After reading other reviews about the pesto being too oily, I decided to lighten it up. I used a few tablespoons of oil to give the pesto the right flavor, and then I added chicken stock until it became the right consistency. It was definately not greasy and was ligher and healthier. I made the pesto as directed, less one garlic clove and only used 3/4 cup oil (I thought 1 and 1/2 cups was way too much oil and 3 cloves is a lot of garlic), but when it came time to make make the dressing for the pasta, I used ALL of the pesto instead of the cup and a half then added the mayo and spinach. I further simplified the recipe-and extended it by making/serving it hot for 1 meal, and then using the leftovers to make a cold salad for later. Further simplification entailed omitting spinach etc, pretty much just sticking to the pasta, pesto and peas. Mixed them and served them hot. After all of the leftover portions cooled in the fridge, I mixed them and added mayo to make the salad. Will repeat this recipe! I think the confusion over the recipe is that it is a QUANTITY recipe, making 4 cups. However she only uses 1 1/2 cups in the Pasta, Pesto, and Peas recipe. Note: She does give hints to preserve the leftovers. I'll freeze it in 1-cup containers (I combine both tips to freeze). Ideas: I adore pesto, rotisserie chicken, fresh mozzarella and sprinkle with parmesan and pine nuts, over top grilled individual pizzas. You can also use the pesto as a topping for grilled salmon or with roast or boiled red potatoes. So you can see why making extra IS a good idea! I really enjoyed the combination of pasta, pesto, and peas. Everything really melded together. However, I do agree with the other reviewer that the recipe called for a little too much olive oil. I used less than 1 cup and it was still too much! I suggest maybe 1/2 to 3/4 a cup of olive oil depending on your taste, but 1 1/2 is just to overwhelming! I am not always crazy about pesto b/c I think it can be too garlicky but this was a perfect balance of flavors. I made a few changes to this (I scaled it down b/c I only used 1 lb of pasta). I also made the pesto (basically 1/3 of the recipe). I used less oil and low-fat mayo. Overall all it turned out great. I served this dish with ham and steamed veggies (among other things) and it was a huge hit. I used all penne pasta as it was what I had on hand but followed the rest of the recipe to a tee. The flavors are incredible! It serves far more than 12; I only doubled the recipe & I have loads left over.
