I added the pork chops right back in with the sauce at the end and simmered them for 15 minutes. This added more flavor to the chops and made sure they were cooked through. I made the Italian Chopped Salad from the same episode and some baked potatoes to have on the side. What a great dinner! My husband who is a very picky eater really loved this one. When he says I can make this again I know it is a winner!! I also made the mashed potatoes with mozzarella and parm. Wow what a great flavor. The only comment I have to make is that the breadcrumbs didn't brown so I put the casserole under the broiler for a few minutes. You rock Giada!!!! Bad cook...I don't think so because any recipe I follow from friends or family or other cookbooks come out GREAT! They were not real moist and a bit chewy..I used the meat thermometer but maybe the chops were in too long after I returned them to the sauce. I added 2 cloves of garlic to the sauce (love garlic)and used fresh basil instead of fresh parsley (that was what I had on hand). I'll try this again but next time I'll brine the chops first or maybe use sliced pork tenderloin instead. I did not have Herbs de Provence so I used some dry thyme, rosemary, oregano, and parsley. My husband liked it though. I cooked the pork for longer than she said because everyone knows the longer you cook pork the more tender it gets. She cooked it way too fast for me. Unfortunately it dried out as a result of me cooking it too long. Oh, I did add a little nutmeg to the sauce (trade Italian secret). Over all, wasn't what I expected. I had to use boneless porkchops because my grocery didn't have any bone-in. The sauce was wonderful, although I did not have any Herbs de Province. I used Italian Seasoning, which worked well. I like red pepper flakes, so I used a bit more. I paired this with a romaine salad (romaine lettuce, green onion, kidney beans, feta cheese, s&p, crushed red pepper flakes, balsamic vinegrette) and it made a lovely dinner. My husband liked it, but didn't love it. I will still make it again. To make sure the porks were tasty on their own, I added a bit of herbes de Provence directly to the chops when cooking. AND, I thinking cooking the chops in the first step to 160 degrees is too long. I cooked it to 150 degrees. The temperature raised about 5 degrees when resting and then the other 5 when sitting in the sauce. I took other peoples advice and added some garlic with the onions, then some red wine. I added a bit of oregano with the HD'P and simmered, adding the chops back in for a minute or two. It was...fine. That's it. I sort of thought it was a waste of some really good boneless pork chops, you don't even taste them. Perhaps I went too far with the improve, but I would save this for sausage or a hearty pasta. They give 5 stars for ANYTHING! Either that or their culinary experiences have been VERY limited. OK, this is pretty good. Just don't over cook the chops ... and LEAVE SOME PORK FAT ON THEM!!! If you use well-trimmed pork chops (I think the boneless ones are often leaner) and go easy on the oil, this is really quite healthful too!
