They are easy and fast enough for a weeknight dinner and get raves from everyone I have fed them to. They are also very versatile. You can brush them with garlic butter while still hot, or mix in herbs such as rosemary depending on the entree. And they are great with a little fruit spread for a brunch. Is it possible to eat so much butter and richness in one sitting? These cook beautifully but really, these are over the top rich unless you are trying to fatten up someone. That said, my little 15 month loved them so maybe it is just the right audience. But in this case, although the taste was actually pretty good (the 3 stars), the proportion of butter to flour was absolutely unbearable. i suspected this would be the case when i was mixing but then again i had to try because this is Paula. All in all i have to say that i would not make these again for my family or for company, because as i said butter is good, but in this case there is WAY too much of a good thing. That's why I was totally disappointed with this recipe. I followed the instrucitions to a T and they did not come out at all. The middle never set (even after 40 min. of baking), I think this was due to the large amounts of butter used. Secondly, from what I did taste, there was way too much flour in them. The first batch i made i messed up i put 1 pint of sour cream instead of 1/2 pint. but they still came out wonderful. they just didnt rise all the way. I made a second batch the correct way and they were just as moise and tasteful. First I made them by the book, then I made them with added almonds, and a bit of vanilla extract. I have added strawberry preservitives, each time I make them they are tasty. Most recently I made chili, I added a bit of cheese to this receipe, I baked the muffins as a cup formation (taken from another one of Paula's shows) I filled the center with the chili, and wow what a hit. the flavor doesn't complete with anything else, so adding to the receipe is easy. I agree they can be boring but for an easy muffin these are the key. However, we really liked the flavor of the sour cream and saw potential for a really yummy biscuit, so I decided to modify the recipe as follows: add an additional 1/4c flour; replace one of the sticks of butter with 2 beaten eggs; add 3T of chopped fresh chives; add 2 cloves of minced garlic; add 1/4t of salt (I had used unsalted butter); add 1/2t of black pepper. I dropped them one heaping Tablespoon at a time into un-greased-non-stick muffin tins and baked them at 350 for 30 minutes. The results were AMAZING!!!! They rose to be kind of fluffy, but then immediately melted in your mouth. I will absolutely make these many times again! I have found that they really are best fresh?two days have gone by now and they?ve dried out a bit, though maybe I should try re-heating them just a bit in the toaster oven or microwave.
