This was SOOOO easy and the only change I made was no lemon slices and a tiny bit less lemon juice since my husband is not a fan of lemon but even he set the garlic lemon balance was perfect. So tasty! Of course all that butter and oil makes it hard to make it again soon but definitly if we have company with a nice fresh salad and some hot rolls! I am a big time lemon lover and it was still really good just a little overpowering, and the lemon peel made it bitter. Now when I make it I just squeeze the lemon juice on and leave out the peel. I used the juice of one lemon (not two) and only used a 1/2 teaspoon of kosher salt in the shrimp. I didn't have any linguine in the kitchen, but I did have 3/4 pounds of farfalle pasta and it turned out great. I also increased the butter by 1 Tbsp. because I used 1 1/4 pounds of 31-40 count shrimp. I also ditched the half rounds of lemon and doubled the amount of red pepper flakes. This recipe is a keeper and will definitely be made again! I used frozen, raw shrimp that I defrosted and then sprinkled with lemon pepper and cayenne. It was so quick to make, and I could not taste much "fishyness" in this recipe, which I enjoyed. Oh, and I also used "real lemon juice" from the bottle (hey, I am a single girl who works full time and trying to make meals from things that I have on hand..ha!), and it worked out just fine. I made it for a birthday dinner and it was a hit... from 12 to 50, everyone liked it. I made it exact to the recipe, doubling everything except the pasta. I would not change anything. I only added 1 tsp of salt, the juice of 1 lemon, no lemon zest and no lemon slices. I also added 1/2 pint of heavy cream. I removed the shrimp after they turned pink so as to not over cook them after I added in the cream. I let it cook for about 3-4 minutes. I then added 2 TBSP of fresh shredded parm cheese and then added the shrimp back in and tossed w/the noodles ... it was AWESOME! I have 3 small children ... 4,6 & 8 and they LOVED it. Another note ... following the recipe w/my changes, only makes enough for 1/2 a pound of noodles. If you want to use a whole pound, double the recipe. I did only use the juice of one lemon, I feel that any more lemon juice would have ruined the dish. I also did not put the sliced lemons on the top for garnish. If you make this dish and decide to double the amount you must use the juice of two lemons, so on and so forth. It was so easy and the prep time was so minimal, the fresh lemon juice and parsley gave the dish such a light delicate flavour, and the garlic and crushed red pepper flakes gave just enough punch. It was a hit, there were no left overs. I added a few jumbo sea scallops for variety and there sweetness, it was awesome! You certainly don't need to add the lemon slices - no one would eat them anyway. I think a common problem that people mention "too salty" is probably because they are substituting table salt for kosher salt and it's not a one to one substitution. Table salt is far more "salty".
