This is a beautiful, colorful salad. I am not fond of bitter, though, and even cut in half, the raddichio was too much for me. It is all a matter of preerence. I'll make it again, with the raddichio, but I'll cut it dowm even more. The jewel-tone purple of it would be missed if completely eliminated!

DELICIOUS

We loved this salad, only I would leave out the sun-dried tomatoes because we are not that fond of their taste. Otherwise the dressing is wonderful and the mixture of the greens is great.

I liked everything the salad had to offer, but the bitterness of the radicchio dominated in my particular servings.

This was one of the best salads. I loved the creamy texture of the white beans, and the flavor punch of the sun-dried tomatoes and radicchio was awesome.

I love chopped salads. The textures of the beans and the tomatoes is awesome. I added a little cooked chicken and made it a meal. My husband who does not care for leafy stuff, said "This is good."

I fixed this for company and everyone raved about how good it was. The only thing I did different was to substitute more romaine lettuce for the radicchio. (The radicchio in the store was not edible)

"Best Salad I Ever Had"

My daughter, who's never been a huge fan of salads, loves this one. I don't care for beans in salads, so I replaced them with some pine nuts. I also chopped up feta, in very small pieces. It was great! Thanks, Giada. Love your show and your recipes.

This is a beautiful salad. Very colorful. I added a little rice wine vinegar, some dijon mustard and a small amount of sugar to the salad dressing because I thought it was a little bland. I added some celery, radishes and gorgonzola cheese to the salad. It was delicious and I got rave reviews from our guests.

I doubled the recipe and it was plenty for the five of us - actually could have easily fed six. Based on other reviews regarding the bitterness of the radicchio, I used 3 parts romaine to 1 part radicchio and it was perfect. We especially enjoyed the added flavor of the sun-dried tomatoes which added extra flavor to the simple salad dressing.

Pretty Good.

I used red leaf lettuce because that is what I had on hand - also don't care for radicchio. The flavors of the beans and sun dried tomatoes were excellent with the light dressing. Very nice!

Absolutely WONDERFUL!!!

easy dressing for two

User: ANNIE from Skokie, IL    User Rating:
I only tried the dressing for this salad with my own combo of lettuce and veggies and it was great. It had the perfect ratios of oil to vinegar for me and I liked that it was just the right amount for a salad for two. I have used this ratio many times and has become my everyday dressing.

THE SALAD ITSELF WAS GOOD, SLIGHTLY BITTER BUT GOOD....I FOUND THE EXTRA VIRGIN OLIVE OIL TOO OVERPOWERING AND THE SECOND TIME USED REGULAR OLIVE OIL....IT WAS MUCH BETTER.

Visually pleasing...

Makes a nice light lunch. I usually omit the radiccio and use a mixture of salad greens instead. The dressing is surprisingly light and not bitter.
