makes the muffin a perfect coffee/tea companion. The muffins freeze well too. Enjoy!
