The trick to not having any dried out or tough edges is making sure every inch of the pasta is covered in sauce. You may have to make extra sauce. I am confident this works because for years I have made lasagna according to a recipe on the back of Skinner brand lasagna pasta named "Virginia's Easy Lasagna" and it does not call to cook the pasta AT ALL, not even soaking it in water or anything. My lasagna has always turned out beautiful with soft, fully cooked through noodles. As long as you ensure the pasta is completely covered in sauce, this works! Promise! I took one out last night and popped it in the oven to heat for dinner. Oh My. It was so good. The presentation was perfect with all the cheeses melted and lightly browned and tomatos and sauce topping it all. I let it rest for about 5 min before cutting and it held together great. It was very good, but I think I will leave out the goat cheese next time as I like a more traditional taste and the goat cheese added an out of place taste to my palate. Note, a lot of people complain that her dishes are too salty, but I believe they are using table salt and not "kosher" salt, as most of her recipes state. I agree the filling is good, and the goat cheese added to the ricotta is good, but the mechanism used to "cook" the noodles simply does not work, unless you get boiling water out of your tap. I tried it as an experiment cause I agree the hardest part of making lasagna is cooking the noodles and then not lettnig them get overcooked when they bake, but this method of soaking them in hot water did not cook the noodles at all, it just made them limp and mushy! Part of what is tasty about lasagna is a good pasta, and I was sooo disappointed at how these turned out, though I followed the procedure exactly. I will continue to use turkey filling and goat cheese mixed with ricotta, but next time I will defintely cook the noodles in boiling water like you are suppose to. I used Barilla no-boil lasagna sheets that are especially made to be like homemade (thin, no ruffles on the edges) and the end product got raves! THe fresh herbs and sweet Italian turkey sausage make all the difference. I used part-skim mozarella and low-fat ricotta to keep it a little more figure friendly, and I do not think it compromised the taste. I did not use the turkey sausage (instead used natural angus beef) and skipped the goat cheese and fresh mozzarella (i was on a budget this week) and substituted shredded mozzarella for both of those cheeses. however, this recipe still turned out amazingly delicious. the sauce really makes the recipe outstanding. the cheese was just enough and the leftovers are perfect the next day. i did not cook the pasta, just soaked it in hot water as directed and can vouch for the fact that it is an excellent and time saving way to make the noodles.
