These are so much better then reg. potatoes. I added some more butter to the mash and some fresh italian parsley a little more seasonings and instead of regular bread crumbs i used italian bread crumbs. Oh and to solve the bread crumbs not browning on top i melted about a teaspoon of butter and mixed it in with the crumb mix it worked out great.

Nice consistency but taste was quite bland.

Added more butter and parmesan to topping, subbed mild cheddar and added a head of roasted garlic since some of the reviews indicated it needed more flavor. Made half for for Christmas Eve dinner and my family was not impressed. Baked the second half for Christmas Day for a potluck with my extended family. Not one person commented on it.

I have had many mashed potatoes in the past, but never like these. They were so incredibly delicsious. My family loved them, although my mom actually liked them the way they were before going in the oven, I think I'll try that next time. Thanks for this great hit!

I made this recipe for my husband and three of his medical school friends. They all inhaled them before I had a chance to finish my first bite! We use skim milk, so I did not have whole. However, I had a little whipping cream left and used half of that with the skim. The potatoes were fantastic! Can't wait to make again!

So delicious...even after sceptism!

User: Rheannon from Santa Clara, CA    User Rating:
I wasn't sure of the recipe as I had never really made baked mashed potatoes, and had definitely never added breadcrumbs, but it was delicious. The parmesan gave it that distintive sharp sent and the mozerella made gave it great texture. It was even good microwaved the second day! The only thing I would even consider adjusting is: -experiment with different cheeses. the mozerella doesn't give it a lot of flavor by itself. maybe even cheddar? -add butter. when you are adding the wet ingredients to the mashed potatoes i think a bit of butter flavor would go a long way

Mouth-watering!

User: Beth from Hermitage, TN    User Rating:
I saw these potatoes on the "Just for Two" show and thought that they'd be perfect to serve at Thanksgiving. I was right! These potatoes were a HIT with my family! I used store-bought shredded mozzarella (Kraft) for convenience and also used regular store-bought Parmesan cheese (also Kraft 100% Parmesan) and they were terrific. I also only had "seasoned" bread crumbs on hand and they were terrific on top as well. Thank you, Giada, for another WONDERFUL recipe!!! This one deserves higher than 5 stars!!!

User: JENNIFER from Downers Grove, IL    User Rating:
Sorry, Giada, these potatoes were not a hit. I was planning to make double-baked potatoes for Thanksgiving when I saw this recipe. I thought this would be less time. I should have stuck with my original plan. I made it a few hours before and put it in the fridge. When I went to bake it, the bottom burned before the center was even warm. They weren't as cheesy as I would have thought.

Overally a great recipe to have when you want something different to make instead of just mashed potatoes. AWESOME!

Ok, so mashed potatoes are not the healthiest dish. Agreed. But this takes it to a new level altogether. It is really yum, but definitely not for anyone who is on a strict diet or is health conscious. Way too many calories and cholestrol packed into this one. Two cheses, whole milk, stick of butter and not to forget: potatoes - all in all, not worth it for the taste. You can make tastier dishes that are a lot healthier than this one.

This wasn't too bad .. however we really didn't taste the cheese hardly at all. I think that I will try this again but will sub in some sharp cheddar for the mozz.

I made this potato dish to go with the pork chop recipe from the same episode. It was a perfect compliment. I can see using this potato recipe for other meats too. A great twist to traditional mashed potatoes.

Loved these potatoes! A nice switch from mashed potatoes and gravy.....especially if you're not fixing a meat with gravy drippings. The bread crumbs on the top and the melted butter on the bottom gave these potatoes somewhat of a potato pancake texture. They were very flavorful. My family loved them. I have both of Giada's cookbooks and they are wonderful. Have also given them as gifts. Everything is fresh tasting. Giada is also one of my favorite food network chefs. She is so informative.

I used day old French bread (processed briefly in the food processor) for the bread crumbs. I was amazed at how lovely the potatoes were when they were baked. I hadn't expected such an atttactive golden color. My family loved them, and I have already passed the recipe on to several friends.

I saw this recipe and said sure why not. It is your typical mashed potato recipe with some great tasting additions. The mozzarella was a very nice touch. About half way through cooking, I realized I did not have enough parmesan for the whole recipe. So, I substituted ricotta and left the parmesan for the top. Prep was simple, the taste was great and the presentation basic.

Taste before baking

User: Julie from Napervillle, IL    User Rating:
I thought these potatoes were ok but definitely taste for seasoning before baking. Once the potatoes have been baked in the casserole, it's harder to go back and adjust the seasonings. I found myself adding quite a bit of salt to the potatoes and adding additional milk and butter as they were on the dry side. I was surprised that there wasn't more of a cheesy flavor. It could use some garlic or other seasoning to give it more tang...maybe sour cream. Overall they were good but not great.

Tried this recipe and thoroughly enjoyed it. I've been making one very similar that my Italian Grandmother made for years. She left out the butter, added an egg, parsley and a touch of oil on top before baking. I would suggest, that if you do try this recipe use good Italian cheeses and not the ones in the green packaging -- it makes a huge difference.

These potatoes were a great change for everyday smashed, baked or whatever. I have to agree with Giada and say my favorite part was the crispy crust that forms over the bake. Don't cheat! Use freshly grated mozzarella and parm - it makes all the difference.

After reading the other comments, I added an extra stick of butter and used 1 3/4 cup milk instead of just one cup. I also added about a cup of cheddar in addition to the mozzarella and parm. Overall, the potatoes were very creamy, but not as cheesey as I had hoped...despite the extra cheese. I think next time I will try using sharp cheddar instead of mild...and more of it!

Excellent Mashed Baked Potatoes
02/25/2006 at 07:27pm
User: Cathleen from Half Moon Bay, CA    User Rating:
Although I often use Yukon Gold Potatoes in many potato dishes, I recommend old fashioned Russets in this one. I too simmered a few cloves of crushed, peeled, garlic with the potatoes and mashed that in. Use fresh Mozarella for a good texture. Even with the put in the freezer method it still challenging to grate this cheese - but the flavor is worth it. Had a few small slices of pancetta left over from Giada's Pancetta Wrapped Pork Roast and put those on top before baking - nice addition.
